OK, so the title is a little dramatic (and abbreviated). It is the title of a book by local author, Susan Moynihan -- 100 Things to Do in Annapolis and the Eastern Shore Before You Die! And while some of these types of books are geared to tourists in town for a weekend, this one is not. Sure, it serves that purpose, but no matter if you are here for a few days, or have lived here your entire life, there will be something unexpected and cool you will discover! We all know about Chick & Ruth's Delly, but how many know about the Modern Stone Age Kitchen in Chestertown? That's the advantage of having a book written by an almost lifelong resident. It's a fast and easy read and is the perfect book to have around the house for when your guests say, "What should we do?" Own an Airbnb? Are you a realtor? Maybe you work at a local hotel? This is a must-read! Have a listen! Because I've been asked over the years, “is sourdough bread gluten free?” AND could it be a healthy, safe option for someone living with chronic health issuesI've finally got some very clear answers for you!To be honest, trying to answer these questions opened up a pandora's box for me. I was then faced with questions I didn't even think to ask like what makes bread labeled “sourdough”… real sourdough?I came to discover that, especially if you live in the US, there's not only a lot of fake sourdough sold on store shelves, but ideas shared on social media about how to make everything from sourdough pancakes or sourdough cookies is probably wrong. We'll get into all of this in today's episode, but I first must acknowledge that for years, gluten has been demonized as a health wrecker. This led countless people to eliminate it (and sourdough bread) from their diets.I spent years teaching how bad gluten was for health…But after 15 years spent avoiding gluten, I've made some really startling discoveries. And that's where sourdough bread comes in (underscoring my long journey to answer that “is sourdough bread gluten free” question). In today's episode, I chat with Dr. Bill Schindler, an archaeologist and food scientist, about the ancient techniques that could revolutionize how we approach bread. He explains why modern wheat is causing problems for so many people and how fermentation transforms grains into a gut-friendly sourdough bread.Dr. Schindler is leading the charge in reviving traditional food preparation methods that can help restore our health. Through his work at the Modern Stone Age Kitchen located in Chestertown, MD, he's proving that sourdough bread can be both nourishing and delicious. If you've ever wondered whether sourdough bread could be worth a try, this episode is for you!In This Episode:Why modern bread is making people sickThe difference between ancient + modern wheat varietiesWhat fermentation does to gluten (and why it matters)Benefits of sourdough breadIs sourdough bread gluten free? (and my experience trying sourdough bread)The hidden truth about “store-bought sourdough”Why fermentation time of sourdough bread is crucial for digestibilityBefore you eat a sourdough cookie or sourdough pancakes…What to look for when buying sourdough bread so you know it's realHow Bill + the Modern Stone Age Kitchen is reviving ancient baking techniquesQuotes“Anybody who's starting to dip their toes into this world of not only eating in this way, but also making your food from scratch at home, fermentation is a great sort of gateway into that world.”“Typically if [the label] says yeast… citric acid, lactic acid, or acetic acid, then I can guarantee you it isn't sourdough and they're trying to fool you.”LinksFind Dr. Bill Schindler + the Modern Stone Age Kitchen online | online | Instagram | InstagramGet Dr. Schindler's book Ready to figure out your skin's root causes so you can finally fix your skin + break free from meds to manage your skin?My virtual clinic works with adults worldwide struggling with eczema, psoriasis, rosacea, urticaria, hives, dandruff, perioral dermatitis + more.Trusted by over 1000 clients, we get results WITHOUT restrictive elimination diets.Schedule an assessment call at https://skinrepaircall.com/

The Plant Free MD with Dr Anthony Chaffee: A Carnivore Podcast
Many have been told, or saw on a Netflix special, that in the Blue Zones they live longer than any other population and predominantly eat plants; but is this actually true? To explore this, I had my friend Dr Bill Schindler, PhD (retired professor of archeology and paleoanthropology at the University of Maryland, and author of the book "Eat Like a Human") back on the show to give his experience and expertise, as Dr Schindler had recently travelled to Sardinia to the epicenter of the first Blue Zone ever identified and saw that it was very different from what we've been told. For the truth about the Blue Zones, tune in to this episode of the Plant Free MD with Dr Anthony Chaffee, and share with anyone who needs to know the truth about what it is to "Eat Like a Human!" Blending these opposite ends of the technology spectrum make for amusing conversations over fermented-homecooked meals, but there is no denying they are both aligned to find a healthy balance in our modern world. Bill and Christina operate the Modern Stone Age Kitchen, a foodery that optimizes nutrition in modern foods based on the approaches they developed to nourish their family. Their current passion, the Eastern Shore Food Lab has become an autonomous nonprofit, and offers immersive classes on a range of topics, including- cheese making, sourdough bread making, nose-to-tail butchering and cooking, fermenting, and foraging.Find Christina at- IG- drbillschindlerIG- modernstoneagekitchenhttps://eatlikeahuman.com/You can also find Dr. Schindler at the Eastern Shore Food LabSpecial love to-The Brilliant Sally NortonFind Boundless Body at- myboundlessbody.com Book a session with us here!

Dr. Anthony Gustin chats with Dr. Bill Schindler, an anthropologist, professor, chef of the Modern Stone Age Kitchen, and author of Eat Like a Human. Dr. Schindler has dedicated his career to researching ancient humans and spending time with indigenous hunter-gatherer tribes to learn how to optimize our modern-day diets. Even though our basic nutritional requirements have stayed the same for the last 3,000 years, we've lost our ability to eat instinctively and listen to our senses. Just think about it: we're the only species on the planet that needs help learning what to eat, how much to eat, etc. So Dr. Schindler shares his ideas about how to follow the instinctual practices our early ancestors used to extract the most nutrition from our diets and return to our natural states of health. In this episode, you'll discover: Why we're the only species that intellectualizes eating the right foods What it means to be a fully-nourished human How to approach vegetables in your diet with intention Which foods Dr. Schindler completely removed from his diet to reverse damage and transform his life What type of bread Dr. Schindler considers the “safest” to eat The importance of eating animal fats and organ meats (in moderation) How grocery stores and modern food manufacturing destroyed our natural food instincts Why the emotional satisfaction, social connections, and cultural ties to our food are just as “nutritious” for our bodies as healthy foods Tune in to tap into the science of our evolution through nutrition now! His current passion, the Eastern Shore Food Lab, was created in 2017 as a research and teaching laboratory at Washington College, has become an autonomous nonprofit. [00:00:00] Rebecca: I listened to your, talk at the Weston A Price Conference and was so fascinated by everything that you've done and everything that you've experienced. So to start off, would you just give us a brief introduction of who you are and how you got to be where you are eating like a human. Who is Dr. Bill Schindler [00:00:17] Bill Schindler: Sure, I would love to, and thank you for the opportunity to talk with you today. So my name is Dr. Bill Schindler, and I am the executive chef currently of the Modern Stone Age Kitchen, which is a full family endeavor, which I'm sure we'll talk about in a little bit, and also the director of the Eastern Shore Food Lab, which is our non-profit. https://eatlikeahuman.com/eastern-shore-food-lab/ [00:00:34] Bill Schindler: And the where, how we got to this place, you know, our tagline, our, our motto, all of it is, is "eat like a human" because my background is actually in anthropology and archeology and I've spent literally my life at some level looking and I'm trying to understand and studying ancestral and traditional diets. [00:00:52] Bill Schindler: Some through the archeological record and some millions of years old and some more recent in historic through the ethnographic record and tried to make sense. And I'm using that to make sense of, our current issues surrounding food and diet and health and ethical eating and sustainability and all those things that we're really, you know, trying to problem solve today as a species. In Person Classes: https://eatlikeahuman.com/product/eat-like-a-human-3-day-intensive-march2023/ The Question We Should Be Asking About Food, Not What but How [00:01:13] Bill Schindler: We've, I think my, my wife and I and my family have really started to at least ask the right questions. We don't have all the right answers, I'm sure, and we're headed in the right direction, but I think we've, we've started to at least ask the right questions, which I think is, is, is very important, especially in today's [00:01:28] Bill Schindler: dietary climate where we had landscape, where we have all sorts of, of information hitting us, left and right and don't really know, know how to feed ourselves. But my own relationship with food is, is actually incredibly important as well. I spent most of my life, very unhealthy because of how I ate, incredibly poor self body image, battling weight, battling, metabolic disease until we've really took this ancestral and traditional approach. [00:01:52] Bill Schindler: my, I'm I'll turn 50 in about a month, and I've never felt better. I've never been in better health and, my entire life has been transformed because of, of this approach. And, and very quickly, I think just to mention what that approach is. We as a species right now, as humans, are trying to understand obviously how to feed ourselves. [00:02:11] Bill Schindler: Most of us wanna lose weight or feel better or live a better life, and to figure out how to do that, we're asking the question, "what should I eat?" [00:02:19] Bill Schindler: And trying to achieve that health or that body. Through that answer. You know, what, what should I eat? And we think that, you know, from that sort of Weight Watcher's mentality, if I have this much carb, this much protein, or I go on this diet and I eat this green smoothie and all this, all my problems will be solved. [00:02:35] Bill Schindler: And even though what we should be eating is a very important question, what I hope we get a chance to dive into a little bit today during this conversation is it's not the only questions that humans need to ask. How Should We Eat? [00:02:47] Bill Schindler: We are a completely different species. The way we go about eating and getting our food is completely different from every other animal on the planet. It is partially the what built us as a species with these big brains and these big bodies.

Bill Schindler may be most well-known for his role in the National Geographic series, The Great Human Race, where he and survival expert Cat Bigney lived as our most primitive ancestors did. He now owns a restaurant and store called The Modern Stone Age Kitchen, where he cooks amazing quality food and hosts events to inspire others to learn the art of cooking. He has also written a book called Eat Like a Human, which dives into our ancestral way of eating and what Bill believes to be the species-appropriate diet for humans. In our conversation with Bill we cover a ton of ground. We talked about his journies through Africa with his family visiting different tribes, exploring different cuisines, learning to cook your meals, the significance of meat as the cornerstone of the human diet, and which “healthy” foods to avoid.
