If you like what you hear, subscribe by following the link in the show notes.  Welcome to Recap, a new podcast from the Specialty Coffee Association offering a brief overview of recent coffee developments every two weeks. The monthly materials science journal, Matter, just published a study suggesting a new mathematical model for repeatable espresso extraction. Focused on the computational and physical attributes of espresso, the authors suggest that, if widely implemented, the protocol outlined in the study could significantly reduce coffee waste. Remarkably, the study was co-authored by Brisbane baristas Michael Cameron and Deschen Morisco, who tested the techniques of the study in a coffee shop. This study has already received significant attention from popular media outlets in the US and Australia. The study's co-author, the computational chemist Christopher Hendon, will present the work at the SCA's Specialty Coffee Expo in Portland this April.  Meanwhile, across the Pacific in the Philippines, the Taal volcano has erupted, covering coffee trees in thick volcanic ash. The ash causes the leaves of coffee trees to wither, effectively starving them of energy which in turn reduces their ability to mature fruit. To assist, the Philippines' Department of Agriculture distributed water power sprayers to help remove the ash. It's not a perfect solution: the intense spray sometimes removes flowers and nearly-mature coffee cherries. Although Taal's eruption has caused considerable damage to many high-value crops in the area, coffee is reported to be the most affected. This will be a difficult harvest year for the affected Phillipino farmers, so the Department of Agriculture is also offering up to the equivalent of a million US dollars to affected farmers through a combination of cash aid and zero-interest loans. The effects of the eruption are likely to impact the country's recent growth in specialty coffee production. A long-time producer of coffee, this is not the first time the Philippines' coffee production has been decimated by environmental changes: a widespread influx of coffee rust at the turn of the twentieth century led local farmers to favor Robusta, Liberica, and Excelsa.  A recent feature in the New York Times explores a culture-shift in Saudi Arabia through the lens of coffee shops. In December, the government announced it would no longer require businesses to segregate their customers by gender. Since the law passed, some specialty coffee shops already pursuing a more inclusive vision can now continue to do so without fearing a visit from the country's law enforcement. Reports suggest Saudi Arabia is the Middle-East's fastest-growing coffee market and, in December 2019, the country held its first-ever sanctioned national barista championship. Ahmed Bahaa of Camel Step Coffee Roasters will fly to Melbourne, Australia to represent Saudi Arabia for the first time at the World Barista Championships in May. If you want to dive deeper into anything you heard today, check out the links in the description of this episode. The Case: Diana is 36 and suffers from irregular bowel movements and stomach upset. Endoscopies, colonoscopies and genetic testing for celiac disease provided no answers She tried adjusting her diet but nothing has helped and her doctor was stumped. My first suspicion was that her Celiac test was a false negative or that she had some underlying gluten-sensitivity. Gluten is found in wheat, rye, barley and oats and many people may have the sensitivity. It’s estimated that 30 – 40% of people are genetically positive for gluten-sensitivity. Many go undiagnosed. Dr. Peter Osborne is world renown in the field of gluten and grain sensitivity. He is the author   of the highly acclaimed bestseller, ‘No Grain, No Pain’ and is a Doctor of Chiropractic and board certified in clinical nutrition and pastoral medicine. He is the clinical director of Origins Healthcare in Sugarland, Texas and is also an advisor for Functional Medicine University. He joins me in the discussion of this case to share his significant expertise in this field. Confusion Around Gluten Terminology Many people mislabel conditions relating to gluten and mistakenly use gluten-sensitive, gluten-intolerant, gluten allergy, and celiac interchangeably. So, what is the difference between gluten sensitivity and gluten allergy? What’s the difference between gluten intolerance and celiac disease? Dr. Osborne explains that gluten sensitivity is a state of genetics which is not a disease. However, this sensitivity can lead to the development of celiac disease which is an autoimmune disease. Gluten intolerance is a reaction to gluten without the genetic disposition. The body cannot digest gluten properly because it is not producing the necessary enzyme. This can result in irritable bowel, gas, bloating and other intestinal discomforts. An allergy to gluten it very rare. Classically, this would show up as an acute response similar to other food allergies which often have symptoms like hives, swollen lips, and throat constriction. It’s potentially life-threatening. Traditional Testing for Celiac is Insufficient Most doctors will test two genetic markers for celiac disease but there are 5 antibodies that should be tested. Some people, like Diane, are told they don’t have Celiac disease and can eat gluten when that is not the case. Comprehensive tests that specifically include HLA DQ2 and DQ8 as well as the wheat zoomer (see below for links to these tests) are needed to completely rule out gluten issues. These tests are a simple cheek swab and a blood test. Gluten Sensitivity due to Genetics is Permanent While some people may feel better after giving up gluten for a period of time, this does not mean they can return to eating gluten. Dr. Osborne says that it can’t be reversed and his best advice is to stay away from it if they want to maintain their health. Eating gluten (for those that have the gluten genes) is unhealthy for them so if they go back to it, they’ll soon feel the repercussions of their unhealthy ways. Consider the Quality of Grains People who do not have the genetic markers for gluten sensitivity, antibodies to gluten, or the presence of autoimmune disease do not need to follow a gluten-free diet. However, it’s important to look at the quality of the food they’re eating. Grains can have mold or mycotoxins (see episode 006). They may also have trace amounts of pesticides that could include glyphosate which has been linked to cancer, neurodegeneration and fertility issues. In addition to that, many grains have been genetically modified. You Can’t Just Take a Pill There are enzymes available in supplement form that will help the body digest gluten. While this might seem like a ‘get out of jail free’ card, it’s not. If you have a gluten sensitivity or Celiac disease these are meant only to protect you against unwitting exposure (often through cross contamination in non-gluten-free restaurants or homes). It’s not a magic pill that you can take and then go devour a pizza. Sorry, guys. Ashley was such an awesome guest that she's the first to appear on the Toxin Free Mom To Be podcast for a second time! Last week, Ashley taught us all about how to introduce first foods. But, since she also has additional training in pediatric feeding and picky eating, she was also the perfect gal to tell us which foods are good to start feeding with. The Importance of Iron One fact brought up by Ashley that really stuck out to me, was the importance of iron - especially during pregnancy, breastfeeding, and childhood. In fact, iron is one of the top nutrient deficiencies in children (source). She also pointed out how one role of iron is to aid in absorbing nutrients. So you could theoretically be consuming enough nutrients  but not actually absorbing them if you don't have enough iron. And since children go through so much growth, they are especially vulnerable to negative effects of not having enough micronutrients. Interestingly, liver (yes, like the actual organ from a cow or chicken!) is not only a potent source of bio-available vitamin A, but also heme-iron.  If you are pregnant or breastfeeding and the idea of eating organs isn't the most appealing (trust me, I get it!) Focus can mean where you give your attention, and when you choose to focus on the positive in your life, focus on the benefits, focus on being gratefull, focus on being kind, then you can really make a difference! Pay attention to what and WHO you are focusing on in your business and in your life. No matter what you do to help you maintain focus: Meditating, doodling, jogging, coffee, music, napping... know that a huge part of success is being focused... focus on staying focused! Be present and focus on the task at hand. When you are working, work hard without distraction. When you are having dinner with your family, eat dinner, put the phone away, talk to your kids. When you are resting, rest, put away your email and work. Being present for your tasks will make you much more efficient and successful. My name Eric Stark and I am the owner of Arizona RV Parts Center located Wellton, AZ just east of Yuma. Radio Arizona RV is my creation and the goal is to help RV’ers maintain their RV and get a better understanding of the different systems that are already on your RV or something you might want to add on. Each episode is going to be as short as possible with out a lot of needless conversation. I don’t get extremely technical, at least yet. I want to give you a direction to get started in. There is lot of subjects that can be covered but, they do not need a lot technical details to get an understanding to determine if you need to do it or if want to do it. I am a parts guy and I explain a lot stuff to a lot of people and I know what it takes to give the information they need and what they don’t need. I have an episode about wheel bearing maintenance and I cover the importance of checking and maintaining the wheel bearings and the consequences if you don’t. If you listen to the episode it will motivate to get your bearings checked by a professional or do it yourself if you have the expertise. At this point in time I don’t have step by step instructions, some things you do come with instructions and other things require a professional.
