When I developed this season of California and Central Coast legends, I came across an article about sommelier and farmer Rajat Parr. It was written by Esther Mobley, the senior wine critic for the San Francisco Chronicle. She called him one of the wine industry's biggest celebrities and California's most influential sommelier—and she's certainly not the only one. Rajat Parr is an absolute giant of the wine world, having worked as a sommelier for restaurateur Michael Mina for many years in San Francisco, and co-authoring two very important books: Secrets of the Sommeliers and The Sommelier's Atlas of Taste. So imagine my surprise when he instantly accepted my email request for an interview. Since moving away from the sommelier and restaurant world, he has taken up as a farmer and winemaker in Cambria at Phelan Farm, Stolo Vineyard, Domaine de la Cote, and Sandhi Wines. Brenna Quigley is a geologist and founder of the Roadside Terroir podcast. In this episode we go into how she got into wine, the natural connection between wine and geology and her love of both, women in the wine world, the wine community, the complicated geological terroir that is Alsace, blind tasting with her friend and mentor Rajat Parr, grapes she couldn't live without, and many many segues. Brenna received her Bachelor’s Degree in Aquatic Biology and Geology from the University of California, Santa Barbara in 2012, and her Masters in Geology in 2015. She has also worked extensively in the mining industry where she further developed her skills in geologic mapping and interpretation, soil sampling, and geophysical surveying. Today Brenna works with wine professionals in all areas of the trade, from growers in France to importers and buyers in the US, in order to precisely define the most impactful elements of their terroirs in a relevant and approachable manner. A trained chef, Rajat grew up in Calcutta, India, before journeying to the United States where he graduated from the Culinary Institute of America at Hyde Park. It was at the CIA where his interest in wine took hold. After graduation, Rajat chose to pursue the cellar instead of the kitchen, venturing to San Francisco to join the staff of Rubicon, the renowned wine-focused restaurant of Master Sommelier Larry Stone. Rajat quickly rose in the ranks, becoming a protégé of Stone. Here he honed his wine knowledge and tasting skills, while beginning a career that would see him become one the world's most celebrated sommeliers. Raj eventually left Rubicon to take over the wine program at San Francisco's landmark Fifth Floor restaurant before moving to join chef Michael Mina as wine director of that chef's eponymous restaurant. The Mina Group would eventually spawn over 20 restaurants across the country, wine programs all overseen by Rajat. During this period winemaking began to evermore capture his imagination. Eternally fascinated not just with the taste of wine, but the question of why it tastes the way it does, Rajat not only frequently traveled to European wine regions; he also made use of his proximity to California wine country, becoming close with several of California's top winemakers. This ultimately translated into bottling his own wines. At first these were blends selected from wines produced by others, but in short time Raj became more deeply involved—calling picking times, overseeing fermentations, etc. As vineyards and winemaking became ever more an obsession, Raj made the transition from sommelier to producer. During this period, he became closer to Santa Barbara County winemaker Sashi Moorman, as they found mutual interest in pushing the boundaries of California wine, every vintage seeing how much earlier they could harvest to achieve more balanced alcohols, racier acidity, and purer flavors. In 2011, Rajat and Sashi launched Sandhi, producing Pinot Noir and Chardonnay from select vineyards in the Sta. Rita Hills. In 2013, they released wines from his new estate vineyard, Domaine de la Côte, located on the westernmost edge of the Sta. Rita Hills. Most recently, in early 2014, Rajat and Sashi took over the historic and acclaimed Seven Springs Vineyard in the Eola-Amity Hills of Oregon. Beyond his wineries, today Raj has also co-authored the James-Beard-Award winning book Secrets of the Sommeliers (with Jordan Mackay), their new book The Atlas of Taste. He also co-founded the trend-setting California non-profit wine group, In Pursuit of Balance. He lives in Santa Barbara, though he can still be found frequently traveling the world speaking, educating, tasting, and obsessively learning. I’ve been fortunate enough to sit in two wine seminars with this James Beard award winning writer, and this time, I finally got the courage to ask him -- over a glass of wine of course -- if he’d be a guest on the show. Born and raised in the Detroit area of Michigan, Alexander took his first restaurant job nearby at Morels a Michigan Bistro in Bingham Farms. While his initial motivation was to pay for college, he found he was truly inspired by working alongside Morels’ Master Sommelier, Madeline Triffon. Yet another one of those opportunities came along as Dining Room Captain at Michael Mina’s Saltwater and Bourbon Steak in Detroit, MI. There Alexander met Michael Mina’s Wine Director, Rajat Parr, whose influence prompted him to take the next step in his career, and along with it, a move to the San Francisco Bay Area. When it comes to wine and food enjoyed together, Alexander believes the whole is greater than the sum of its parts. He favors an approach to wine that minimizes complexity, emphasizes pleasure and makes people comfortable with their own taste, knowledge and budget. That said, he happens to be a Master Sommelier candidate and is also reaching for the Wine & Spirits Education Trust diploma. Alexander is hesitant to commit to a favorite wine. From crisp whites to earthy reds and even dessert wines, he claims to have no bias but is a fan of grower-producers. If truly pressed he’ll confess a weakness for Champagne, low in alcohol, high in acidity, refreshing and delicious with just about anything! After earning a bachelor’s degree in Hotel Administration, Rajat entered the Culinary Institute of America at Hyde Park, New York. In 2003, Parr was named Wine Director for the Mina Group, where he develops and manages the wine programs at numerous restaurants. In 2011, Rajat launched Sandhi, which produces Pinot Noir and Chardonnay produced from select vineyards of Santa Rita Hills in partnership with Charles Banks and Sashi Moorman.
