This week, Pat Cobe, senior menu editor of Restaurant Business, and Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, discussed their visits to Tara Kitchen, a Moroccan restaurant run by Indian chef Aneesa Waheed with three locations near Albany, New York, one in Wildwood, New Jersey, one in Hyderabad, India, and one in the New York City neighborhood of Tribeca. Pat and Bret took separate trips to the Tribeca location, where Pat had brunch and enjoyed the 1,000-hole pancakes, a traditional Moroccan dish made with a yeast batter that bubbles and produces all those holes, giving the pancakes a lacy quality. Bret, coincidentally, had also visited the restaurant just to get a look at those pancakes and watch the chef prepare them. Pat discussed a story she wrote last week that was a deep dive into recent menu innovations in family dining. Many of the big chains in that segment, including IHOP, Denny's, Perkins and Cracker Barrel have undertaken substantial overhauls recently as they try to find the balance between attracting new guests without alienating existing ones, all while providing value. Bret wrote about potatoes last week, and how, especially in the form of French fries, they can be a vehicle for introducing new flavors. It's an increasingly common strategy to add lesser-known ingredients to something familiar to make them seem less scary. Bret said flavor combinations like Indian tandoori chicken or Vietnamese bánh mì can seem more approachable if you put them on top of fries. Pat noted other places where French fries are added, like on Bobby Flay's burgers and on Primanti Brothers' sandwiches. Then Bret shared his interview with Bryan Ogden, the chef of Bourbon Steak's New York City location. He is also the son of Bradley Ogden, a pioneer in the modern American cuisine movement of a generation ago.

Along with Entrecote and Skirt Steak, two restaurants that offer a prix fixe steak dinner. Skirt Steak is one of Laurent Tourondel's restaurants, and reservations are hard to come by. One reason: for $45 per person, diners get grilled steak, fries, salad and bread. That's a pretty good deal at a chef-driven restaurant in Manhattan. Tourondel started as a chef in France, but has since operated restaurants in several U.S. locales, including New York, Philadelphia, Las Vegas and South Florida. Fawn Weaver is the Founder and CEO of Uncle Nearest Premium Whiskey. In 2016, Fawn went to Tennessee to interview the descendents of Nearest Green, a former slave and whiskey distiller, for a book project. Fawn's work helped reveal the history of the Jack Daniel's distillery that included Nearest Green as its first Master Distiller and mentor to a young Jack Daniel.This inspired Fawn to found and launch the Nearest Green Distillery, and Uncle Nearest Premium Whiskey in 2017, making Fawn the first African-American woman to head a major spirits brand. But first — one of my favorite things to do is talk about where I am eating and I kid you not, I have been seriously out and about and eating all the good things — mostly! -I celebrated the Lunar New Year with Scott Drewno & Danny Lee at Chiko for their Lunar New Year Tea — They brought in Jill Nguyen of Capitol Jill Baking and Caroline Ta of Sweets by Caroline — ginger scones, dumplings, tea sandwiches and milk buns -Popped into Fiola for a glass of Mt Etna Bianco & airy gnocchi -Love a Rasika check in and on a Friday it is hopping -I've been to Moon Rabbit twice in the last two weeks — it is that good — you may have listened to my show with Kevin Tien & Susan Bae and team that I did there before they opened and everything that we talked about — their intention, commitment, passion — it all ends up on the plate. There's also a really sunny vibe — they are all so happy to be there and be open and be serving delicious mod -Vietnamese. Do not miss the pate chaud or any of Susan's desserts. -I stopped by Tail Up Goat. They are now doing a tasting menu only in the dining room so I just sat at the bar had a wonderful glass of La Croix Gratiot Les Zazous — a truly lovely white that Bill Jensen recommended. He also poured me a funky wine - Sipon from Slovenia — and of course he poured me a riesling because it makes him crazy that I don't like it an I have to tell you — he didn't even try. He poured me a riesling that had a sweet finish and I was like you gotta be kidding me. When I bring in Winn we are going to talk about Somms and their love of riesling Last one — although I have so many more places that I have been — I went to Service Bar. Now if you know me you know I'm not really a cocktail drinker. But it had been a minute since I had been in and I was looking forward to catching up with Christine Kim. Again, the city was pretty lit up. U Street had bars filled and people waiting on lines to get in and other people pouring out of the bars. So fun. They play amazing music and if you are a cocktail drinker while the place looks like a hole in the wall — the cocktails are thoughtful, balanced and well made Okay! On to today's show! Winn kept my glass filled with Krug and kudos to Marc Bromely and Anina Belle Giannini for bringing the event to life ~ Last week, I was a part of a new tradition here in DC: a Chefsgiving. Chef Barry Koslow and The Pendry Hotel brought together a whole roster of DC chefs we all know and love to cook up a Thanksgiving-themed tasting menu. Chefs Kevin Tien, James Wozniuk, Joancarlo Parkhurst and Alexandra Cavallo fed us incredibly well while raising necessary funds for DC Central Kitchen. A worthy tradition to continue. He went to Singapore to be second in command of restaurant Santi in Marina Bay Sands. And then BAM! Chef Pepe opened his first solo restaurant in Singapore called Bam! and kinda took Singapore by storm — and then in 2019 he says to his family c'mon let's go do this in DC - what the what? and opens the Japanese & Spanish Fusion Cranes in Penn Quarter and more recently the Singaporean Jiwa in Tysons. Aaron Joseph is a beverage consultant who has participated actively in the hospitality industry for over 19 years. He has spent time behind the bar in various roles from 2001 to the present. About the guestA native of Davidsonville, Maryland, Zack Mills graduated from The French Culinary Institute in 2007. Immediately following graduation, Mills began working in various kitchens in the Washington, D.C. area before landing a job as a sous chef at Bourbon Steak, a Michael Mina restaurant located in Four Seasons Hotel Washington, D.C. During his tenure there, Bourbon Steak received 3 stars in the Washington Post and Washingtonian dining guides and was named Fine Dining Restaurant of the Year by the Restaurant Association of Metropolitan Washington (RAMW).In 2012, Mills accepted the opportunity of a lifetime to join Mina Group as a corporate sous chef working under the direction of Michael Mina. At Wit & Wisdom, Mills was responsible for overseeing daily breakfast, lunch, and dinner services, as well as Four Seasons Hotel Baltimore's 24-hour room service. Under Mills' leadership, Wit & Wisdom was named one of Baltimore's Best Restaurants by both the Baltimore Sun and Baltimore Magazine.In 2018, Mills partnered with Patrick Hudson of True Chesapeake Oyster Company and Nick Schauman of the Local Oyster to build True Chesapeake Oyster Co in the historic Whitehall Mill which will opened in the Fall of 2019. Since its opening, True Chesapeake Oyster Co has received four-and-a-half out of five stars in the Baltimore Sun and was voted Best New Restaurant by the Baltimore Magazine Reader's Poll. Giving back to the community has always been a top priority for Mills. He continues to volunteer his time cooking for national charitable organizations including No Kid Hungry and the Cystic Fibrosis Foundation. A graduate of Oakland Community College's Culinary Studies Institute, he has over 20 years of experience in the restaurant industry. Liam & Rolando talk careers, cocktails and growing up in the South Bay.
Born and raised in the Detroit area of Michigan, Alexander took his first restaurant job nearby at Morels a Michigan Bistro in Bingham Farms. While his initial motivation was to pay for college, he found he was truly inspired by working alongside Morels’ Master Sommelier, Madeline Triffon. Yet another one of those opportunities came along as Dining Room Captain at Michael Mina’s Saltwater and Bourbon Steak in Detroit, MI. There Alexander met Michael Mina’s Wine Director, Rajat Parr, whose influence prompted him to take the next step in his career, and along with it, a move to the San Francisco Bay Area. When it comes to wine and food enjoyed together, Alexander believes the whole is greater than the sum of its parts. He favors an approach to wine that minimizes complexity, emphasizes pleasure and makes people comfortable with their own taste, knowledge and budget. That said, he happens to be a Master Sommelier candidate and is also reaching for the Wine & Spirits Education Trust diploma. Alexander is hesitant to commit to a favorite wine. From crisp whites to earthy reds and even dessert wines, he claims to have no bias but is a fan of grower-producers. If truly pressed he’ll confess a weakness for Champagne, low in alcohol, high in acidity, refreshing and delicious with just about anything!
