Maisie Ganzler Dishes on When and How Corporate Animal Welfare Policies Work

Maisie Ganzler has never worked at an animal welfare charity nor an alt-protein company. Yet she's in the upper echelon of effectiveness when it comes to reducing the suffering of farmed animals. That's because she's served as an executive of a national food management company supplying 1,000 schools and corporate dining facilities, Bon Appetit Management Company, for decades. In her career, Maisie pioneered some of the first-ever corporate policies to require suppliers to stop using battery cages for laying hens and gestation crates for breeding pigs, meat reduction policies, and a whole host of other important animal welfare and sustainability initiatives.  When Bon Appetit would implement a policy like those mentioned, it was often seen as leading edge at the time, yet eventually would become the norm among food service companies. For example, Bon Appetit's 2005 cage-free egg policy would come to be adopted by McDonald's a decade later. Maisie even ran for McDonald's board of directors, backed by billionaire Carl Icahn, a campaign she writes that the fast food company spent $16 million to defeat. While she didn't make it onto McDonald's board, Maisie does sit on the board of directors of an alt-protein company called Air Protein, whose CEO Lisa Dyson has been a guest on this show before! So it was with great pleasure that I learned that Maisie has come out with her first book, which is part autobiography and part guide for others on how to create meaningful change in our food and agricultural system. The book, which just recently came out, is called You Can't Market Manure at Lunchtime: And Other Lessons from the Food Industry for Creating a More Sustainable Company. I read it and found it both informational, inspirational, and entertaining. What more could you want?  Well, maybe you'd want to hear Maisie's story straight from her rather than from me, so enjoy this conversation with a true pioneer for animals, farm workers, and everyone who wants to build a better food system. Discussed in this episode Josh Balk worked with Maisie on many animal welfare policies, and now runs The Accountability Board. David Benzaquen was a student who in 2005 helped catalyze Bon Appetit's cage-free policy, and who now is an executive in the plant-based food industry.  Maisie discusses the difficulties implementing the Better Chicken Commitment, leading Compassion in World Farming to extend its deadline for compliance. You can read more in CIWF's 2023 Chicken Track paper. Maisie recommends reading Civil Eats and the NRA Smart Brief. Our past episode with Resetting the Table author Robert Paarlberg. Walker Hayes' song Fancy Like has 146 million YouTube views, so it's not just Maisie and Paul who like it.  More about Maisie Ganzler Maisie Ganzler is the go-to expert on how companies can make positive change in supply chains and other entrenched systems. She's been interviewed by leading media outlets including the New York Times, Wall Street Journal, NPR, Fast Company, and Bloomberg, spoken at conferences around the world, written thought leadership pieces for Forbes, Huffington Post, and the San Francisco Chronicle and is frequently called upon for strategic counsel by start-ups and big business alike. As Chief Strategy & Brand Officer for Bon Appetit Management Company, a $1.7 billion onsite restaurant company with 1,000-plus cafés at corporations, universities, and cultural institutions in 33 states serving more than 250 million meals per year, Maisie tackled local purchasing, antibiotics in meat production, sustainable seafood, humane care of farm animals, climate change, farmworkers' rights, and food waste, positioning the company as the foodservice industry's undisputed leader in sustainable purchasing and holistic wellness. She holds a Bachelor of Science degree from the Cornell University School of Hotel Administration.

Sasha Zabar, son of iconic New Yorker Eli Zabar, is the culinary dreamer and founder of Glace, the Upper East Side ice cream and sweet shop. Sasha spent his childhood working at his father's various businesses, including Eli's Market and Eli's Bread and then went on to attend the Nolan School of Hotel Administration at Cornell. His unshakable foundation in food, family, and business drew him back to Manhattan's rich culinary scene, working stints at acclaimed restaurants like Daniel, Jean-Georges and The Mark between semesters. Following graduation, he worked with his father and twin brother Oliver to open Broome Street Bakery and Devon on the Lower East Side, and during the COVID-19 pandemic, he re-entered the family business full-time. Sasha helped rebuild the brand's digital strategy by creating new websites and bringing in new technology, eventually increasing the market's home shopping orders to hundreds per day. Sasha then went on to open Noglu, a gluten-free bakery in NYC. In June 2023, Sasha opened Glace, a French-inspired ice cream concept. When the cold weather arrived, Sasha pivoted to offer the now viral S'Mores Hot Chocolate, which led the shop to have lines around the block, more than 100k Instagram followers, features on The Today Show, The New York Times, Bloomberg and even a collaboration with Britney Spears. Sasha is excited to continue to innovate the offerings at Glace and expand the brand to a national and even global audience. On this episode, we explore Sasha's one way ticket to Edo period Japan, inspired by his love for one of his favorite books, Shogun, by James Clavell.  In the conversation we also cover Sasha's passion for food, his grandfather as a role model, and his father's work in expanding the American palate. Of course, we also talk about Glace, including: The Proustian nature of ice cream, bringing flavors to life, Glace's wildly popular hot chocolate, the shop's tantalizing summer menu, and Glace's ice cream truck soon slated to open at Rockefeller Center next to the rink!

Creating a magical wedding is a dance of balancing contradictions. You have to saturate the senses without over-producing, steep the event with individual details that become seamless, pace a fast-moving day, and counter the emotional crescendos with much needed lulls.   The planners responsible for this do multiple events a year, but they still have to make that particular event authentic to who's being celebrated.   The ultimate litmus test and sign you've succeeded? When someone can't pinpoint what exactly made the day so magical because the components are so harmonious.   How do you set yourself up for this from your first moments with the client? What steps can you take to understand the client and the guest's journey throughout the day? In this episode, we're joined by leading wedding planner, Jennifer Zabinski. She shares how she makes her events so magical, and the thinking behind her approach.     Guest Bio   Though she's now known as one of the country's leading wedding planners—named best of the best by both Harper's Bazaar and Martha Stewart Weddings—Jennifer Zabinski didn't always know she wanted to be an event planner. After graduating from Cornell University's prestigious School of Hotel Administration, she headed west to California, working for some of the biggest names in the hospitality business. She quickly worked her way up the ranks at The Ritz-Carlton and the Four Seasons Hotels and Resorts, becoming one of the youngest senior members on both staffs to spearhead events. It was there that Jennifer realized her knack for bringing people together and making sure their every need was met could translate to a new line of work in the wedding industry.   Marrying her business acumen to her talent as a creative and strategic thinker, Jennifer moved back to New York and became the partner at The Wedding Library, a bridal design and retail shop, where she led the planning and events division for a decade. She struck out on her own in 2011 with the launch of JZ Events. Combining a methodical, collaborative approach with an innovative spirit, Jennifer has planned, designed, and executed hundreds of events in some of the most exciting stunning locales around the world (Necker Island, St. Barts, Ravello, Cap Ferrat, Amalfi Coast, Aspen, Paris, Florence, and San Francisco, to name just a few). Throughout that time, she has fostered close relationships with top vendors, including award- winning caterers, floral designers, and photographers, all of which means she knows just the right pro to carry out your vision.   “Most people don't come to me wanting to replicate someone else's event,” says Jennifer. “They want to do something that's never been done before, whether that's a new spin on a classic venue, finding a far-flung location to host a weekend-long celebration, or dreaming up a novel theme.” At the end of the day, she says, everyone wants to create something that's utterly unique. Achieving that goal for clients is the difference between a good planner and a great one.   Jennifer's work has been recognized in the pages of Vogue, Harper's Bazaar, Martha Stewart Weddings, Grace Ormonde Wedding Style, Brides, Glamour, The Knot, among many other magazines, blogs, and websites. She lives in New York City with her husband, two children, and dog, Gunner.   For more information, head to https://jzevents.com/ and follow @jzevents on Instagram.   Want a clear and comprehensive roadmap on how to succeed in the luxury wedding market? Our special guest is David Sherwyn, Professor of Law at Cornell University's School of Hotel Administration. In Sept. 2023, a group of consumer advocate organizations filed a Petition for Rulemaking with the CFPB that would prohibit the use of pre-dispute arbitration clauses in consumer contracts in favor of arbitration clauses that would permit consumers to choose between arbitration and litigation only after a dispute has arisen. In response, the CFPB indicated it is carefully considering the petition, and will be opening a public docket and taking comment from the public on the petition. We first discuss the results of Prof. Sherwyn's study which concluded, in the context of employment disputes, that while superficially appealing, post-dispute arbitration fails in reality and hurts both businesses and individuals, and explain why these study results are applicable in the context of consumer finance. We then offer compelling reasons why the CFPB should not engage in such a rulemaking, including why the petition is a clear attempt to make an end-run around the CFPB's prior arbitration rulemaking that would have prohibited class action waivers in consumer arbitration agreements and was overridden by Congress and why the petition is premature. We conclude by responding to arguments made by opponents of pre-dispute arbitration agreements that consumers are uninformed about arbitration and are “forced” to enter into such agreements. Alan Kaplinsky, Senior Counsel in Ballard Spahr's Consumer Financial Services Group, leads the discussion, joined by Mark Levin, Senior Counsel in the Group.

How did tipping get so confusing? The Cut, a New York magazine, recently published new guidelines for tipping and suggested a 20% gratuity, regardless of the level of service you received. Really, no Really! The expansion of point-of-sale technology that prompts customers to tip at coffee shops and convenience stores has dramatically changed the way we perceive and engage with tipping. Should you now tip for a pack of gum or bottled water in situations where human interaction is minimal or non-existent? And just as tipping has gotten more confusing and uncomfortable, our tipping choices are prominently displayed on large swivel screens that invite others to scrutinize and judge. To help Jason and Peter navigate and understand the new rules of tipping, they invited Michael Lynn, a professor of consumer behavior and marketing at the Cornell University School of Hotel Administration to join them. He has been studying why and how Americans tip for decades. Their Discussion Includes: Why efforts to move away from tipping in America always fail. Many people feel the tipping culture has become, “out of control”. Is a 25% restaurant tip the new 20%? Hatred of the swivel screen. Why raising menu prices and removing tips doesn't work. New guidelines that perpetuate an already convoluted and often arbitrary tipping culture. Guilt Tipping and the atmosphere of obligation. Generational differences in tipping. Specific examples to help guide your tipping decisions. When it's okay not to tip! Michael Lynn is a nationally recognized expert on tipping who has written over 70 research publications on this topic. His work on tipping has been covered by the New York Times, the Wall Street Journal, the International Herald Tribune, the Economist, and Forbes as well as by ABC's 20/20, BET's Nightly News, and NPR. Whether it's short-term financing that covers the cost of purchasing a property, or a small loan for renovation expenses, investors need to work with lenders who can provide advice on market trends, property values, and renovation costs. But it's rare to find lenders that offer loans to fix-and-flip investors and become a trusted partner in their journey. Kiavi CRO, Stephanie Casper, teaches us about what investors get wrong when making it big in the industry from the perspective of a lender. This is one episode you shouldn't miss, especially if you're new in the industry.Key Points From This Episode: What is her reaction to rising interest rates? How does she see the groups that are being successful today projecting their exit prices? What's the central theme to thinking through the current rate environment? Is she seeing a return to normal as demand drops slightly in the housing market? What marketing efforts is her company doing today? What's her forecast for flipping in general as a business model for the year ahead?Where are the pitfalls that people need to be watching out for as the environment changes? What's something that she's doing or has done over the last six months that she's implemented to drive development in one of the areas?Tweetables: “Regardless of the interest rate environment, there is always going to be a need for housing, and flippers are often best suited to delivering those homes.”“It's not just the business plan and math problem [for the flipper]; it's a bit of an emotional buy because you want to prove you can do it and help your ego along. That's where a lot of new investors get caught.”“What is the return on your capital that you need? What is the cost? What's the math? That's really how you avoid the emotional buy for sure.”“Using bridge loans to buy stabilized and then refinancing that whole BRRR Strategy for investors is another way that we are augmenting that fix-and-flip demand.” “Higher interest rates are still going to be around for a few years, but they're not going to be around forever.”Link Mentioned in Today's Episode:KiaviStephanie Casper on LinkedInAbout Stephanie CasperStephanie Casper is the Chief Revenue Officer of Kiavi. Realizing that women tended to leave the industry around the time they decided to get married and start families, she set out to create a space where women could continue to work throughout all of life's changes. SusieCakes pays homage to her grandmothers, Mildred and Madeline, by bringing the treasured recipes they passed down to her on 3 x 5 index cards to her customers. Since opening her first shop in 2006 in the Brentwood neighborhood of Los Angeles, she has since opened in 26 locations across California and Texas, and now ships classic Midwest desserts like layer cakes, cookies and pies, nationwide. Welcome back, friends! For this first episode of season 5, Tim sits down with Alison Arth: consultant, leadership coach, and author whose career is dedicated to working with hospitality leaders and teams to get clear on their vision.Tim is currently going through a major career shift – transitioning from his lifelong post as a restaurateur to his burgeoning frozen food business – and he saw Alison as the perfect person to have on the show.Alison certainly knows her stuff. Since graduating from Cornell University's School of Hotel Administration, she has helped lead over 40 restaurant openings including Michelin-star concepts for Chef Daniel Boulud in New York City, multiple James Beard-nominated restaurants for Chef Gavin Kaysen in Minneapolis, and Bon Appetit's Best New Restaurant in America in 2018, Nyum Bai.Their conversation represents the kind of commiseration that everyone in the restaurant industry needs right now: humor, gentleness, and genuine vulnerability.-Follow Tim on Twitter and Instagram.Follow Alison's ~Salt & Roe~ on Instagram.-Be sure to support Mucci's and Saint Dinette. How about making a reservation soon? You can find Niver Niver Land across all of social media here:Twitter | Instagram | YouTube | Facebook-Welcome to Niver Niver Land: a podcast that addresses massive change in the restaurant industry. The show is hosted by award-winning restaurateur Tim Niver – a local legend of Minnesota's Twin Cities – known for his involvement with fabled spots like Aquavit, Town Talk Diner, and Strip Club Meat & Fish. Today, he runs Saint Dinette and Mucci's Italian in St. Paul.Tim sees a major problem with restaurant industry dialogue: there is a lack of discussion about the ongoing, unprecedented change. Many of those who work in the industry are still trying to wrap their heads around what has happened over the last two years.Today, Tim is ready to talk about these things – through his trademark wit and foolishness – so that we can better appreciate and preserve the cultural importance of restaurants.
