Micallef Torcedores. 6 X 52 Sq press 3 year old San Andrés Sumatra wrapper, 3 year old Honduran binder, mixture of Nicaraguan, Dominican, and Peruvian filler. Retails for $6 in Texas. We both love this cigar. The flavor is woody and leathery with a hint of spice. Mild to medium strength. Triple capped. Woodford Reserve Malt Whiskey This is a 51% malted barley, 47% corn, 2% rye mashbill. It comes off a bit stronger than a typical 90 proof whiskey. The burn is a little less when warm. The bready flavor is very nice and the pros find dark chocolate and caramel coated nuts dried out with a dusting of cocoa powder and brown spice. A fruit medley brightens a trace of toasted coconut and rich, bright oak character. That wasn’t our take. Darrell and Bill tasted the oak, vanilla, and bread. We talk about taxes and how they’re really getting expensive for cigars. That it will probably drive bootlegging just like cigarettes did. Possible futures of tobacco and pot growing in America. While working as a sommelier in San Antonio, Mack discovered the joys of introducing guests to the little known vineyards that first attracted him to the business and “the instant gratification of a guest’s reaction.”While still in Texas, Mack was awarded the prestigious title of Best Young Sommelier in America by the highly regarded Chaine des Rotisseurs. This recognition led to a job as sommelier at Thomas Keller’s world-renowned French Laundry in Yountville, California. Mack went on to accept the position of Head Sommelier at Keller’s equally famed Per Se in New York City, where he managed a 1500-selection award-winning wine list and consulted regularly with Chef Keller on menu and pairing development. Winemaking had always been a dream of his and came to fruition in 2007 when he founded Mouton Noir Wines. Throughout his career, Mack has forged special relationships with star growers and winemakers from Oregon and it is with this luminary group that he is currently making his most exciting wines. Mouton Noir wines are served at the best restaurants across the United States. He recently began curating wines for Club W, a wine club for a new generation of drinkers, to continue his mission of making wine more accessible.Based on the success of his own wine labels, in 2011 Mack established Get Fraiche Cru, a boutique graphic design firm, for which he serves as creative director. He has worked with clients such as Joel Gott, Palm Bay Imports, and Charles & Charles.Mack has been married since 2008 to author Phoebe Damrosch, whose New York Times notable book, Service Included: Four-Star Secrets of an Eavesdropping Waiter, detailed their courtship and collaboration in opening Per Se restaurant.Mack has been featured in major publication such as Food and Wine, Wine & Spirits Magazine, New York Times, The Huffington Post, and Wall Street Journal. Advanced Sommelier Hristo Zisovski was raised in Greek diners working the grill, eventually taking him to the Culinary Institute of America. Hristo gravitated to the "front of the house" first working with Wayne Nish at the 3 star restaurant March, spent seven years at Jean Georges, earning a 2010 James Beard Award for "Outstanding Wine Service". He joined the Altamarea Group in 2010, serving as the Corporate Beverage Director since 2014. Hristo is a Wine and Spirits Magazine "Best New Sommelier", Food and Wines "Sommelier of the Year" and he just received a 2018 Wine Spectator "Grand Award for the restaurant Ai Fiori wine program
Ray Isle is the Executive Wine Editor at Food and Wine Magazine for the past 10 years. He was Deputy Wine Editor at American Exprss Publishing, Managing Editor at Wine and Spirits Magazine, and has contributed to Fortune and Travel and Leisure magazines among others. Ray Isle cut his teeth in wine as a cellar rat, working harvests, and as a wine supplier rep for a Port company. When I attended Wine and Spirits Magazine’s Top 100 Wines Tasting event in San Francisco this past October I had the chance to meet Chris Phelps, the associate winemaker at Inglenook Estate Winery. I jumped at the chance to do an interview with Chris. We finally made that happen in December. You may not realize this but Inglenook was one of the first estate wineries in Napa Valley, founded in 1879 by Finnish sailor (and early entrepreneur), Gustave Niebaum. Following its sale in the mid-60s the winery's quality and reputation suffered. Enter Francis Ford Coppola. Through his love and decades of painstaking efforts the winery is once again an internationally respected estate and remains a Napa Valley icon. This is its story.

Piora Wine Director Victoria James has worked in restaurants since she was just thirteen. While bartending during college, she took her first wine course and was instantly hooked. In 2011, she worked harvest for Michael Terien in Sonoma and then continued her studies with the American Sommelier Association in Viticulture and Vinification, as well as Blind Tasting. She became certified as a Sommelier with the Court of Master Sommeliers in 2012 when she was just twenty one. Victoria joined the Piora team in the fall of 2015. She oversees the Michelin-starred wine list featuring 400 labels from small producers in Italy, France and the United States with a special focus on Champagne and Switzerland. Here she has been named Forbes '10 innovators under 30 shaking up the NY food scene' as well as 'New York's Youngest Sommelier' by The Back Label Magazine, Wine Enthusiast's 'a 40 under 40 tastemaker of 2016' and Wine & Spirits Magazine's '2016 Best New Sommelier.'
Wine Director and Master Sommelier Michaël Engelmann joined The Modern in 2014, having previously held the role of Wine Director at the Grand Award-winning Rockpool Bar & Grill in Sydney, Australia. Michaël's accolades include “Best Sommelier in America” from the American Sommelier Association (2009), and being voted one of five “Best New Sommeliers” by Wine & Spirits Magazine (2009). In the same year, he passed the Advanced Sommelier Exam of the Court of Master Sommeliers, earning the Rudd Scholarship for his high score. In 2011, Michaël passed the Master Sommelier exam and was awarded the Krug Cup for passing all three parts on his first attempt; he is one of only 14 individuals in the history of the Court to have done so.
