2022 has been a huge year for chef Brandi Artis. She's opened two restaurants and is planning a third one, and it's all thanks to the incredible welcome from the St. Louis community. Brandi hails from Kansas City, where she started her cooking journey. The journey took her to Chicago and eventually brought her to St. Louis. Her passion is breakfast and brunch. That's what you'll find as the focus of her restaurant Simply Delicious in Downtown. But she started at the City Foundry with 4 Hens Creole Kitchen. Her goal is to take those savory, comforting dishes you love but put a slightly healthy spin on them. We sat down at her downtown restaurant to talk about food, family and plans for the future.
Nate Hereford originally wanted to be an archologist, but thankfully for all of us, and our appetites, he found his way into the kitchen. Nate is the founder and chef of Chicken Scratch, one of the several food options at the City Foundry and later this year he will open a second location serving up his rotisserie style chicken and more in the city of Glendale. But many might know Nate's name from his time working with the Niche Food Group and Chef Gerard Craft. As the executive chef at Niche, his background is heavy on fine dining but Nate tells me he wanted to make food that was for everyone, something more approachable. We sat down in his new restaurant space to talk about how he settled on chicken, how the shift in take out and easy pick up options has shifted the dining world and the local chefs he finds inspiration from. Chicken Scratch's Glendale location is set to open in late November with dine in, to-go and a pick up window. Speaking of things coming soon, there are several new spots at the City Foundry opening in the coming months including Alamo Drafthouse Cinema, City Winery, and Sandbox VR, a virtual reality entertainment experience.

Sisters, Amanda Helman and Susan Logsdon, are the co-founders of Golden Gems, a badass brand and storefront located in St. Louis, MO. A civic crisis rooted in racial inequity. A chance visit to an Atlanta retail attraction. A commercial developer persuaded to step outside his own comfort zone. Three events converged in 2015 that put in motion a $230 million redevelopment in St. Louis's urban core—an effort that launched like a cannonball from Steve Smith's imagination but came within a hair's breadth of dying.In this episode of On Principle, we look at the moment when inspiration launches a transformative project. What prompted the inspiration? What were the considerations? In what ways did reality temper the inspiration? How far did the reality stray from the inspiration itself? And what are the takeaways for listeners?The story of how The City Foundry in St. Louis came to be includes a wake-up call to developers, several strokes of spectacularly timed luck and a clandestine, cellphone-lit tour of an abandoned factory. The 15-acre retail, residential and dining project—built in and around a transformed automotive brake-parts factory—began when Smith visited a similar venue in Atlanta as his son graduated from Georgia Tech in May 2015.“My son took us to a foundry there, a food hall,” said Smith, CEO of real estate development firm the Lawrence Group. “It was exuding energy. Dynamism. I'm sitting there thinking, ‘This is what St. Louis needs.' I can tell you exactly what I was thinking and where I was sitting at the time.”And that was the pivotal moment.Seven days after graduation, Smith and his son visited an abandoned industrial site they knew was for sale in St. Louis' midtown. Rebuffed by a guard when they asked to take a look, the pair snuck around the back of the building, jumped a fence and toured the site by the light of their cellphone flashlights. Within a few months, the project had its first seed funding and Smith was on his way to buying the property. The $6.4 million purchase closed in December 2015.Along the way, Smith contended with:Internal company debates over assuming the environmental liability for a brownfield factory that had been idle since 2007.Civic debates over applications for tax incentives to redevelop the property.A high burn rate on capital and slow-to-close leasing commitments threatened to scuttle the entire project. This was so serious in February 2019 that Smith and his firm were seriously looking at the cost of closing down the project.Then luck kicked in.First, the federal Investing in Opportunity Act had passed in December 2017, creating a new tax incentive mechanism to pump development dollars into underserved and impoverished communities. We are just weeks away from the long-awaited opening of the massive food hall at City Foundry STL. As part of St. Louis's continued downtown rebirth, the Foundry is drawing national attention, even being mentioned in a Time Magazine article that named St. Louis as one of the world's 100 best places. The Food Hall is perhaps the best symbol of the spirit of St. Louis, with 20 restaurants cooking cuisine from all over the world sharing one massive space and letting diners explore the diverse food scene in our city all in one room. We sat down with Susie Bonwich, the director of operations for the City Foundry Food Hall, to talk about what the space means to the city, what will come next now that it can finally get open to the public, and her pride in playing a part in St. Louis' recent revitalization. If you are eager to check out the Foundry Food Hall, you'll soon get your chance. The public will be able to explore the offerings on August 11, with 11 tenants serving food. From there, tenants and activities at the massive site will only grow as St. Louis continues to make its downtown a destination spot.
