Today's guest is Claudette Zepeda, award-winning chef, mom, self-described border kid, poet, and author of the new cookbook “Cooking the Borderlands: Spice and Smoke Between Mexico and the States.” Claudette's book is a deeply personal celebration of the food, family, and culture that shaped her, from Tijuana and San Diego to Jalisco and beyond. Claudette joins host Kerry Diamond to talk about the long road to writing her first cookbook, why she was determined to create something that would stand the test of time, and how her identity as a border kid informs everything she cooks. She shares stories about her family, her kids, the recipes they inspired, and the women who taught her resilience, creativity, and the power of the village. They also dive into recipes from “Cooking the Borderlands,” including her White Widow salsa, arroz poblano, birria, and the Chinese-Mexican dishes that reflect the food culture of Tijuana and Mexicali. Plus, Claudette talks about her San Diego airport restaurant project with Tony Hawk, her salsa macha collab with Señor Lechuga, and the life-changing experience of walking the Camino de Santiago in Spain. In Spanish, the word “lechuga” means lettuce. But it is also the nickname for a sacred object, a monstrance adorned with so many emeralds that it takes on the color of lettuce. These precious stones come from the famous mines of Colombia, known for centuries by the native populations. Even today, these mines are the source of some of the world's most beautiful emeralds. The monstrance, a masterpiece of goldsmithing and a symbol of the encounter between indigenous and European cultures, has survived time and history. Now a national treasure, it once almost disappeared forever. Without a doubt, it is truly miraculous that this remarkable object can thankfully be still admired today. En espagnol, le mot « lechuga » signifie… Salade. Meet Nico Lechuga and his wife Lauren, the founders of Señor Lechuga Hot Sauce out of Brooklyn, NY. What started as a small-batch passion project turned into a bold brand with serious fire—earning collabs with Joe Rogan, Hot Ones, Half Face Blades, Café Unido, Huckberry, Cosmo/GQ gift guides and so much more.Unable to find a clean hot sauce that delivered maximum heat without compromising flavor, Nico began crafting his own blends in the kitchen of his Williamsburg apartment. Like a mad scientist, he tinkered with ingredients and ratios until they were just right. At first, the sauces were for personal use—but after rooftop BBQs with friends and family who kept saying, “If you sold this, I'd buy it,” Nico decided to test the market. That first batch sold out instantly.Together with his (then very pregnant) wife Lauren Cosenza—the creative force behind the brand—Señor Lechuga Hot Sauce was born. Now, with their two kids alongside them, Nico and Lauren continue to build an ever-growing, flavor-packed brand with purpose.I'm incredibly honored to share their story. As a customer for over four years, their support in my journey means the world. This episode isn't just about hot sauce—it's about bold moves, authentic roots, and the kind of passion that truly inspires.Tap in and taste the story. https://www.senorlechugahotsauce.com/Show Noteshttps://www.foodoriginspodcast.com/podcast-episode-59A Food Origins Podcast Production Original music by Ulisses Bella of OzomatliSupport the show

Relentless rhythms and Latin dance history from one of TraTraTrax's finest. Percussion is, at the root, a conversation. It's about different instruments meeting each other, and interacting to form something bigger than the sum of its parts. Few engage in this dialogue as boldly as Pablo De Vargas, AKA Uruguayan experimentalist Lechuga Zafiro, who draws from tradition, to make sounds like candombe and clave feel, well, completely new. De Vargas' music reaches outward, building bridges between Montevideo and Bogotá, Tijuana, Berlin and beyond. He's a key figure in the hybridisation of Latin American club music, with releases on labels like NAAFI and an album on TraTraTrax. His RA Podcast plays like a manifesto in motion. RA.985 opens with a recording of Jorginho Gularte, a Uruguayan composer, playing a jazz rhythm, from there, it expands: cuban guaguancó, Venezuelan drums, batida, tribal, techno—it's all here, stitched together with precision and intention. De Vargas is also, crucially, reckoning with these roots. His 2018 EP Testigo confronted the colonial violence embedded in the history of the Río de la Plata. His sets are similarly alive with memory—asking, without nostalgia: what does it mean to inherit rhythm? Who gets to carry it forward? He's also just a killer DJ, one of those rare artists who uses CDJs like an instrument. His sets are full of hot cues, delay FX and left turns. It's technical, but never cold. It's, in a word, funky. @lechugazafiro Find the interview and tracklist at ra.co/podcast/985
