News; birthdays/events; listener John B story...what did you believe until you were an adult?; word of the day. News; game: quiz; game: feud; weird TV shows you like to watch/fall asleep to. News; do you plog?; what do you think about this usage of A.I.?; things that warm you heart...Ashley saw something adorable over the weekend. News; what does your favorite ice cream flavor say about you?; game: calendar trivia; goodbye/fun facts....National Cheese Soufflé Day honors this French delight. The word 'soufflé' comes from the French word 'souffler,' which means 'to puff up' or 'to blow up.' A soufflé is basically a white sauce filled with egg yolk. Stiff egg whites are folded into the mixture. You can add whatever flavor you like at this point such as vegetables, cheese, chocolate, or fruits making it either sweet or savory. The tricky thing about soufflés is that, after a certain point, they will collapse due to the cool air outside the oven. So they need to be served and eaten as soon as they are taken out of the oven. Soufflés gained popularity in fine dining from the early to mid-1900s. According to the New York Public Library menu archives, soufflés made frequent appearances in menus at upscale venues like the Waldorf Astoria, The Biltmore, and Hotel Astor but today they are found on brunch menus everywhere!

Join Gareth and Gary for another episode of Dishing It Out as they welcome pastry chef extraordinaire and all-round master baker, Shane Smith.Shane takes us through the early days of his career as a pastry chef, from old-school, army-style hotel kitchens to the pull of the pastry section across the pass. The lads dig into what makes pastry different from savoury cooking: following recipes exactly, how confidence and “feel” only come with repetition and how gluten-free and vegan baking have evolved as better ingredients have come on stream.Shane also introduces his new cookbook, Loaf Tin Bakes, built entirely around the humble 2lb loaf tin and including recipes for classic cakes, focaccia, Christmas cakes, and even a Brunch ice cream in a tin. They chat about moving away from fine dining patisserie towards simple, joyful home bakes, and how he's found a passion for sharing his skills with others as a teacher. We've also got this week's Nespresso Dish of the Week with Gary in the hot seat and then it's over to your Culinary Conundrums, as the lads help a listener whose food tastes great but looks underwhelming on the plate.Keep those questions coming to food@goloudnow.com .

Come for the unreplicatable science, stay for the promise of a planetary heart beating out peace for a thousand years. The HeartMath Solution: The Institute of HeartMath's Revolutionary Program for Engaging the Power of the Heart's Intelligence By: Doc Childre, Howard Martin, and Donna Beech Published: 1999 304 Pages (But somehow this translates to only 2 hours 45 minutes on audio…) Briefly, what is this book about? The idea that the heart contains a separate brain, and true emotional health comes from aligning the heart's brain and its "intelligence", with the actual brain. Basically it's mindfulness, meditation, and cognitive behavioral therapy (CBT) wrapped in pseudoscience. What authorial biases should I be aware of? These guys are definitely trying to sell you on the HeartMath program. Also many of the studies they cite were conducted by their institute. Who should read this book? No one, unless perhaps for its (completely unintentional) value as a work of humor. Specific thoughts: You had me at "quantum nutrients"

Claire says there's a lot of fear-mongering around the dessert, but when you break it down into straightforward steps and reduce the batch size, it's an attainable bake for anyone. Tune in for Claire's tips for super stable soufflés and her explanation of why coating the inside of your ramekins with sugar ensures your dessert will rise (and stay) high. The duo also chat about Claire's approach to writing recipes, what being a YouTuber means to her today, her New York Times-bestselling cookbook “What's For Dessert,” and more. Want to bake along?
