En direction du circuit automobile de Nogaro, cette quatrième étape qui part de Dax, sous-préfecture des Landes est longue de 181,8 km. Dax est le berceau de personnalités sportives comme André Darrigade (cyclisme), Pierre Albaladéjo, Richard Dourthe, et Raphaël Ibanez (rugby) ou encore Patrick Edlinger (escaladeur). Les madeleines de Dax sont fabriquées depuis 1906 par la même famille de pâtissiers, les Cazelle, selon une recette dont la maison garde jalousement le secret. Considéré comme l'un des plus vieux commerces de la ville, le magasin Les Madeleines de Dax est devenu un passage obligé pour les gourmands en quête d'un souvenir culinaire. Les beaux comptoirs en bois, les belles panières en osier remplies de madeleines, les jolies boîtes en carton bleues ou roses qui ornent la boutique participent au charme de cette pâtisserie dirigée par les Cazelle depuis cinq générations. Le fondateur de la lignée, Antonin Cazelle, a rapporté la recette de Commercy, dans la Meuse, lieu d'origine des madeleines, où il effectuait son service militaire. Il l'a ensuite adaptée au goût landais. De la Madeleine au foie gras, ce que les cyclistes ne pourront gouter sur cette étape, promis, nous vous en parlerons ;-) Nous sortons un peu du parcours pour être en direct ce 4 juillet depuis la ferme du Viel-Capet. Kelyn et Florian gèrent l'exploitation au quotidien, mais ils peuvent compter sur l'aide régulière de: Gérard principalement pour les cultures et la surveillance des volailles (agriculteur à la retraite) Michèle pour les essais de recettes et aider à la conserverie (salariée dans le privé) Charlyne pour les attrapages de volailles et la confection des paniers garnis (étudiante en école d'ingenieur agronome) Dimitri pour les travaux des champs et attrapage volailles (étudiant en bac pro agro équipement) Romane pour les calinages de poussins et canetons (étudiante en CP) Sanka, Border collie, pour nous aider à rentrer les poulets le soir au chaud dans les cabanes (croquette adict) Sans oublier Christine, Michel, Bernard pour les plantations d'arbres, paillage et autres corvées, et les copains (Arnaud, Fredo, Eléonore, Clément, Vero, Franck, Baptiste, Jean-Noël, Benjamin) pour l'attrapage des volailles la nuit. Elevage en plein air sur des parcs arborés riches en biodiversité Les arbres permettent aux volailles de se protéger des prédateurs et d'abriter une multitude d'insectes. Les volailles complètent leur alimentation en mangeant des insectes, vers et autres végétaux. Un couvert végétal varié leur permet d'exprimer un comportement naturel et à se déplacer librement dans leur parc A la fin de chaque lot, les parcours sont entretenus, réensemencés si besoin et l'état de santé des arbres est vérifié une fois par an avec l'aide de l'association « Arbres et Paysages 32 ». 80% de l'alimentation est composée de céréales, principalement du maïs cultivé sur la ferme de manière raisonnée. Les volailles completent leur alimentation en mangeant des insectes, vers et autres végétaux. In this seventh episode, Kelyn Bacon – Mrs Justice Bacon DBE – and Sarah Abram got together to discuss gender equality and social mobility in the legal profession and the judiciary. Join them as they discuss: · the reality of combining family life and practice; · why the bar is a career which does allow that combination to work, even though there remains much that can and should be done to promote gender equality; · the importance of schools outreach and, in particular, mentoring, in promoting social mobility; and, · the mentoring that is available at all stages of career development. Mrs Justice Bacon DBE was called to the Bar in 1998, and practised in EU and Competition law, with a particular specialism in state aid law (she was the author and general editor of European Union Law of State Aid and co-founder of the UK State Aid Law Association) and pharmaceutical regulation. She took silk in 2014, and appeared in many of the leading and landmark competition cases both domestically and in Europe. In 2017 she became a deputy high court judge, and in 2020 she was appointed to the High Court bench, to sit in the Chancery Division – the first woman from Brick Court Chambers to be appointed as a judge. Sarah Abram was called to the Bar in 2006. Her practice straddles Chambers' practice areas, encompassing competition, EU and commercial cases. Described by the legal directories as ‘without doubt a star of her generation', Sarah was nominated as EU and Competition Junior of the Year in the Legal 500 UK Bar Awards in both 2019 and 2020. In 2021, she was crowned Pro Bono Junior of the Year, in recognition both for her pro bono work and her work developing and launching a mentoring scheme for prospective barristers from under represented groups, which launched in 2020 initially with 6 participating sets, and now involves 10 leading commercial sets.

We’re down south in Richmond Virginia at Southern Kitchen with owner Shane who is on her second attempt at the restaurant business. She has enlisted her daughters as well who have also invested. Gordon goes undercover as an old woman reading erotic fiction. The undercover cameras show an angry owner and no communication. Chelsea, Shane’s daughter, fires back and puts a lot of blame on a lazy staff. The chefs have a good palette and skills if Shane would let them use them. Chelsea and Kelyn admit to Gordon that she doesn’t want to really be there. Shane doesn’t seem to want to accept that. But she finally does and wants her daughters to live their own life. The remodel looks warm and inviting and the staff is fired up!
