We love “the new.” Especially when it comes to the restaurant scene, we get excited about the spot that just opened its doors or discovering a place the rest of the community hasn't caught on to yet.While the rookies get everyone worked up, it's the veterans who create the foundation of a city's food identity. And we've got two of them leading the lineup for this episode of the podcast.First up is Bacchus, the venerable Bartolotta-owned restaurant that announced a couple different developments around its 20th anniversary. For starters, executive chef Nick Wirth and chef de cuisine Brent Davis have come up with a new a la carte dinner menu, which will debut along with a new bar menu Feb. 20. Among the items you'll find are charred Spanish octopus, smoked wagyu pastrami, Seremoni black cod with burnt honey celeriac and couscous pilaf, and Wagyu skirt steak with miso-glazed ube and grilled kimchi bok choy.The restaurant will also take a night to properly celebrate the 20th anniversary as it hosts a champagne dinner March 6. The aforementioned chef duo have put together a five-course menu for the occasion, which will also include pairings of bubbly from the likes of Dom Pérignon and Laurent Perrier.Another longstanding Milwaukee eatery got the Ann Christenson treatment recently, as our favorite food writer took a peek inside Pizza Man's comeback. Once the king of our city's pie scene (arguably), Pizza Man experienced some slippage as it suffered through fire, a couple location changes and attempted expansion.It's now back at the Downer location and trying to recapture its former glory under new owners Thomas Schafer and Krys Zielinski. Ann stopped by a couple times to get a feel for how things are coming along and found mixed results, as well as steady improvement. He was a student at the Wisconsin Lutheran Seminary from 1910 to 1912 and had the unique opportunity to learn from the famous Wauwatosa theologians of that era. As you can imagine, this diary could be a treasure trove of insights into the life of a seminary student over a century ago.But here's the thing—the handwriting is challenging to decipher. It's very different from what we're used to today, and to do it justice, I need to hire professional transcribers who can carefully decode its contents. Only then can I start the process of translating and studying it. This project isn't just personally meaningful to me; it could also provide valuable historical insights, and I plan to use it as the basis for an article in the Wisconsin Lutheran Quarterly Journal.Here's where I'm asking for your help. By the end of this month, the Milwaukee area will have a promising new option when Serious Dumplings — a small chain that up until now was limited to five locations in Florida — opens on Mayfair Road in Wauwatosa.The new spot just north of the Milwaukee County Zoo will fill a glaring hole spotted by sharp folks like myself and Journal Sentinel dining critic Rachel Bernhard: a high-quality dim sum parlor. A quick look at Serious Dumplings' menu reveals a solid dim sum section, plus the restaurant's titular dumplings, noodles and rice, and other items I'll be curious to try when it starts serving Sept. 27.Our other topic du jour happens Sept. 22, when Chucho's Red Tacos hosts the inaugural Pho 1 Pho Contest and B-Boy Battle. I mean, the Pho face-off is one thing, but combining it with a breakdancing competition just isn't fair. The event is a team-up among Chucho's, ElevAsian and SapSap, and will feature a roster of local restaurants vying for the title of Milwaukee's best Pho. James Davies is the former Executive Director of Bublr Bikes, Milwaukee's nonprofit bike share operator. James received his law degree from the University of Florida, Levin College of Law, and his bachelor's degree in Genetics from the University of Wisconsin – Madison. During his time at Bublr, the bike share system has grown from 9 stations in downtown Milwaukee to 109 stations across Milwaukee, Wauwatosa, and West Allis. James also developed and secured funding for the Access Pass to provide free Bublr Passes to income qualified individuals and the adaptive bike program which has adaptive bikes integrated directly into the Bublr System. Last year Bublr added electric assist bicycles to its fleet as well as installing 15 new bike share stations. This year Bublr is adding 200 more electric assist bicycles and installing another 19 bike share stations. In 2001 James was named to the Milwaukee Business Journal 40 Under 40 list. James also serves on the board of the North American Bikeshare and Scootershare Association (NABSA) and provides volunteer legal services through the Marquette Volunteer Legal Clinic. Damian Buchman has defied one in a million odds not once but twice in his life. Diagnosed with a rare bone cancer at 13 years old and having endured 28 knee surgeries since, he embodies what it means to have grit and tenacity. Knowing what it feels like to have to sit out because of a disability, Damian's life work has been dedicated to creating spaces that are accessible to all. He and Charlie talk about his work with the Ability Center in Milwaukee, including the plans for a multi-million dollar Universal Park to be built in Wauwatosa. Damian explains that “people aren't used to following their dreams, mostly because we're stomped down by someone who lost theirs,” and encourages everyone to block out the doubters and follow their dreams.
