If you're a beer fan, it's likely you know about the core ingredients in every recipe: hops, malt, water, yeast. Even if you're not an enthusiast, you may have at least heard about a hop varietal every now and then. But it's that last item—the yeast—that is getting renewed and extraordinary scientific interest as companies forge into a new frontier of fermentation. In this episode, we're joined by the three founding members of Berkeley Yeast, all scientists who came together with the goal of pushing the microorganisms to new levels in order to create new flavors in beer. Whether it's recreating the taste of hops or adding nuances of fruit—the kind of yeast this company is making has the ability to not just alter our beer, but our perception of what's possible in the brewing process. One brewer from San Francisco's Cellarmaker Brewing once said that Berkeley Yeast is "messing around at a level that's just so far beyond what anyone else is doing," while another from Monterey's Alvarado Street Brewery said once that “It's mind-boggling how these flavors could be created with no fruit.” Joining me to talk about it all are Rachel Li, Charles Denby, and Nick Harris, who launched their startup from origins at UC Berkeley and in recent years have rapidly become a trusted source for brewers around the country looking to push the boundaries of what their fermentations can do. We'll hear about how and why they started the company, the kinds of yeast they're creating, and most importantly, why now is the moment this is all happening and changing the minds of brewers. She reviews her family's Christmas activities in Missouri, including her brother Patrick's fake snow machine that he bought so that his kids could have a white Christmas (the “snow” was actually foam), and the human Hamster Wheel that was gifted to her young nephews. The boys headed straight out to a hill in the yard to try it out, and Kathleen laughed as she shared a video from the incident on her Instagram account. MORE CLUES TO POMPEII: Kathleen loves history and is fascinated to read an announcement that archaeologists have discovered the skeletal remains of a man killed by the eruption of Mount Vesuvius in 79 AD, offering new insights into the events leading up to one of the most famous volcanic eruptions in history.MISSOURI DINOSAURS FOUND: Kathleen is thrilled to read a recent article about the Chronister site, a couple of dozen acres of woodland located near Bollinger County in Missouri. The site is the only place where fossils have been found in Missouri, with several turtle fossils and parts from at least four different dinosaurs unearthed within the past few months. SOUTH KOREA'S 1ST FLOATING CITY: Kathleen is excited to share the news that organizations UN-habitat and OCEANIX have aligned with the South Korean government to build the world's first sustainable floating city prototype. Alex takes over next and talks about his Cali trip. The twins visited Monterey and Carmel by the Sea and visited Alvarado Street Brewery. Alex was very impressed with the “Yeast of Eden” series of beers. They visited Fieldwork and Camino breweries and Alex was impressed. Travel was kind of a nightmare for Alex heading home from California. After recapping the rest of his trip, Alex explains Goodlander to Nick. Nick transitions to the news section of the podcast and talks about Brew Gentlemen's new pop-up at the Allegheny Overlook! Next up, Grist House is open again! With the recent news that Alvarado Street Brewery will open a restaurant and bar in what most of us know as the Rabobank Building, we decided to look into the history of this Salinas landmark. This leads us to a journey following the history of beer brewing in Salinas, which goes back much farther than we realized. In 1874 a couple of German immigrants started a brewery that lasted until the Second World War and shipped beer all over California.

Welcome back to another episode of Conversation on Tap! In this episode, Joel and Jose had a potpourri conversation-- we talked about several random topics! As they started the episode, Joel and Jose poured a delicious pint of Frothbite IPA by Alvarado Street Brewery. The can's label was hilarious and the beer was tasty. We highly recommend it. For their FRED Talks, Jose talked about Pope Francis's 83rd birthday, while Joel talked about "cute aggression." In the main segment, Jose and Joel talked about the impeachment of Trump, which seemed to really set Jose off. That segued into a discussion about which 2020 candidate was the most viable in running against Trump. From there, Joel brought up the attempts by some Christians to create a duality between the material and the spiritual, which lead into a discussion about Christmas. Jose then took some time to discuss his frustrations at work, but Joel talked him off the ledge. As they wrapped up, they talked about Star Wars: The Rise of Skywalker and offered final predictions. In the final segment, Joel gushed about a band called Big Thief and Kiwanuka. Jose, on the other hand, really enjoyed The Irishman. Let us know if you followed our recommendations! Craft Brew News 10/11/19(courtesy of Brewbound www.brewbound.com )Wrapping up the 2019 Great American Beer FestivalAbout 60,000 people attended last week’s Great American Beer Festival in Denver, but the 2019 edition of national trade group the Brewers Association’s (BA) largest consumer-facing event may mark the last in which beer is the only featured alcoholic beverage.Leaders within the not-for-profit trade group told Brewbound that discussions are ongoing about opening up future festivals to other alcoholic beverages beyond beer that craft breweries are making. Could there be a beyond beer pavilion? A section dedicated to hard seltzer? At this point, the organizers say they are keeping an open mind as they try to attract more consumers to the annual event.Although this year’s GABF didn’t sell out completely, three of the four sessions, on Friday night, Saturday afternoon, and Saturday evening, each sold outSeen on the Floor …Although there seemed to be more room on the floor this year, lines still jammed up sections where popular brewers — including Russian River, the Lost Abbey, Avery Brewing, WeldWerks, Rhinegeist Brewery and more — were located.Brooklyn Brewery made a statement with its booth, highlighting its non-alcoholic beer, Special Effects, which will launch in select markets this fall before hitting the company’s 30-state footprint in 2020.Pernod Ricard-owned Jameson Irish Whiskey’s barrel-aged beer garden continued to be a major draw within the festival and a big winner over the weekend. Although the company’s advertisements weren’t as ubiquitous as in 2018, the company again wrapped public transportation with Caskmates ads.Meanwhile, Sierra Nevada founder Ken Grossman kicked off Thursday’s GABF session by showing off the legendary Chico, California-headquartered craft brewery’s first brewhouse. Grossman recently reacquired the brewhouse in a trade with Mad River, and the company is sending the brewhouse on the road, starting with San Francisco Beer Week in February and Homebrew Con in Nashville in June. Grossman told Brewbound that he plans to make some legs of the trip with the brewhouse, which is still operational.Best Booth Goes to …For the second consecutive year, New Belgium put together the festival’s most eye-catching booth. The double-sided stand featured a “Fat Tire” branded ski lodge bar on one side, complete with a bubble hockey game, while the other side featured a more traditional bar along with a photo booth called the “Mini Bar.” The Fort Collins-headquartered craft brewery continued to raise the game within the fest.Sam Calagione Leads Boston Beer’s Annual BreakfastBoston Beer Company founder Jim Koch’s 35-year streak of attending GABF was broken this year. Koch was noticeably absent from Friday’s annual breakfast with members of the media, although he did appear via a pre-recorded video from Munich, where he was selecting hops.In Koch’s stead was Dogfish Head co-founder Sam Calagione, whose company merged with Boston Beer Company earlier this year.Unlike past years, Boston Beer did not announce its big innovation for the coming year. However, the company did unveil a limited-release Samuel Adams-Dogfish Head collaboration beer called CollaBEEration, a continually hopped pilsner brewed with honey from Brooklyn and Zambezi. The beer will only be available starting October 11 at Samuel Adams’ taproom in Boston’s Jamaica Plain neighborhood and at Dogfish Head’s taproom in Milton, Delaware.Boston Beer also announced the return of Utopias, the biennial “extreme beer” that checks in at 28% ABV, and which the company claims is illegal in 15 states. The beer will be released in select markets on October 15 for a suggested retail price of $210. Garage Project’s Hāpi Festival and Symposium was held earlier this year in the lead-up to New Zealand’s hop harvest. The symposium and festival form the public-facing side of a hop-breeding initiative Garage Project has undertaken with New Zealand’s Freestyle Farms, and with backing from the country’s Ministry for Primary Industries. Over the course of a day in Wellington’s famous Museum of New Zealand Te Papa Tongarewa, speakers such as Alexandra Nowell from Three Weavers Brewing Company, Matt Brynildson from Firestone Walker Brewing Company, and Paul Jones from Cloudwater Brew Co. gave talks with a focus on hops. Good Beer Hunting was there to capture a slice of the discussion.   Afterwards, the invited breweries poured for a small festival of 1,000 people. It was a surreal situation: seeing world-renowned breweries like Trillium, Other Half, Hill Farmstead. Tired Hands and Cellarmaker serving beer in New Zealand’s national museum.  *** I was happy to talk to J.C. Hill from Alvarado Street Brewery, based in Monterey, California, as part of our Hāpi Festival and Symposium podcast series. I’d heard exciting things about his beers and loved the artwork on the labels. In our conversation, and in the following interviews, I really wanted to get an understanding of how the experience of visiting New Zealand hop fields would influence brewers when they got back into the brewhouse.  We also talk a bit about Cryo Hops, Italian Pilsners, and how good New Zealand tomatoes taste.
