Who is Daniel Hooberry: DANIEL HOOBERRY AKA DANIEL DARK Daniel Dark, a native of Nashville, Tennessee, grew up with homicide every day. Having a homicide detective as a father, he was able to learn about those that were brought to justice, and the ones that were not. Grandfather's hours in Central police headquarters and in his grandfather's hematology lab gave Daniel an unusual childhood and a love for science. Along with this, his great uncle owned the oldest bookstore in Nashville. His parents took him there regularly, where developed a love of reading and found out about history. Daniel went on to become an Electrical Engineer and Industrial Maintenance Manager till NAFTA took away his job. A year later he went to culinary school and studied Victorian cooking, after which he opened a Victorian-style restaurant. He became a heart attack and stroke survivor at fifty years old. where he used writing to rehabilitate his brain. The first book written by Daniel was on Victorian Catsup. which had over two hundred catsup recipes in it from the late 1700's to 1910. with over sixty assorted flavors. We all know Lauren Brownlow, purveyor of all things ACC, from her Twitter account and The ACC Panic Room. What started off as a conversation about ACC football got sidetracked into more entertaining subjects like how awful Pete Carroll is and the punchable face that he has, did Russell Wilson get a hex put on him (and by whom?) and the Catsup toss that was the 2010 Music City Bowl. We also discussed Long-COVID and the difficulties associated with being a woman in sports journalism. Now, we did actually discuss a lot of issues with ACC football including the conference serving as Notre Dame's sidepiece (and, because I wasn't clear initially, my complaints about the Irish go back to 2013 when they "joined" the conference), a mixed bag of good and not so good bowl games and what Coach Elko and Duke accomplished this year. We also discuss the sort of implosion we're watching real-time over at that school in Chapel Hill. There's also a good discussion about what it will take to keep the Blue Devils competitive over the coming seasons. And, of course, we relive this glorious moment of ACC football: In the open mic session, Lauren made good use of her time and talked about the need to donate to domestic violence shelters. Vous pensiez que le ketchup a toujours été une sauce à base de tomate que les cinéastes utilisent pour simuler maladroitement du sang ? Naïf que vous êtes, déja à l'époque du noir et blanc, il est arrivé qu'on utilise plutot du topping au chocolat, notamment dans Psychose de Hitchcock. Mais surtout, le ketchup est un concept extrêmement vieux et à la base, il n'est même pas à la tomate, il n'est pas américain non plus. On va revoir tout ça ensemble. Le Ketchup est originaire de Chine, on en trouve la trace dans un document de 544. Il s'agissait d'un condiment fabriqué à partir de viscères de poisson qu'on salait et laissait fermenter au soleil. La recette est appréciée et se répand vite dans toute l'Asie du Sud Est. Prenant le nom de Kichap en Malais ou Kachiap en Thaïlandais. Vers le 17ème siècle, les explorateurs et commerçants européen, notamment Hollandais et Britanniques, découvrent cette sauce singulière et la ramènent avec eux. Le terme Ketchup comme on l'écrit actuellement se trouve par exemple dans un document Anglais de 1711 relatant que le meilleur soja vient du Japon et le meilleur  Ketchup vient de Tonkin.  Le problème est qu'en métropole, personne ne sait comment la sauce originelle est fabriquée, et on va donc expérimenter allègrement avec les produits locaux. On trouvera des recettes à base de tout finalement, sauf à base de poisson fermenté.Donc pêle mêle des recettes de Ketchup à base de noix ou d'huîtres ou d'échalotes, de vin, de jus d'orange, moules, homard ou champignons et j'en passe. Et bien que le terme Ketchup existait déjà, à l'instar des ingrédients on va voir ce condiment passer aussi par tous les noms, Ketchup, Catsup, Ketjap, Catsap… En français, le mot ketchup apparaît dans le Larousse en 1948 Le ketchup le plus populaire des 18ème et 19ème siècle est à base de champignons ou de noix. La tomate n'arrive qu'au 19ème siècle. Les recettes trouvées à cette époque incluent du Brandy et les ingrédients font plus penser à une sauce tomate que le ketchup que vous connaissez actuellement. Le Ketchup aux tomates n'était pas populaire à l'époque car il se conservait mal et avait mauvaise réputation notamment sur sa composition douteuse. Les fabricants étaient aussi peu scrupuleux et y mettaient n'importe quoi. Et le problème de réputation fut résolu par un certain…Heinz. Alors attention, il n'était pas seul et d'autres fabricants s'étaient attelés à la tâche mais c'est son nom que l'histoire retiendra. Heinz avait un don pour le marketing. Join us as we try cream cakes, blackberry cordial, pickle lily, and tomato catsup. We share our experiences testing these recipes, explore the history behind them, and discuss how culinary manuscripts can offer insights into the tastes and foodways of specific households in North Carolina. PC.75.   To Make Cream Cake A quart of cream; four eggs sifted flour sufficient for a thick batter; a small teaspoonful of pearlash,* a spoonful of salt; beat four eggs very light and stir them by degrees (a little at a time) into a quart of cream & gradually enough of sifted flour to make a thick batter put in the salt; dissolve the pearlash in as much vinegar as will cover it and stir it in the mixture. Bake it in muffin rings send them up hot split them open & butter them. Sour cream is better than sweet. The pearlash will remove the acidity & the batter will be improved in lightness.   *Baking soda serves as a modern substitute for pearl ash. Catsup from the Polk Recipe Book Two, 1858. A Recipe for Making Catsup Take one Gallon of Skinned Tomatoes 4 table spoonsfull of Salt 2 do* of Black pepper, a Half do of Allspice 3 pods of Read pepper 3 tablespoonsfull of Mustard ground very fine & Simmer'd slowly in sharp vinegar for 3 Or 4 hours in a puter basin, & then bottle it close,  those who like garlick after the simmering is over and the ingredients cool you may add 2 tablespoonfuls of the juice.   *Do (or ditto) refers to the unit of measure used with the previous ingredient.   Adaptations: Bell pepper may be substituted for the “read pepper” for a milder flavor. PC.150.   To Make Pickle Lily Scald some vinegar and season with Salt, pepper, cloves, mace and allspice and When highly seasoned and Cold, pour into Jar. Drop into this vinegar as they ripen. Small Cucumbers tender radish pods Young beans and very small onions. Cork close.   Adaptation: Use equal parts vinegar and water for a more balanced pickle.   Blackberry cordial from the Polk Recipe Book Two, 1858. Lucy Williams Polk Papers. Private Collections. State Archives of North Carolina. Call no. PC.75.   Blackberry Cordial Gather your Blackberries & mash them up then strain them through a sifter & put all the pulp & seed out. Then to every quart put 1 pound of Brown sugar stew it well together when dun take three measures of syrup to 1 of Brandy then bottle it. Put any kind of spice you like allspice is generally used   Adaptation: For a clearer, less muddled cordial, simmer the blackberries and your desired spices for roughly 30 minutes to release the juices, then dissolve the sugar into the mixture and strain.
