For this episode Wes and Jordan make Hamantaschen!Ingredients:4 cups (500 g) all-purpose flour, plus more for surface1½ teaspoons baking powder1 cup (2 sticks) unsalted butter, room temperature1 cup (200 g) sugar1 teaspoon kosher salt1 tsp. (packed) finely grated lemon zest2 large eggs, room temperatureStep 1Whisk 4 cups (500g) all-purpose flour, and 1 ½ tsp. baking powder in small bowl until well combined.Step 2Beat 1 cup (2 sticks) unsalted butter, 1 cup (200g) sugar, 1 tsp. Diamond Crystal kosher salt, and 1 tsp. (packed) finely grated lemon zest in a stand mixer fitted with paddle attachment on medium speed until pale and creamy, about 3 minutes. Add 2 large eggs, one at a time, beating for 30 seconds after each addition and scraping down sides of bowl. Reduce speed to low and add dry ingredients; beat until just combined. Divide dough in half and pat into disks.Step 3Working one disk at a time, roll out dough between 2 sheets of parchment paper to ¼" thick. Stack sheets of dough, still sandwiched between parchment, and slide onto a baking sheet. Chill until firm, about 1 hour.Step 4Roll out dough on a very lightly floured surface to about ¼" thick, dusting with flour as needed (use as little flour as possible). Cut out 3 1/2" rounds with cutter and, using an offset spatula or bench scraper, transfer to 2 parchment-lined baking sheets. Gather up scraps, reroll, and cut out additional rounds.Step 5Place racks in upper and lower thirds of oven; preheat to 350°. Unstack dough sheets and transfer to a surface; carefully peel away top sheet of parchment paper from each. Punch out cookies as close together as possible with cutter. Transfer cutouts to 2 parchment-lined baking sheets (reuse the top sheets from rolling out cookies). Gather up scraps, reroll, and cut out additional rounds, chilling dough briefly in between if needed.Step 6Place 2 tsp. of your chosen filling in center of each cookie round. Fold three sides up and over filling (leaving about 1” of filling exposed) to make a triangle, pressing points gently but firmly to seal.Step 7Bake cookies, rotating baking sheets top to bottom and front to back, until bottoms are golden brown, 18-22 minutes. What is it like to be a Jew in Peru? Do they have kosher food? A mikveh? A minyan? What do they do for Hanukkah? Purim? Pesach? Shabbat? Rebbetzin Sara Blumenfeld, co-director of Chabad of Peru, talks about Jewish life in Lima, Peru. When Rebbetzin Sara, and her husband, Rabbi Zalman Blumenfeld, first came to Lima, there was no kosher food, no Hanukkah candles, no menorahs. In fact, there were terrorists instead. She describes living without electricity! From there, she helped to create and foster a Jewish environment that now has Torah classes for women and men, a large Pesach seder, parsha of the week sheets for both adults and kids, Hamantaschen for Purim, a mikvah, and other Jewish amenities that make being Jewish in Peru much easier than it has been in the past. Rebbetzin Sara speaks about the purpose of the Chabad emissaries all around the world (including Peru). Their purpose is to wake up the Yiddishkeit of each Jew; to wake up the soul of a Jew. “It all goes back to framing – we can go through something wonderful and see everything as bad, or we can go through something horrible and see the goodness in it.” For Chaviva Lifson, as she says, how we experience things, and how we hold them afterwards, is all about perspective, as she tells us in the story of making the Purim cookie, Hamantaschen. “There is a whole lot that we can reframe from things not working.” All this feeling stuff takes place in our heart. And we talk about that, and more, in this episode. We also explore other ways of the heart… the need that we all have to find that thing that lights us up from within… be it baking, or playing guitar, sewing or whatever. I share a bit of what lights me up – these conversations on my podcast, but talking to people generally and connecting over things that matter to us in that moment.
