Hiếm có đầu bếp Pháp nào lại có nhiều chuyện thú vị để kể như ông Guillaume Gomez. Vào năm 25 tuổi, ông trở thành gương mặt trẻ nhất được trao tặng danh hiệu « Nghệ nhân xuất sắc nhất nước Pháp » (Meilleur Ouvrier de France). Vài năm sau khi được chính thức tuyển dụng vào Điện Élysée ( phủ tổng thống Pháp ), ông trở thành bếp trưởng, phục vụ bốn đời tổng thống Pháp Chirac, Sarkozy, Hollande và Macron. Do làm việc 24 năm liên tục, từ năm 1997 đến năm 2021, trong nhà bếp Điện Élysée, ông Guillaume Gomez biết rõ hậu trường cũng như cách vận hành của phủ tổng thống. Khi lớn lên, tôi bắt đầu sưu tầm các quyển sách dạy nấu ăn. Tôi còn nhớ quyển đầu tiên là quyển sách « La cuisine du Marché » (hiểu theo nghĩa nấu ăn với các món mua ngoài chợ trong ngày) của bậc thầy Paul Bocuse. Cha mẹ tôi kiếm sống nhờ nghề buôn bán đồ cũ. Vào thời ấy, bố mẹ tôi còn nghèo, cho nên dù đam mê nấu ăn nhưng chưa bao giờ tôi được đi ăn nhà hàng. Biết rằng tôi bắt đầu sưu tầm sách dạy nấu ăn, mẹ tôi thường để dành cho tôi một số cuốn sách mà bà tìm thấy. Một số quyển sách cũ đến nổi cho dù muốn bán thì cũng chẳng có ai mua. Sinh trưởng tại vùng ngoại ô nghèo của Paris (Seine Saint - Denis), ông bắt đầu học nghề nấu ăn từ năm 14 tuổi. Trong những bước đầu « tầm sư học đạo », Guillaume Gomez cho biết ông đã gặp được nhiều người tốt. Những vị ân nhân ấy đã tạo cơ hội cho ông gõ đúng cửa, tìm đúng việc hợp với sở thích của mình. Đầu bếp người Pháp nhận xét : Vâng, tôi rất may mắn vì nhiều lý do. Đầu tiên hết là từ khi còn nhỏ tôi đã biết mình muốn làm gì khi trưởng thành, cho nên đỡ phải mất thời gian để định hướng nghề nghiệp. Hơn nữa, tôi luôn được bố mẹ ủng hộ, bất chấp sự bất đồng của thầy cô trong trường, cho rằng cho tôi đi học nghề chẳng khác gì lãng phí khả năng học chữ của tôi. Cuối cùng, khi mới vào đời, tôi đã may mắn gặp thầy tôi là ông Johnny Benaria, mà tôi xem như một người cha thứ nhì. Có thể nói là nhà bếp của Điện Élysée giống như một lớp đào tạo tập hợp về cùng một chỗ những thực tập sinh đến từ nhiều trường phái khác nhau như Bocuse, Ducasse hoặc Robuchon. Thú vị hơn nữa là chúng tôi có thói quen khuyến khích nhau để cùng học hỏi tiến tới, chứ không phải học tập để lấy bằng điểm. Việc tiếp đón tổng thống Hoa Kỳ (với tất cả những ràng buộc vê mặt nghi thức lễ tân) đã để lại cho đầu bếp người Pháp nhiều giai thoại thú vị. Nhân chuyến công du nước Pháp đầu tiên của tổng thống Trump, chúng tôi được giao nhiệm vụ nấu một bữa ăn trưa cho hai nguyên thủ quốc gia Mỹ và Pháp. Thế nhưng, việc đưa vào thực đơn Điện Élysée các món ăn như burger hay pizza là điều không thể tưởng tượng nổi. Mỗi năm, các chứng bệnh này gây thiệt hại hàng chục tỷ euro, thậm chí còn cao hơn nhiều lần mức thâm hụt ngân sách quỹ an sinh xã hội (hiện thời là 23 tỷ euro). Trong vài năm tới, chúng ta sẽ gặp rất nhiều vấn đề y tế công cộng nếu chúng ta vẫn ít coi trọng giáo dục dinh dưỡng, nhất là đối với giới trẻ thời nay. Theo tôi nghĩ, chúng ta đừng chờ, mà nên tìm cách đối phó ngay từ bây giờ.

Nicolas Sarkozy a vendu plus de 100 000 exemplaires de son livre Le Journal d'un prisonnier, dans lequel il raconte son bref passage à la prison de la Santé. Il y décrit son quotidien de détenu, son isolement et sa découverte du monde carcéral. Mais que dit réellement ce récit de la prison ? Et surtout, que laisse-t-il de côté ?Pour répondre à cette question, nous recevons Laélia Véron, chercheuse, et Julien Fischmeister, responsable plaidoyer à l'Observatoire international des prisons (OIP), auteurs de Ce que Sarkozy n'a pas dit sur la prison, journal de 87 000 prisonniers. Nouvel épisode de cette série qui propose un grand entretien avec un.e auteur.e dans son pays natal. Aujourd'hui, l'artiste et écrivain Mahi Binebine chez lui à Marrakech. Une voix, un rire uniques et une histoire hors du commun racontée par bribes dans chacun de ses livres et qu'il retrace pour nous aujourd'hui chez lui. Rencontre. Mahi Binebine est né en 1959 à Marrakech. Il s'installe à Paris en 1980 pour y poursuivre des études de mathématiques, discipline qu'il enseignera pendant plusieurs années avant de se consacrer pleinement à l'écriture et à la peinture. Dans les années 1990, il s'installe à New York, période déterminante durant laquelle son travail s'affirme et s'inscrit dans une scène artistique internationale. Ses œuvres rejoignent notamment la collection du Solomon R. Guggenheim Museum. De retour à Marrakech au début des années 2000, il développe une œuvre singulière, à la fois picturale et sculpturale, où la matière — cire, pigments, goudron — devient un langage. Ses figures, souvent fragmentées, portent la mémoire des corps, de l'exil, de l'enfermement et de la résilience. Parallèlement à son travail plastique, Mahi Binebine est l'auteur de plusieurs romans traduits à l'international. Son écriture explore les failles humaines, les histoires intimes et les zones d'ombre de l'histoire contemporaine. Son roman Les étoiles de Sidi Moumen, adapté au cinéma sous le titre Les Chevaux de Dieu, est à l'origine de la création des centres culturels de la Fondation Ali Zaoua, cofondée avec Nabil Ayouch, et dédiée à la jeunesse des quartiers défavorisés. Engagé dans la transmission, il est également cofondateur et président du Festival du Livre Africain de Marrakech, un événement qui œuvre à faire rayonner les littératures africaines et leurs voix contemporaines. Son parcours est profondément marqué par son histoire familiale, notamment par les années de détention de son frère au bagne de Tazmamart, une mémoire qui traverse son travail sans jamais le figer. Aujourd'hui, son œuvre est exposée dans de nombreuses institutions et galeries à travers le monde, et s'inscrit dans une démarche où création artistique et engagement humain sont indissociables.
