Jerry Siote- Co-Owner / Director of Brewing Operations. I've been a professional brewer since 2014 here with Lone Tree Brewing Company. Personally, I love experimenting with traditional hops in hop-forward styles, while incorporating new hopping techniques and new varieties into West-Coast-style IPAs, Pale Ales and Lagers. We run two breweries in Colorado, our original location in Lone Tree, CO and a recently acquired brewery in 2024 located in the town of Parker, CO. Our goal is to make the best craft beer possible by emulating traditional styles from all over the world while trying to create new flavor profiles for the communities we brew in. He currently sits on the board of the Brewers Association, American Malt & Barley Association, and Allagash Wilderness Waterway Foundation, and is actively involved with the Hop Quality Group. He is the Chair of the Brewers Association's Technical Committee, a former board member of the Master Brewers Association of the Americas-New England as well as the Maine Brewers' Guild—and is the recipient of the 2016 Russell Schehrer Award for Innovation in Craft Brewing. Meet Ignacio Rodriguez - Manager of Brewing Operations at Big Rock Brewery. Originally from Venezuela, Ignacio moved to Canada in 2015 and has been in the brewing industry for 7 years. Last week, Westbound & Down Brewing announced that it had acquired two breweries, Aspen Brewing and Capitol Creek Brewery's brewpub, both in Colorado's Roaring Fork Valley. The deal, says Jake Gardner the Director of Brewing Operations at Westbound & Down Brewing Company, is part of a plan the brewery has been eyeing for a while. There was a desire to expand in a meaningful way, while still staying true to the brewing ethos that has guided Westbound and Down since it opened in 2015. We'll talk business and the growth projections, and how Aspen's 7,000 barrel capacity, and Capitol Creek Brewery's brewpub will blend with the existing infrastructure. But we're also going to talk about IPA, barrel-aged beer, and how the brewery wants to be great at all that it does. That goal squares with Gardner's background. A fairly common scene: grocery and food market patrons judiciously select their produce from pristine displays. And what happens to the fruit that isn't selected? The produce with a slight blemish or a unique shape. More often than not, it ends up as food waste in a landfill, which is both harmful to the environment and wasteful. One effort to combat this? Beer. Atlas Brew Works of DC has partnered with Food Rescue US-DC to brew a beer using rescued stone fruit from different markets. Daniel Vilarrubi, Director of Brewing Operations joins the show to describe the process. He also talks about partnering with RavenHook Bakehouse to use their leftover bread in brews. Colleen Gillespie also returns to the show as she is now the Site Coordinator for Food Rescue US-DC. She describes different ways markets, restaurants, hotels, and other food production sites can help combat food waste. An ongoing conversation on this show is how breweries are stewards of the community, and this is a prime example. Cal is the Director of Brewing Operations at Windmills craftworks in Texas, USA, and Bangalore, India. Cal discovered his love for craft beer while working at Central Market, a specialty chain of grocery stores. He started homebrewing in the early 2000s, and over the course of years, Cal grew from an apprentice brewer to a full-time brewer developing a deep sense of understanding of traditional and modern brewing techniques and beer styles associated with them.
