For a brand with a diminutive name, Small Town Cultures has big ambitions. Based in upstate New York, Small Town Cultures was founded by entrepreneur Cori Deans in 2017. The company uses regional ingredients to make fermented foods that contain no vinegar nor added sugar. Packaged in clear glass jars with minimalist labels designed to showcase the vegetables' natural color and crispness, Small Town Cultures sells a variety of probiotic-rich products, including its Red Onions, Turmeric Kimchi and Traditional Sauerkraut. The brand is distributed nationally at a variety of natural, conventional and independent retail chains, including Whole Foods, Price Chopper, Earth Fare and Central Market. Cori, who created the brand after struggling with a personal illness and later realizing the health benefits of fermented foods, has sought to build Small Town Cultures as a company that can expand the appeal and accessibility of gut-healthy products among consumers across the country. In this episode, Cori discusses how her passion for probiotics led to the development of Small Town Cultures and how she sought to create a brand that stood out from both legacy and upstart players. How do you convince investors to bet over $100 million on your innovative beverage company? If you're Matt Roberts, you start by making them a great cup of coffee. Matt is the founder of Cometeer Coffee, which markets innovative frozen coffee capsules crafted using premium coffee beans sourced from leading specialty roasters. The single-serve capsules can be used to make hot or cold coffee, and are produced using a proprietary process in which fresh beans are ground, brewed and flash-frozen to preserve flavors and aromas.  Launched in 2015, Cometeer was developed in partnership with coffee industry legend George Howell, who believes that the brand "will do for coffee what the bottle did for wine." He's not alone in his lofty expectations for the Massachusetts-based company, which has raised venture capital funding from coffee and tech heavyweights, including the founder of Keurig Green Mountain, the former president of Nespresso and lead investors in Blue Bottle Coffee, among others. Cometeer has built a thriving direct-to-consumer business and is gradually expanding distribution to brick-and-mortar retailers. The brand is currently available in over 500 stores nationwide including Sprouts, Central Market, New Season, and Gelson's. In the following interview, I spoke with Matt about how he identified the opportunity to disrupt the instant coffee category by delivering a high quality drinking experience, how Cometeer has crafted an effective consumer education strategy and how his constant desire to learn more has helped him become a better leader. It has been quite some time since our last visit, so we invited a friend of ours who is from Costa Rica to share an itinerary that anyone can follow to experience their own Pura Vida in this beautiful Central American country. You'll find charming colonial touches alongside a modern vibe. Wander through places like Barrio Amón, dive into the bustling Central Market, and savor our diverse cuisine. It's not just a city; it's a cultural hub, a starting point for adventures, and a piece of our Costa Rican life. Morning: Arrive in San Jose. International Airport Juan Santa María (SJO) Afternoon: Visit the National Museum or the Pre-Columbian Gold Museum. Explore the historic neighborhoods of Barrio Amón and Barrio Escalante. Evening: Have dinner at a local restaurant in Barrio Escalante, known for its vibrant culinary scene. Day 2 & 3: Arenal Volcano Drive time from San José to La Fortuna: 3.5 hrs approx Arenal Volcano is a big, impressive volcano. You can hike around it, soak in hot springs, and see a cool lake nearby. Evening: Stay in a hotel with a view of Arenal Volcano El Silencio del Campo Arenal Kyoro Tabacon Where to Eat & What to Eat Visit the La Fortuna down town, many good restaurants and local cousine La Parrilla de Maria Bonita Chocolate Fusion Café Day 4 & 5: Guanacaste - Playa Conchal Drive time from Arenal to Conchal: 4.5 hrs approx What makes it special is its unique sand – it's not the typical sand, its made up of tiny, crushed shells. The water is clear and calm, perfect for swimming or just relaxing by the shore. It's a serene spot with a tropical vibe, surrounded by greenery. Great place to unwind and enjoy the sun and sea. Morning: Head to Playa Conchal. Relax on the beach or take part in water activities. Afternoon: Go have lunch at a local restaurant and enjoy some good ceviche, fried fish, patacones, or any seafood Opt to take a boat tour to see the local marine life. Evening: Enjoy a farewell dinner at a beachside restaurant. You can stay at a hotel or an Airbnb depending on your preference Food Recommendations: Casado: A traditional dish with rice, black beans, plantains, salad, and a protein (chicken, fish, or beef). Gallo Pinto: A popular breakfast dish consisting of rice and beans, it usually comes with different sides like fried plantains, fresh cheese, bread and eggs. Ceviche: Fresh seafood marinated in citrus juices. Chifrijo: a mix of refried beans, rice, pico de gallo, fried pork rinds and avocado. Taxes and Tips are included in the check but locals will appreciate any tips Accommodations: San Jose: Consider staying in a boutique hotel in Barrio Amón, a Hotel closed to La Sabana park or even Airbnbs, there are plenty of cute and modern Airbnbs to choose from. Arenal: Opt for a hotel with a volcano view. Guanacaste: Pick a beach resort with spa for relaxation or a local Airbnb Travel Logistics / Transportation: Fly to International Airport Juan Santa María (SJO) Rent a car in San José and return it in Liberia: Fly back from Daniel Oduber Quirós International Airport (LIR) Some highways will have tolls; you can pay with a credit card on some of them, but it's also advisable to have some cash with you. $30 should be enough for tolls Waze is the more accurate GPS app in Costa Rica Tips Climate: Costa Rica has a tropical climate, and temperatures can vary based on the region and elevation. In general terms temperature usually stays between 60°F and 80°F in the city. Central Valley (San Jose): Daytime temperatures typically range from 70°F to 80°F (21°C to 27°C). Evenings: temperatures ranging from 50°F to 60°F (10°C to 16°C). Coastal Areas (Guanacaste, Puntarenas, Limón): Daytime: range from 80°F to 95°F (27°C to 35°C). Evenings: temperatures around 70°F to 75°F (21°C to 24°C). Arenal and Monteverde: Due to higher elevations, temperatures are cooler in these regions. Daytime: can range from 65°F to 80°F (18°C to 27°C). Evenings: ranging from 50°F to 65°F (10°C to 18°C). Caribbean Coast: The Caribbean side tends to be humid and experiences more rainfall. Daytime: can range from 75°F to 90°F (24°C to 32°C). Evenings: temperatures around 70°F to 75°F (21°C to 24°C). If you plan to visit the Caribbean side of Costa Rica, September and October are considered the best weather months. During this time, there is typically less rainfall, allowing for more enjoyable exploration of the region. Costa Rica's summer, considered the dry season, occurs from December to April. This period is ideal for exploring the country's diverse landscapes and outdoor activities. Rainy Sesaon goes from May to October. Showers are common in the afternoons, but mornings are often clear. This season offers lush greenery and fewer crowds. Currency: The official currency is the Costa Rican Colón (CRC), but U.S. dollars are widely accepted. However, it's advisable to have some local currency for smaller establishments and markets. Language: The official language is Spanish, but many Costa Ricans in tourist areas speak English. Learning a few basic Spanish phrases can enhance your travel experience. Health and Safety: Costa Rica has excellent healthcare facilities, but it's advisable to have travel insurance that covers medical expenses. Tap water is generally safe to drink. Transportation: Renting a car can be a convenient way to explore, especially if you plan to visit multiple destinations. Roads can be winding, so be prepared for some longer travel times. Wildlife and Nature: Costa Rica is known for its biodiversity. Respect the wildlife and follow guidelines to observe animals in their natural habitats without causing harm. Pack Accordingly: Pack lightweight, breathable clothing, especially if visiting during the dry season. Don't forget essentials like sunscreen, insect repellent, a rain jacket, and comfortable walking shoes. Local Cuisine: Try local dishes like casado, gallo pinto, and ceviche. Embrace the diverse culinary scene, and don't hesitate to explore local markets for authentic flavors. Culture: Costa Ricans are known for their friendly and laid-back nature. Embrace the "pura vida" lifestyle and be respectful of local customs and traditions. Other Places to Consider Limón: Make sure you enjoy a delicious Rice & Beans, Tamara's is my favorite place but Lidia's Place and La Nena are excellent options as well. Cahuita: Drive time from San Jose: 4.5 hrs approx Renowned for its white-sand beaches and Cahuita National Park. Afro-Caribbean influence, vibrant music, and reggae rhythms. Excellent for snorkeling and diving with colorful coral reefs. Manzanillo: Drive time from San Jose: 5 hrs approx Pristine beaches and lush rainforest surroundings. Home to the Gandoca-Manzanillo Wildlife Refuge for biodiversity. Reflects Afro-Caribbean culture, offering an authentic and tranquil escape. Poás Volcano: is located within Poás Volcano National Park, one of the most visited national parks in Costa Rica. It is conveniently located about 1.5 hours northwest of San Jose, making it a popular day trip destination. Poás is an active stratovolcano with one of the largest volcanic craters globally, featuring a sulfuric, greenish-blue lake at the bottom. The park offers stunning panoramic views of the Central Valley and the surrounding landscapes. The park is home to diverse flora and fauna, including the endemic Poas Magnolia and numerous bird species. Irazú Volcano: located in the Irazú Volcano National Park, approximately 32 kilometers (20 miles) northeast of San Jose. It is easily accessible by car, and the drive to the summit offers breathtaking scenery. Standing at 3,432 meters (11,260 feet), Irazú is the highest volcano in Costa Rica and the highest point in the Central Mountain Range. The volcano has several craters, with the main one, Diego de la Haya, containing a stunning greenish-blue lake. The terrain surrounding Irazú is characterized by volcanic ash, giving it an otherworldly appearance. On clear days, you can see both the Pacific and Atlantic Oceans from the summit. Otto G. Borsich II has been working in kitchens since a teenager growing up in Ohio. Enlisting in the Navy he cooked on the USS Patrick Henry, a nuclear submarine. His formal training was through an apprenticeship at the Pierre Hotel in NYC. While in New York he was the personal chef to Leona Helmsley.   His impressive career includes, Le Bernadin, Charlie Trotters, the Bellagio, the Atlantis and Mardan Palace in Turkey. He also served as a Chef Instructor at the Culinary Institute of America. He was the Executive Chef of Central Market, a luxurious gourmet store in Texas.     He was the catalyst behind Childhood Hunger Day in Washington, DC. Organizing chefs from across America who converged on Capitol Hill for a 3-day symposium on #hunger and #poverty legislation with members of the U.S. House and Senate. He was awarded a presidential medallion from the American Culinary Federation for his involvement with hunger issues. His telegenic persona and skill set landed him as a contestant on Top Chef and Supermarket Stakeout.   Possessing a Servants Heart, he is involved in prison ministry providing hope to the forgotten. A self-professed Culinary Missionary. Travel, adventure, and spreading the gospel of food are the core of his spirit. Having trekked to 30 countries on 5 continents, often feeding the neediest of the needy, his personal goal is to visit 100 countries before departing to the definitive destination.   His memoir cookbook, A Chef is Born achieved best seller status and received a reader's choice Christian Literary Award in the testimonial category. A Chef is Born is an inspirational coming of age tale during the sixties and seventies in the Heartland. 'We haven't changed the way that we do it': MìLà co-founder Jennifer Liao on transforming from a restaurant to a frozen food brand

For frozen food startups, direct-to-consumer is a difficult channel to make work. But for MìLà, which makes food products like Chinese soup dumplings and noodles, being able to ship directly to customers is a core part of its business strategy. "DTC is very important to us because we do have a direct connection to our customers," said Jennifer Liao, co-founder and president of MìLà. She joined this week's Modern Retail Podcast to talk about the brand's growth. MìLà began as a Chinese food restaurant but transformed into an online food business when the pandemic first began. Using a Google Form and messaging apps like WeChat, in 2020 Liao and her husband would take soup dumpling orders and locally deliver them throughout Washington. But the dumplings became more and more popular, and so the couple decided to expand its domain. First, it started shipping to more areas. Then, the company brought on a 3PL to ship frozen dumplings across the country. Today, MìLà has expanded its facilities, employs over 100 people and has grown its product line beyond just dumplings. It's also expanded sales channels with a recent launch in a Bay Area Costco with plans to sell in Central Market in Texas and Wegman's on the East Coast. The company has also caught the eyes of celebrities -- actor Simu Liu recently joined MìLà as chief content officer. Even with the growth, Liao said the brand has remained consistent with its recipe. "We haven't changed the quality of the ingredients," she said. "We haven't changed the way that we do it, but we have obviously scaled much more efficiently." But figuring that out comes with growing pains. For example, when MìLà first began shipping nationwide, it offered a "melt-free guarantee." That is, the dumplings were supposed to arrive at people's doorsteps still in their frozen state. But the brand ran into issues in 2020 with supply chains backed up and deliveries bottlenecked. "We had actually about 20% failure rate for our soup dumplings, where they would arrive melted," Liao said. After some trial and error, as well as tweaking its fulfillment strategy, MìLà was able to overcome this issue. And even though DTC presents issues like this -- Liao is insistent that the company will continue to use it as a sales channel. While grocers are increasingly interested -- and the it's easier to ship frozen food to grocery aisles than it is to individual customers -- the brand has a direct line with its biggest fans, and that's helped MìLà grow. "I don't think we would stop DTC," Liao said. "I think we would try to figure out what is the right ratio of distribution."

Ceglio is the co-founder and CEO of Los Angeles-based Chubby Snacks, which markets nut and seed butter and jelly sandwiches that the company describes as “cloud-shaped.” The individually wrapped sandwiches, which are typically sold frozen, are made with peanut, sunflower or almond butter and strawberry or grape jam, with each sandwich containing 8-9 grams of protein, 6-7 grams of fiber and only 2 grams of sugar, depending on variety. Launched as a direct-to-consumer brand in 2020, Chubby Snacks is distributed at several natural and regional retail chains, including Whole Foods, Central Market, Jimbo's and Gelson's and recently entered c-store chain Kum and Go. The company has raised approximately $5 million over the past two-and-a-half years from an investor pool that includes The Angel Group founder Adam Spriggs, actor Patrick Schwarzenegger and Villam Ventures, the family office of RXBar's cofounder Jared Smith. In this episode, Ceglio spoke about his initial vision for Chubby Snacks, the duality of building a brand that is inextricably aligned with its primary competitor, why he strives to be an expert in everything related to the production and sale of Chubby Snacks, and why he believes that entrepreneurship shouldn't necessarily be viewed as a fun job. We welcome the incredible Chef Junior Borges from the first modern Brazilian restaurant Meridian in Dallas. It was the first in the country at the time of their opening. We learn all about his rise to fame with lots of really hard, hard work. His journey started in New York 6 weeks after 9/11 at Sounds Of Brazil "SOB". John Legend played there weekly. He then moved to the famous unique Diner Restaurant in Brooklyn New York. When the New York Times wrote about the restaurant it changed the Brooklyn Dining Scene. Central Market hired him and flew him all over the country to do cooking classes. While in Austin he went to eat at Uchi and when the owners found out he was there they hired him on the spot and he started Uchi in Dallas which was everyone's favorite sushi restaurant. From there he went to FT 33 and then managing the Jewel Hotel. Today he is proud to be the executive Chef at Meridian and he praises his amazing team for the high accolades the restaurant has had from the start. Chef Junior is hoping that the Michelin Guide will come to Texas and honor the Meridian with a Michelin Star. We talk about the heated energy in the kitchen with some Chef's going unhinged.
