 Zack Kaiser (Absolem Cider), Parick Chavanelle (Allagash), Larry Westler (Apres) sit down with Jimmy Carbone to talk Ciders from Maine, fermentation and how they all came to love the process.Zack is a Cidermaker, owner, and co-founder of Absolem Cider Company. In love with the craft, art, and science of fermentation. This passion developed through experiences at Neshaminy Creek Brewing, Millstone Cellars, Diamondback Brewing, and Perennial Cider Bar. Currently searching for tasty apples, grapes, and fruits. Patrick Chavanelle has been an employee at Allagash Brewing Company in Portland, Maine since 2011. He's currently the Research and Development Manager, responsible for coordinating new beer development, analyzing raw materials, and running the brewery's cider and wine program. He sits on the board of the Hop Quality Group where he is thoroughly involved in their public hop breeding efforts. Patrick is currently working towards his Master of Science in Brewing and Practice through the University of Nottingham, as well as the Winemaking Certification program through the University of California, Davis.Larry Westler went from apple enthusiast to photo editor to lead cider maker at Apres, and has jumped into cider making feet first in the last few years. Originally from NYC, the move to Portland eventually led to a career change as well, turning a passionate hobby into selfies with thousands of pounds of apples from Maine orchards, destined to be fermented. After initially bartending at Apres, he transitioned to becoming a member of the production team, and now runs the cider program. He strives to keep a diversified portfolio of cider that showcases modern and traditional methods while keeping the focus on Maine-grown apples and fruit in general.

Allagash Brewing will celebrate its 30th anniversary this summer, and founder Rob Tod knows where he'll be and what he'll be drinking on the brewery's birthday, July 1 – an Allagash White at the Great Lost Bear, the taphouse that served the first pint of White in Portland, Maine.   “I remember it like it was yesterday. That was our very first draftline,” Tod tells Brewbound managing editor Jess Infante on the latest episode of the Brewbound Podcast. “I shipped eight kegs of Allagash White to Nappi Distributors on June 29, and July 1 I worked at the brewery all day and my plan was to head down to the Bear where I knew it was going on tap at 5 o'clock, and just hang out for a few hours and having a bunch of beers.   “I thought, my work's going to be done. I've spent a year building the brewery. I've written this recipe, I've brewed the beer. I'm kind of all done,” he continued.   Tod had a pint with the Bear's owners and was happy with it. He had a second pint and a realization hit him: “I've got to get back to work.”   “I got in my car and I drove right back to the brewery and kept working on whatever I was working on at the time just continuing to build and piece the brewery together,” Tod said. “I've always felt like the work isn't done.”   In the conversation, Tod Tod discusses growing Allagash into the 15th largest Brewers Association-defined craft brewery by volume. He also explains what Allagash is looking for in distributor partners, how much capacity his brewery has left for expansion and why the brewery pulled back in the early 2000s.   “We've really optimized how we can support a market, whether it's a really close local market like Boston or Minnesota, Colorado or even Los Angeles,” Tod explained. “We really do feel like we've got a strong, competitive go-to-market plan and that we can do a really solid, optimized job supporting our distributor partners.”   Tod taps into Allagash's innovation approach that checks the boxes of “balanced, drinkability, complexity and authenticity” and how the launches of a lager, hazy IPA and variety pack feed into those pillars.    Plus, the Brewbound team recaps the latest headlines and plays Another Round or Tabbing Out on Minute Maid Spiked's foray into lemonade, pink and otherwise.

He is the Chair of the Brewers Association's Technical Committee, a former board member of the Master Brewers Association of the Americas-New England as well as the Maine Brewers' Guild—and is the recipient of the 2016 Russell Schehrer Award for Innovation in Craft Brewing. Craft Brew News 03/27/20(Courtesy of www.Brewbound.com)Crowler Cans Out of Stock until April as Beer Industry Pivots to To-Go SalesAs draft beer has almost entirely stopped flowing in the U.S. due to on-premise shutdowns caused by efforts to stop the spread of the novel coronavirus disease COVID-19, craft brewers are turning to crowlers — 32 oz. cans filled and sealed on demand — to sell the beer left in their kegs before it oxidizes.The problem is that the only supplier of crowlers, Ball Corporation, is entirely out of stock of crowlers until April, American Canning co-founder and CEO David Racino said.Ball manufactures crowlers quarterly and the unprecedented shutdown of all on-premise consumption in the U.S. could not have been forecasted.Ball Corporation Increases Crowler Production to Meet Demand; Growler Sales SurgeBall Corporation has added production of 32 oz. crowler cans and expects to have a supply ready to hit the market in two days.The company, which is the nation’s sole producer of 32 oz. crowler cans, increased the size of its planned second-quarter run and is working to expedite shipments when possible.As states have forced bars, restaurants and breweries to close for on-premise service during the COVID-19 pandemic, craft breweries whose taprooms are their main source of revenue have turned to to-go sales of cans, growlers and crowlers to stay afloat. However, the shortage of crowler cans, which Ball is the only maker of in the nation, has hampered those efforts.Meanwhile, sales of glass growlers from wholesaler Glass and Growlers “are cranking,” chief operating officer William Kerr said.The Las Vegas, Nevada-based company has received orders from as far away as Europe and Australia and domestic orders are coming in from clients ranging in size from small craft breweries to national craft-centric chain Yard House, Kerr said.“Growler sales are going through the roof,” he said. “We’re on our second truckload this week.”Allagash Donates Personal Protective Equipment to HospitalPortland, Maine-based Allagash Brewing tweeted that its staff discovered extra safety masks, which the brewery donated to the Barbara Bush Children’s Hospital at Maine Medical Center.The brewery has been delivering beer directly to consumers in the Portland area.In an Instagram post the Brewery said “Allagash on the Fly will continue to operate both curbside pickup & delivery as Portland begins a mandatory stay-at-home period. We've continued to add to our safety measures across the brewery—both for our staff's wellbeing and yours.”Beer Companies Donate to Bartenders and Restaurant StaffMolson Coors Beverage Company has announced it will donate $1 million to the United States Bartenders’ Guild, a nonprofit organization that supports bartenders and servers.Other brewers making similar donations include Boston Beer Company, which donated $100,000 to the Restaurant Strong Fund, a fund it created for Massachusetts service industry employees with local philanthropy the Greg Hill Foundation. Boston Beer will also match donations up to another $100,000 through March 31.Constellation Brands, parent company of Mexican import brands Corona, Modelo and Pacifico, which has pledged $1 million to the National Restaurant Association Educational Foundation, $500,000 to the U.S. Bartenders’ Guild and $250,000 to first responders.New Belgium Brewing established the New Belgium Brewing Bar & Restaurant Relief Fund and donated an initial $50,000 with a commitment to match donations up to another $50,000. As the Drinking Partners start the new year with a call for feedback as they head into year 6, they also institute some new rules of their own, like warning their guests of the “dangerous 9” they are sipping from Allagash Brewing. After coming up with a creative name for such a strong beer, Ed and Day introduce Keven, Jesse, and Ben from Los Vampiros Amarillos, a Pittsburgh-based rock band with a blues-infused sound who talk about the band’s equally-creative name, one that they adopted after their original name no longer worked (listen in for why). Their advice for new bands: Decide what you don’t want to sound like, which all three discuss as they share how they blended their individual musical sounds into a unified one. Another important tip centers on when and why to say no to gigs. The similarities between stand-up comedy and live music are compared and contrasted before the interview wraps up with more talk about beer and potatoes. Everyday is IPA day. Even though there's an actual "IPA Day" on the calendar (sometime in August maybe?) it really occurs every day of the week. Saison needed its own day to bask in the sunlight and be appreciated for its delicate intricacies, and Allagash Brewing created such a day. We celebrated Saison Day with our very good friends at Tonewood brewing. Ryan Egan from Tonewood sat in, Jared Ruocco from Allagash stopped by to explain Saison Day, we figured out where our lost microphone cables escaped to, and Richard explains his latest employment situation. We’ve got what I consider a bucket-list interview today. In the past, I’ve been thrilled to sit down with people like Sam Calagione, Lauren Limbach (formerly Salazar), Jim Koch, Garrett Oliver, Bill Covaleski, and others who were so fundamental to the world of beer that we enjoy now with all its diversity, innovation, and re-invention of the model. These are people who made it all happen by practically rubbing two sticks together. And because of that, almost anyone willing to put in the work has the opportunity to follow in their footsteps.  But of course, for breweries like Allagash, their story isn’t all about the past. Allagash, one of my north star breweries, is a company still making big moves and leading the way on things like regional agriculture, wild ales and, more recently, within the Brewers Association.  Founder Rob Tod started Allagash in 1995 with a Belgian White Ale. But these days, his most important role is arguably his post at the Brewers Association as he helps them welcome in a new generation of brewers, sometimes referred to as the "long tail." Alongside his brewmaster, Jason Perkins, he’s also helping lead conversations on resourcing and quality that are critical to craft beer, as a niche, not missing a step on its longterm growth trajectory.  And one of the things I admire about Allagash the most is its ability to focus on what’s possible in craft brewing rather than complaining about the things that have always held it back. Beer is a competitive industry with a lot of different kind of players, but for Allagash’s part, it seems as though there aren’t enough hours in the day to devote to all the positive, impactful things that a brewery connected to its community can accomplish. And that kind of attitude comes through in every person I’ve ever met from the company. But especially this guy.
