Wine: Tiki Single Vineyard Pinot Noir Rosé 2024, North Canterbury RRP from $26.00 A distinctive colour with hues of orange and red that leads to a bouquet of ripeness and freshness, complexity and style. A sense of site with stone and mineral then red tea and roses, raspberry along with some tropical fruit ideas. A satin touch with a backbone of acidity and red berry fruit flavours. The wine has no tannins yet plenty of mouthfeel and crunch. Well made with best drinking from 2025 through 2027. The season: 2024 was an excellent season for the vineyard overall in Central Otago. It was the only region in NZ with an above average yield, all the winemakers I spoke to were very happy, just hoping the sell as much wine as possible. The food: Rosé works remarkably well as a complement to most fare, some specific dishes that suit rosé well include: cheese boards that include lots of fruit like figs and fresh apricots, strawberries and plum sections; Minestrone soup; Poached flaky white fish dressed with butter and capers, or Christmas Day champagne ham. 450ml double cream 75ml pink grapefruit juice 115g castor sugar Place all the ingredients in a pan and bring to a simmer for about a minute or until the sugar has dissolved. Cool and pour into 4 glasses and set in the fridge for about 4 hours.Poached rhubarb More than you'll need for the recipe but a good way to preserve rhubarb 8 stalks rhubarb, cut into 2cm pieces 1 litre local apple juice 500ml water 100ml castor sugar 2 tablespoons grenadine Splash sloe gin ( optional)Place the water and sugar in a large saucepan and simmer until sugar has dissolved. Add the apple juice and bring to a simmer. Add the grenadine and gin and then the rhubarb. Cover the surface with parchment paper and lower the heat to as little as possible. Cook for about 3 minutes then turn off and allow the rhubarb to cool in the liquor. Place in a sterilized kilner jar and seal. Store in the fridge and use as necessary. The juice can be added to sparkling water, wine or to gin and tonic. Wafers 125g icing sugar 50g butter 50ml pink grapefruit juice 40g plain flour 10g cocoa powder Set the oven to 180oc and line a baking tray with parchment paper. Place the sugar, butter and juice in a pan and cook until melted and smooth. Mix in the flour and cocoa powder. Spread thinly over the baking tray and bake for about 10 minutes or until crisp. Cool and break into chards.Place some rhubarb on top of the posset and garnish with some wafer chards.

Well, it's no mystery to you since it's there in the title, but it was a surprise to Heather when they sat down to record. It's quince -- a fruit from the rose family. Quince can be quite astringent and not good to eat raw, so poaching is a great way to prepare the fruit before you add it to your recipe - in this case, a tart with apples and a delightful frangipane (almond paste) layer!This tart recipe comes from Samin Nosrat, one of our favourite celebrity chefs. The quince is poached in wine for 2.5 hours. The pie crust is a simple butter pastry dough, rolled and chilled in the pan before you bake. First the frangipane goes down, then the quince and apple slices in a nice pattern. Erin sprinkled hers with a little rose sugar for extra sparkle. This. Is. Delicious. If quince sounds like a bit too much work, sub in other fruit, like plums, pears or apricots with the apples. Just don't skip the frangipane! A simple poaching liquid, the French court bouillon, imparts flavor to cod fillets that are then topped with a Mediterranean-style fresh tomato sauce. You can make the sauce a day in advance if you like. It is also very appealing on roasted pork loin or grilled shrimp.
Poaching guarantees moist fish, and here tomatoes, fennel seeds, and white wine provide subtle flavor. If your fish market does not carry halibut fillets, use halibut steaks, cut 1 inch thick. While we like these with Pickled Vegetable Relish because it makes such a crisp counterpoint to the halibut, an herbed or spicy mayonnaise works nicely, too. A grain or green salad as an accompaniment, and there is the menu.

We picked up the habit of tortilla in Barcelona, then worked on it in New York. The open-faced omelet, which is what tortilla means in Spain, can be served either at room temperature, as we do at Mangia, or hot, which you can do at home. Just bring the skillet straight from the broiler to the table, with the ciabatta in a basket alongside. And if ciabatta is not available, substitute a large baguette.
Poaching chicken is simple and making the sauce is, too, because it is nothing more than mayonnaise, with all kinds of different Cajun spices added. We've even used whole-wheat sandwich bread!

250ml double cream 50g soft brown sugar 1 teaspoon vanilla 1 egg 100g dark chocolate chopped Simmer the cream, sugar and vanilla until the sugar has dissolved. Pour over the dark chocolate and stir until melted. Cool for 5 minutes and whisk in the egg. Pour into 4 ramekins or glasses and chill until set – about 6 hours.Poached plums 4 plums, halved and stoned 50g castor sugar 100ml water Pinch cinnamon 25ml rum – optional Place the sugar and water in a pan and cook until sugar has dissolved. Add the cinnamon and rum and place the plums in. Cover with parchment and cook gently for 3 minutes. Turn off the heat and allow to cool in the liquid. Peel the plums and cut each half in half. Muscovado cream 200ml double cream 1 teaspoon vanilla extract 25g dark muscovado sugar Whip the cream and fold in the sugar and vanilla. Candied hazelnuts 50g skinned hazelnuts 75g castor sugar 50ml water Place the sugar and water in a pan and cook until the mixture is thick and syrupy but not starting to go brown. Add the hazelnuts and stir. A sugar coating will form on the nuts. Place on a sheet of parchment paper to cool. To assemble – Place a spoonful of the cream on top of the chocolate pot and arrange the plums around. Scatter over some hazelnuts and serve.
Brown sugar toasted fruit loaf4 thick slices fruit loaf or barmbrack 75g soft butter 50g soft brown sugar ½ teaspoon vanilla extract ¼ teaspoon mixed spiceSet oven to 180°c and line a baking tray with parchment paper. Mix the butter, sugar, vanilla and spice to a smooth paste. Spread over both sides of the loaf and place in oven for 20 minutes, turning over half way.Blackberry cream150g blackberries 75g castor sugar 200g mascarpone 250ml double cream Cook the blackberries with the sugar for 5 minutes then blend to a smooth puree and pass through a sieve to remove seeds. Cool.Whisk into the mascarpone and cream until thick. Poached apples 2 red eating apples 35g castor sugar 100ml water Juice 1 lemonPlace the sugar, water and lemon in a small pan and simmer until sugar has dissolved. Quarter, peel and core apples. Slice thinly and place in hot liquid. Cook for 5 minutes then cool.Spoon some of the blackberry cream onto hot toast and add some poached apples and a few blackberries to garnish.
