Matt Day is the head winemaker at Klein Constantia., the legendary South African estate founded in 1685, that once produced the sweet wine requested by Napoleon on his deathbed.Situated in beautiful Constantia, just south of Cape Town, the Constantia estate was founded by original Cape Governor Simon van der Stel, shortly after the colony's genesis. It was later split into "Groot" (big) and "Klein" (small). The Sweet Wine of Constantia was favored by aristocrats in 17th and 18th century Europe, before falling into dormancy for a long period characterized by oidium, phylloxera, and quotas under the regulatory system. In the 1980s, Klein Constantia was revitalized, and since then, has undergone a meteoric rise under the guidance of Bordeaux legends Hubert de Bouard (Chateau Angelus) and Bruno Prats (formerly Cos d'Estournel). Today, the estate produces a revived version of sweet wine, renamed the Vin de Constance, and specializes in terroir-driven Sauvignon Blanc, reminiscent of the great wines of the Loire. In addition, Matt has assumed the helm of sister Anwilka estate to produce exceptional red wine to complement Constantia's whites. After a few conversations, it became clear that M.C. Ice has been very confused about the differences between classification systems in France. Isn't Bordeaux the same as Burgundy? What’s the terminology -- it's it Premier Cru? Grand Cru? What exactly is each place ranking? And why do they do it at all? Ep 369: The Greats -Sauternes and Barsac

Of the greatest sweet wines of the world, those of Bordeaux – Sauternes and Barsac – may be the most famed. These small regions (covering just 2,217 ha/5,478 acres) and their 132 producers, make some of the world's most prestigious, long-lived and expensive sweet wines.   Pascal MOULIN, CC BY-SA 4.0, via Wikimedia Commons Located just 40 miles/65 km south of Bordeaux city, along the Garonne and Ciron Rivers, the AOC Sauternes includes the communes of Barsac, Sauternes, Bommes, Fargues, and Preignac. These areas are undulating, with a combination of soils and some elevations up to 240 feet. The Barsac AOC, which can also use Sauternes AOC, stands alone as the commune with unique character – it is distinguished by its limestone and sandy soils, which create lighter, more minerally and elegant styles of this beautiful wine. This area is flatter, but the Barsac has limestone soils, which make the wines taste as they do.   Both Sauternes and Barsac are made from a combination of three main grapes  -Sémillon for structure, smoothness, and richness, Sauvignon Blanc for herbal aromatics and acidity, and a small proportion of Muscadelle, also for aroma. The key to Sauternes, the thing that makes it stand apart from other sweet wines is the unique climate conditions that occur here regularly in the autumn most harvests. During Autumn mornings in Sauternes, the cooler Ciron River meets the warmer Garonne and condensation or mist forms, covering certain vineyards. These moist areas could be subject to grey rot (and sometimes are) but if those moist conditions are followed by drier, warmer afternoons, instead of grey rot, Botrytis cinerea forms. This fungus attacks grapes, perforating their skins and allowing moisture trapped inside to evaporate when this happens over a number of weeks, the result is a complex wine, that has aromas and flavors like apricot, mango, tropical fruit, honeycomb/beeswax, honeysuckle, hazelnut, almond, flowers, peaches, nutty, pears, orange, (new oak: vanilla, butterscotch), and has sweetness with strong acidity and a long finish. The best of these can age up to 50 years.   In terms of pairing, there are so many ideas that many don’t consider when thinking of Sauternes. Although foie gras is classic, the wine goes well with roasted chicken with thyme and herbs, oysters and seafood dishes, especially lobster and crab, spicy food with some sweetness (especially sweet and sour Chinese dishes, Indian dishes with heat and sweet, and Thai curries). Blue cheese and other salty cheeses are great, and Sauternes or Barsac should definitely be on the table for the Thanksgiving turkey – adding moisture, acidity, and sweetness to the mix. Traditionally, Sauternes and Barsac are also served as aperitifs, cold and as a welcome to guests as they come in (similar to Champagne). Sauternes was part of the 1855 Classification of Bordeaux wines – they were the only whites ranked. There were 27 Cru Classes, 11 First Growths, 15 Second Growths, and Château d’ Yquem  at the top of the ranking – a Premier Cru Supérieur.   Among these topics, we discuss the business of Sauternes, the decline in planting and sales, and do an overview of Chåteau d’Yquem, the most famed sweet wine in the world. De l'installation du préfet et poète Ausone au 4ème siècle après J.C. au classement de 1855 sous l'impulsion de Napoléon III, Bordeaux est probablement la région viticole plus connue dans le monde (avec la Bourgogne).  Subdivisé en trois sous-régions (la rive gauche, la rive droite et l'Entre-Deux Mers) par des frontières naturelles (la Gironde, la Garonne et la Dordogne), ce terroir regorge d'appellations célèbres tel que les Haut-Medoc, les Sauternes, les Saint-Emilion etc… François Surget,  œnologue , caviste et producteur, nous parle aujourd'hui de la rive gauche qui abrite de très grands châteaux de renommée internationale mais aussi des vins à découvrir, de grande qualité. Eller, kanske det dyker upp lite alkoholromantik här och var i denna episod, förresten – men det är i alla fall betydligt mindre än vanligt.Edward Blom och Mats Ryd har denna gång spanskt mineralvatten i glasen. Mats avslöjar att han håller på att göra egen ginger beer, och förutom ginger ale och root beer råkar han komma in på smurfarnas favoritväxt: sarsaparill! Edward drar den svenska nykterhetsrörelsens kulturhistoria, och Mats berättar om när han var på svartklubb i något obestämt land vid Gulfen. Vi får veta vad fläskkorv, lakritspipor och elefantöl kan ha gemensamt, och Edward slår hål på myten om att EU:s glöggförbud är en myt. Plötsligt kommer de in på ämnet ”tårtor”, och av bara farten så smått på slaveriets framväxt och kopplingen till sockrets under 1800-talet framväxande popularitet.”Tänk att leva före vispgräddens tid!” suckar Mats, som även hotar Edward med att passa på att ta med sig en Château d’Yquem-flaska till någon av de närmaste poddinspelningarna.Lyssnarna bidrar med att skicka roliga exempel på skådegrönsaker och annat tallriksgarnityr som är värre än ärtskott, och avslutningsvis kommer flera annorlunda tips på hur man kan tillaga kyckling.P S Mineralvattnet som dricks i denna podd heter: Vichy Catalan. Dags för 2019 års första ”Edward Bloms smörgåsbord”-episod, vilket Mats Ryd inleder med att bjuda på ett vin från delstaten Washington i nordvästra USA vars upphov han berättar om. Han och Edward passar på att jämföra Systembolaget med en zoobutik, innan de redogör för hur de på varsitt håll firat jul och nyår. Nyårsaftonen innehöll bland annat en ankleverorgie med Château d’Yquem för Mats del, och en vegansk buffé för Edwards – som tog igen animaliebristen på en fest på trettondagsaftonen på Skara stadshotell, där han fick njuta av såväl anklever som ostron plockade från underbara isskulpturer (bildbevis: www.instagram.com/p/BsQ7y9YBM9l).Därifrån är steget inte långt till intressanta resonemang om nyårslöften och träning, vilket får Edward att tänka på den romerska devisen om ”en sund själ i en sund kropp”.Ärter och fläsk känns som en bra rätt för januari månad, och Edward berättar både om ärtsoppans historia, varför den förknippas just med torsdagar och om varför den ibland ledsagas av varm punsch. Därefter går de båda gastronomerna loss på det underbara ämnet ”dessertviner”.Apropå en fråga från en lyssnare på väg till huvudstaden räknar Mats och Edward upp sina älsklingsrestauranger i Stockholm. En ganska lång lista på krogar, barer och korvmojar, blir det! Edward gör rentav sin egen Oscarsgala och korar ett 30-tal Stockholmskrogar som vinnare i inom olika kategorier – om än med reservationen att han ändå säkert glömt några av sina favoriter. 6 janvier…., on fête les Rois! -Il porte le nom d’un roi mage et est le co-fondateur et copropriétaire de la distillerie Les Subversifs, fondée en 2011, une des premières microdistilleries au Québec. De son Argentine natale au déménagement de son entreprise dans une église de Sorel, le parcours déroutant de Fernando Balthazard. -La gastronomie chez les rois de France et d’Angleterre, avec Marc Laurendeau. On en profite pour découvrir d’où vient sa fascination pour la monarchie. -Entretien avec un homme qui fait partie de la noblesse française: le comte Alexandre de Lur Saluces. Il a longtemps dirigé le Château d’Yquem, qui produit l’un des vins de Sauternes les plus célèbres au monde.

Chris Foss is the Curriculum Manager at Plumpton Wine College for the Wine Division. He is half-French and Bordeaux-trained. Whilst in Bordeaux he managed the family vineyard in the Entre-Deux-Mers and has worked in vineyards and wineries in Sauternes (Chateau d’Yquem) and St Emilion, becoming Winemaker for the GFA Leclerc vineyard group. He moved to Plumpton College to launch the wine programmes in 1988. Chris lectures principally in vineyard establishment and management, vine protection, and sustainable viticulture and is also the manager of Plumpton’s 10-hectare vineyard and a committee member of Wine GB South-East. Chris’ principal research interests lie in climate change, disease monitoring and vineyard sustainability, he is also a member of the Life+ Adviclim research group. He has presented at conferences in France, Austria, Germany, Spain, Australia, China, New Zealand Portugal and the USA, and led the team that delivered the academic programme for the highly successful ninth International Cool Climate Wine Symposium, held in Brighton (UK) in May 2016.

Podden blir i dagarna ett år, vilket firas med gyllene Blanc de blancs-droppar! Edward Blom berättar om när han var i Uppsala och på arbetstid sabrerade champagneflaskor med sitt indiansvärd, och sedan drack upp slattarna i en paviljong tillsammans med glada Snerikes-studenter. Tillsammans med Mats Ryd hänger han sig fortsatt åt alkoholromantik, men än mer åt njutningsfyllda utläggningar om delikatesser i form av mat. En lyssnare undrar vad de tu gastronomerna tycker är mest över- respektive underskattat i matväg. Sillunch, oxfilé, kroppkakor, kåldolmar och fläskytterfilé finns bland exemplen (vad de är exempel på får ni lyssna till själva).Edward drar en anekdot om när han blev erbjuden att köpa en vägkrog och Mats berättar om vad han fick erbjudande om när han var på nattklubb i Kiruna – och så diskuterar de källkritiskt apropå ännu en lyssnarfråga både vad som var Stockholms första och vad som kan vara dess nu kvarvarande äldsta pizzeria. Eftersom en annan lyssnare efterfrågat deras respektive ”Bucket list” får vi veta vad som finns på dem. Med anledning därav introduceras den gamle litteräre hjälten deckaren Edwardo Eldfalk och hans livdryck Chateau d’Yquem, och Mats berättar om hur han drömmer om att åka på gastronomiska äventyr i spanska Galicien.Poddredaktionen har för övrigt ännu inte fått någon lyssnare att skicka en älghjärna till sig, men försöker nu istället att efterlysa pensionerade sköldpaddor och snöripor. I det sextonde smörgårdsbordsavsnittet dricker Edward Blom och Mats Ryd rosévin och mumsar på mandlar. Edward är förvisso allergisk mot de sistnämnda och får mest nöja sig med att sukta efter dem, vilket får Mats att till sist efterlysa en mandelfysiolog. De diskuterar huruvida rosévinet är på väg ut eller ej, och jämför med andra somriga trenddrycker såsom Aperol Spritz och Campari Soda.Många anekdoter blir det förstås! Mats drar seglarminnen från Medelhavet och matminnen från San Sebastián, där han en gång rentav fick acne av för hög konsumtion av anklever. Edward berättar om den dramatiska tillvaron som nybliven villaägare i förorten, där han brottas med kompostlådor och pysslar med pallkragar. Vi får veta varför det är bra att ha en bergsingenjör som granne, och hur horror vacui – ’skräcken för tomrummet’ – kan appliceras på villalivet. Edward förklarar att han inte är särskilt road av att rensa ogräs i rabatterna – eller ”plocka kvickrot ur nejlikborst”, som han uttrycker det – men däremot vill att det ska kännas som att gå omkring i en visthusbod när man rör sig i hans trädgård. Han funderar på vilket helgon man ska be till om man behöver hjälp med att montera gräsklippare, och härmar de fåglar han hört på tomten.Mats berättar om sina veteransbilsäventyr, och vi får veta vilka som är de två lyckligaste dagarna i en veteranbilsägares liv (gissa!). Eftersom en av lyssnarfrågorna handlar om calvados sjunger Edward en Lars Demianvisa – och så letar sig calvadosen in även i ett ganska komplicerat studentminne. Dessutom får vi stifta bekantskap med den litterära figuren och privatdetektiven Eduardo, som till skillnad från Edward brukar dricka slottsvinet Château d’Yquem.
