This special ingredient-focused edition of the podcast is brought to you interruption-free by the brewing-ingredient experts at BSG (https://bsgcraftbrewing.com/craft-coast-top-secret-gambrinus-ipa-malt/?utm_source=cbbpodcast&utm_medium=audio&utm_campaign=gambrinus+ipa+cbbpodcast&utm_content=malt). Today's beer drinker loves pale beer more than ever, and over the course of the past decade, brewers have been feeding this shift by releasing lighter and lighter colored IPAs that pack a similar flavor punch without the heft that specialty malts can bring. To help brewers achieve that flavor without the color, Gambrinus and BSG recently announced IPA Malt (https://bsgcraftbrewing.com/craft-coast-top-secret-gambrinus-ipa-malt/?utm_source=cbbpodcast&utm_medium=audio&utm_campaign=gambrinus+ipa+cbbpodcast&utm_content=malt), a new domestic malt designed for IPA brewers who crave that low SRM beer color but still want character in the malt that can stand up to today's big hop bills. In today's spotlight episode, Ashton Lewis (Training and Technical Support Manager for BSG (https://bsgcraftbrewing.com/craft-coast-top-secret-gambrinus-ipa-malt/?utm_source=cbbpodcast&utm_medium=audio&utm_campaign=gambrinus+ipa+cbbpodcast&utm_content=malt)), Ken Smith (Director of Operations for Gambrinus Malting (https://bsgcraftbrewing.com/craft-coast-top-secret-gambrinus-ipa-malt/?utm_source=cbbpodcast&utm_medium=audio&utm_campaign=gambrinus+ipa+cbbpodcast&utm_content=malt)), and Blake Masoner (Cofounder and Head Brewer for Craft Coast Beer & Tacos (https://craftcoast.co) in Oceanside, California), join the podcast to discuss this new malt. Over the course of the conversation, they cover it from initial brief through development and into brewing, exploring how it works, what it's capable of, and what else may be in store for brewers who try it. Along the way, they cover: the domestic malt's English-like biscuity character that contrasts with the grassiness of Continental malt agronomic and malthouse details behind the malt understanding how flavors translate from the malt into finished beer using the malt at 100 percent while achieving flavor in a low-FG beer exploring other beer styles IPA Malt (https://bsgcraftbrewing.com/craft-coast-top-secret-gambrinus-ipa-malt/?utm_source=cbbpodcast&utm_medium=audio&utm_campaign=gambrinus+ipa+cbbpodcast&utm_content=malt) may be suited for This special spotlight episode is brought to you by BSG & Gambrinus. Advent 2023 Day 10 is another lambic. Martin brought another Cantillon to the calendar. Let's hope it's a tradition he continues. Rose de Gambrinus is their famous raspberry lambic. This bottle is from 2018 but you wouldn't know it. It's a bright and fresh as any bottle released this year. Packed with huge amounts of raspberries, this is a real jaw clincher. It's intensely sour. If you have a bottle, there is a lot of life in it so you don't need to rush it. #beer #craftbeer #drinks #cantillon #lambic #gueuze #advent2023 #adventcalendar
Five years into cold IPA, the arguments still aren't settled, but one thing is certain—strategic brewers have embraced the style for the unique counterpoint it can provide to more ester-driven IPAs, and the focus on light body has struck a chord with beer drinkers who increasingly want strong hop notes in ever-paler beers. We thought it was time to revisit the subject with three brewers who are no stranger to the podcast, and who each have contributed to the evolution of the style in their own way. Sam Tierney of the Firestone Walker (https://www.firestonebeer.com) Propagator in Venice, California has helped develop some pioneering cold IPAs for the California brewery, like core brand Hopnosis. Jude La Rose of Chicago's Hop Butcher (http://www.hopbutcher.com) brews plenty of hazy IPAs, but continues to explore what hops can also do within the context of clear and light-bodied cold IPA. And Kevin Davey of McMinnville, Oregon's Heater Allen (https://heaterallen.com) and Gold Dot created the cold IPA style while at Wayfinder, but today is just starting to brew them again after focusing on lager for most of the past year. In this episode, the three brewers look at where IPA has come since those earliest days and what it looks like now, with topics that include: creating the counter-trend to hazy IPA by pushing bitterness alongside low finishing gravity finding cleaner, more “crystalline” hop expression by fermenting with lager yeast achieving additional package stability in cold IPA through lower FAN varying dry hopping temperatures and techniques managing sulfur production in cold IPA fermentations blending modern, classic, and Southern hemisphere hops in cold IPA pushing the lightest of color through ultra-pale malts and adjuncts controlling oxygenation to avoid overstimulating the lager yeast why they continue to focus on the style now And more. In this GABF Gold! episode, we dive into the saison category. First up is Jason zumBrunnen, cofounder of Denver's Ratio Beerworks (https://ratiobeerworks.com), recent gold medal winner for their King of Carrot Flowers carrot saison (and 2020 silver medal winner in American-Belgo style ale for their Dear You saison dry hopped with Citra, upon which King of Carrot Flowers is based). He dives into saison standards, like building body despite fermenting with diastaticus saison yeast, single infusion mashing in saison, before drilling down on the particulars of using carrot juice—processing, addition timing, maintaining color and haze, and even the secret ingredient that helps promote the idea of sweetness in the very dry beer. Next is Jeremy Claeys, head brewer for Charlotte's Protagonist Beer (https://protagonistbeer.com), recent gold medal winner for the Kal-El classic saison (and 2022 gold medal winner in American-Belgo style ale for the dry hopped saison Bizarro, as well as 2021 gold medal winner in Specialty Saison for Air is Beautiful). He talks through their philosophy of brewing classic styles with small twists that make traditional beers their own, building character through grain, simplified step mashing, the benefits of high temperature fermentation, blending saison yeasts, bottle conditioning, and lagering both bottled and kegged saison for a cleaner and smoother beer. Caffè sospeso literally translates to English as a ‘suspended coffee'. It's an Italian tradition whereby cafe customers pay for an extra coffee that will be put aside, for a poor person to claim at a later time. The caffè sospeso idea can be extended to other types of food, and it's seen a revival in popularity during the Covid-19 pandemic. It's believed the caffè sospeso tradition was born in Naples' historic Gambrinus café, around the start of the 20th century. Is it only the Italians who are big on solidarity then? And how do we know for sure that what we pay forward actually gets given out to a person in need? In under 3 minutes, we answer your questions! Boulder's Upslope (https://upslopebrewing.com) has been brewing Craft Lager since long before lager brewing was “cool,” and today the small brewery has built a production methodology for the longtime core offering that optimizes both quality and production efficiency. In this episode, head brewer Alex Meyer discusses the way the brewery makes their signature lager with a litany of unconventional ingredients and processes, and shares how they employ similar iconoclastic approaches with their Japanese-style rice lager, and 4-year-barrel-aged Grand Reserve. Along the way, Meyer discusses: brewing lager with standard two row malt and white wheat lager fermentation under pressure managing sulfur production in pressure fermentation cropping and repitching yeast using exogenous enzymes to facilitate rice lager fermentation with 55% flaked rice American lager hop varieties like Sterling and Contessa feeding healthy high gravity fermentations managing long-term oxidation in extended barrel aging And more. Tucked into a corner of the sprawling grounds at Pilsner Urquell in Plzeň, Czechia—the birthplace of pilsner—a new chapter in that story is developing. Now in its third year, Pivovar Proud (https://www.pivovarproud.cz/en/) is Pilsner Urquell's experimental playground—a beautifully equipped 30-hectoliter kit producing a range of both ales and lagers and other creations less easily categorized. Its head brewmaster Lenka Straková has access to Pilsner Urquell's resources—including malt from its own maltings—but she also has creative license to dabble in New World hops, various yeasts, barrel-aging, and more. In this episode, Straková tells us more about what she and her team are up to at Proud, including: how Pilsner Urquell's owner, Asahi, agreed to go along with a substantial experimental brewery focused on craft beer how Proud's own flagship pale lager, Ventill, is based on Pilsner Urquell and yet markedly its own beer her approach to diacetyl reduction in Czech lager brewing with 34/70 yeast—the same used at Gambrinus—and her trials with various new Czech hop varieties combined with traditional lager-brewing methods brewing ales and craft styles for a Czech audience, with their own spin adjusting Plzeň's famously soft water happy accidents and barrel-aged imperial brut IPAs And more.

Joining us week is Amaury “Ammo” Dastarac, a freelance illustrator based in Brussels. You've likely seen Ammo's work; he's created concert and festival posters for Neurosis, Converge, The Melvins, Chelsea Wolfe, Enslaved and Hellfest. He's also illustrated beer labels for breweries De Ranke, Cantillon and most recently Brasserie De La Mule. We discuss his style, visual and musical inspirations, how he crossed over into illustrating beer labels, embedding himself first into legendary venue Magasin 4 in Brussels, then the fabric of the Brussels beer scene. We also dedicate time to how he approaches working with the legendary lambic producer Cantillon, whose past labels are iconic and in the case of Rosé de Gambrinus, controversial.
In this weeks episode Maz and Floz delved deep into the cupboard of doom and pulled out two nicely aged bottles, Cantillion's 'Rosè de Gambrinus' from 2017 and Wild Beer Co 'Ninkasi' from 2013 (?) , and discuss the legends behind their namesakes.
Fala, pessoal! Tudo certinho?
In a follow up to Episode 18 (Going for the Gueuze) we welcome back Dan Reeve for more discussion of Belgian Lambics. In this episode we explore Lambic variants beyond gueuze, with a focus on lambics conditioned on fruit. Along the way we enjoy and describe Krieks from both Cantillon and Drie Fonteinen, as well as Cantillon's Rose de Gambrinus (featuring raspberries). We discuss the microbiology behind Lambic fermentation and Dan discusses his successes and failures at homebrewing Belgian-style sours.

What is a caffè sospeso? Thanks for asking! Caffè sospeso literally translates to English as a ‘suspended coffee’. It’s an Italian tradition whereby cafe customers pay for an extra coffee that will be put aside, for a poor person to claim at a later time. The caffè sospeso idea can be extended to other types of food, and it’s seen a revival in popularity during the Covid-19 pandemic. It’s believed the caffè sospeso tradition was born in Naples’ historic Gambrinus café, around the start of the 20th century. The idea was simple: if a person felt like they had had a lucky day, they would pay for two coffees instead of one. The second ‘suspended’ coffee would later be given to the first poor person who asked for one. And by the way, you can suspend other items too, the concept is not just limited to coffee. It could be a sandwich, bottle of water or pastry for example.Nice idea! Is it only the Italians who are big on solidarity then?A similar principle has existed in Turkish bakeries for centuries, relating to bread. A customer asks for two loaves of bread, and tells the baker the second one is askida ekmek, translating to “bread on a hanger”, or “suspended bread”. Back in Naples and Italy, the tradition slowly became less common, perhaps due to the postwar economic boom, globalisation and ever-expanding tourism. That was the case at least until 2011, when the Mayor of Naples called for a return of the tradition, by creating a dedicated day called the Giornata del caffè sospeso. This development created a buzz on social media, and the practice of ‘paying it forward’ became known in other countries. Many appreciated this show of solidarity. From then onwards, other types of businesses picked up on this in Europe, North America and Asia.So how do we know for sure that what we pay forward actually gets given out to a person in need? In under 3 minutes, we answer your questions! To listen the last episodes, you can click here: What is a leap year? What is nudge theory? What is a showrunner? Her bliver hun i 10 år. Craft Beer News – 11/30/18MillerCoors, Pabst settle lawsuit over brewing contract•MillerCoors and Pabst Brewing settled a lawsuit Wednesday in which Pabst claimed the bigger brewer lied about its ability to continue brewing Pabst's beers to put that company out of business.•"We have reached an amicable settlement in the case and are pleased to resolve all outstanding issues with Pabst," MillerCoors said in a statement. Settlement details were not disclosed.•Since 1999, Chicago-based MillerCoors has made and shipped nearly all of Pabst's beers, which include Pabst Blue Ribbon, Old Milwaukee, Lone Star and Schlitz. Pabst's lawyers argued in the company's 2016 lawsuit that MillerCoors worried that Pabst would cut into its market share and devised a plan to stop brewing for the smaller competitor. MillerCoors' attorneys called Pabst's claim a conspiracy theory and said the company was simply deciding what makes economic sense.•The agreement between MillerCoors and Pabst, which was founded in Milwaukee in 1844 but is now headquartered in Los Angeles, expires in 2020 but provides for two possible five-year extensions. The companies disagreed on how the extensions were to be negotiated: MillerCoors argued it had sole discretion to determine whether it can continue brewing for Pabst, whereas Pabst said the companies must work "in good faith" to find a solution if Pabst wanted to extend the agreement but MillerCoors lacked capacity.•However, Pabst said internal documents from MillerCoors showed the company was worried about competition from Pabst and went as far as hiring a consultant to find a way to get out of the brewing agreement.•Pabst needs 4 million to 4.5 million barrels brewed annually and claims MillerCoors is its only option. Pabst's lawsuit sought more than $400 million in damages and a court order for MillerCoors to honor its contract.•MillerCoors and Anheuser-Busch, which have the biggest U.S. market share at 24.8 percent and 41.6 percent, respectively, have been losing business to smaller independent brewers, imports, and wine and spirits in recent years, according to the Brewers Association, a U.S.-based trade group. Overall U.S. beer sales have declined, with shipments down from 213.1 million barrels in 2008 to 204.2 million in 2017, according to the association.Trillium Labor Practices, Brewing Methods QuestionedMassachusetts craft beer maker Trillium Brewing Company’s labor practices and brewing methods are under scrutiny after accusations were lodged last week by a self-described former employee in an online beer forum.According to the former employee, who used the name “Abagofit” in a Beer Advocate forum, Trillium required its retail employees to reapply for jobs that they already held prior to last month’s opening of the company’s new brewery, taproom and restaurant in Boston’s Fort Point neighborhood. The ex-worker wrote that the base compensation for employees who had worked for more than three years at the brewery was cut from $8 an hour to $5 an hour to “work the exact same job across the street.”“We apologize that this has caused any of our employees, customers or friends to doubt, in any way, the integrity of Trillium or their ongoing support of us,” the company said. “We are fortunate that we’ve assembled such a talented team and remain committed to brewing exceptional beer that we can share with our family, friends, and customers.”Since the issues were raised last week, customers have left scathing comments on social media posts advertising new release beers priced at as much as $22.20 a 4-pack. One commenter shared a photoshopped label of Trillium’s “Cutting Tiles” double IPA with the name changed to “Cutting Wages.”Staff pay wasn’t the only issue raised in the Beer Advocate forum. The former employee also accused Trillium of cutting corners in the brewing process, including pouring tequila into kegs of a beer and promoting the beer as being barrel-aged to consumers. The commenter also claimed that management instructed workers to lie to customers about the beer’s origins and later tell consumers that the tequila flavor was “brewers magic.”“They straight up dumped tequila into the kegs,” the commenter wrote. “I’m no lawyer, but I know that is illegal.”Trillium has yet to address those allegations.People Moves: Ex-New Belgium Brewmaster Joins Melvin’s BoardMelvin Brewing Adds Peter Bouckaert to BoardFormer New Belgium brewmaster Peter Bouckaert has joined Wyoming-based Melvin Brewing’s board of directors, according to Forbes.Bouckaert — who left New Belgium after more than two decades to join Purpose Brewing and Cellars last May — told the outlet that he approached Melvin founder Jeremy Tofte at the 2018 Great American Beer Festival to discuss the company’s growth and to learn about its response to allegations that an employee had groped a server at another brewery in Bellingham, Washington, earlier this year. That employee — who was suspended, sent to sexual harassment training and given drug addiction treatment — is no longer with the company.Bouckaert’s addition to Melvin’s board follows the exit of sales director Ted Whitney, who departed the fast-growing Wyoming craft brewery for a similar sales role with Nug, a California-based cannabis company that sells edibles, flowers, concentrates, seeds and more.As US Beer Shipments Decline, Off-Premise Sales Remain FlatShipments of domestically brewed beer are down about 2.9 percent, according to the Beer Institute, but year-to-date volume sales at off-premise retailers are still basically flat.Dwindling sales of domestic premium beers drove much of the declines, as volume sales of those products were down 5 percent during the period.Picking up some of that lost volume were imported beers. Despite modest growth for the craft category as a whole, volume sales for some of the country’s largest craft breweries – including New Belgium, Gambrinus, Craft Brew Alliance and Deschutes – were all in decline during the period.Nevertheless, other top-ranked craft beer companies are bucking category-wide trends. Founders Brewing, Stone Brewing, Canarchy Craft Brewery Collective, Firestone Walker, Dogfish Head and New Glarus Brewing were all up double-digits.Among craft beer styles, IPAs are still the largest product type in the category, with dollar sales up 12.8 percent.Sales of craft golden ales and “other pale lagers” are also still on the rise – both categories were up 13.5 percent and 52.9 percent, albeit on smaller volume bases.Stories courtesy of Brewbound (https://www.brewbound.com/) and CNBC (https://www.cnbc.com/Subscribe to Craft Beer Storm Podcast iTunes: https://itunes.apple.com/us/podcast/craft-beer-storm/id1438117278?mt=2Michael Potorti is the Host of Craft Beer Storm and Founder/Brewer at Beara Brewing Co. in Portsmouth, NHMichael PotortiFounder/BrewerHost of "Craft Beer Storm" Podcastmichael@craftbeerstorm.commichael@bearairishbrew.com*** Come visit our brewery for some delicious local craft brew! ***Beara Brewing Co.2800 Lafayette RoadPortsmouth, NH 03801Tel. An impromptu recording right after our first Beer Battle. We planned on adding this to another episode, but Mike decided not to. Though not ideal, we wanted to publish this episode out as soon as possible because it wouldn't fit in what we have planned in the near future. Thanks to Deason for bringing the Cantillon!
