It's a very special live show as Matthias Trum from legendary German Brewery Schlenkerla joins us for a tasting and chat at the Flem/Ken Bowls Club! He takes us on an aural tour around the brewery, the city of Bamberg and in fact many other parts of Western Europe too as he explains the origins of the many beers styles he produces and the history of German beer. And of course there's a heap of discussion about the brewing techniques that Schlenkerla use to make their distinctive beers and how Matthias strives to meld elements of the modern to their traditional methods. Don't forget to join us over the Kings Birthday long weekend back at the Bowls Club as we're spinning the Wheel of Beery Mystery - for just $9 you never know which fun beers you might land!
Smoky aromas, centuries-old brewing and Bavarian beer tradition — Matthias Trum from the Schlenkerla brewery in Bamberg brings all this with him to Australia. At the GABS festivals in Brisbane and Sydney, he presents the world-famous smoked beer, which is still brewed today over an open wood fire. A conversation about beer history and tradition.
Stefan did some travelling over the holidays. He made it to Vienna, and of course, he picked up some beers. While you can find lots of great beers in Austria, you can't find a lot of craft beer. Fear not, he was able to find an incredible marzen from Bierschmiede. Werkstruk is a 5.2% ABV marzen that makes us sad we can't drink it all year round. We jump into the Bavarian region with one of our favorite breweries Schlenkerla. Their smoked beers are always a treat. Erle is a schwarzbier. A smoked black lager is just what we need! #beer #craftbeer #drinks #marzen #schwarzbier
Chris Davison and Bill Koeppen join us as we drink and discuss a variety of beer styles featuring smoked malts. In the first half of the episode we sample homebrewed versions of the Polish Grodziskie and the German Lichtenhainer, as well as Bill's gold medal winning Smoked Helles. Then we shift our focus to the homeland of smoked beers, Bamberg, with three different Schlenkerla beers, the Marzen, Urbock, and Doppelbock. Along the way we discuss the history of these unusual styles, the flavors imparted by different woods, and offer up some tips for brewing these styles.
Lach!

Matthias Trum is the sixth-generation brewer at Bamberg's Heller-Trum Bräu—better known as Schlenkerla—and he is as obsessed with local history as he is with producing world-class smoked lagers via their old-fashioned methods. Bamberg has a long history of brewing, and Trum is a great student of that history—and his family has played an important role in it. In this episode, he immerses us in that story, discussing: old family brewing logs that detail strong beers as well as lower-strength ones made from second runnings the true story of rauchbier, and Schlenkerla's role in preserving its legacy details on Schlenkerla's own wood-fired malting process, and the old practice of using different types of wood the non-linear intensity of the smoky character in Schlenkerla's beers the importance of decoction to fermentation and flavor the flavor contribution of their direct-fire copper kettles the trick of balancing smoke and malt with evident hop bitterness experimenting with malts smoked by different woods and paired with different aroma hops balancing the non-smoked yet subtly smoky Helles Lagerbier how hyper-inflation led to the development of the Helles And more.

Smoked beers are thought to be an acquired taste. Aromas and flavors of campfire or bacon, when presented in the context of a pale or dark lager, can be surprising, jarring or intriguing. However, when we think broadly about our own relationship to this sensory experience we can be transported to familiar and even nostalgic places: an outdoor gathering with friends and family, the smell of breakfast, or a barbecue. Enjoying a glass of smoked beer is a window into not only our own past, but also the history of beer. Joining us this week is Matthias Trum, 6th generation brewmaster and patron of Schlenkerla Brewery and tavern located in Bamberg, Germany. Brewers and fans of smoked beer hold the distinctly smokey lagers and wheat beer from this Bavarian brewery in the highest regard. Known for its unique malting handling and preparation methods that impart a distinctly smokey aroma and flavor, Schlenkerla's Märzen, Wheat beer, bocks and pale lager are gateways into a special sensory experience. We discuss how Matthias translates historical brewing records into modern recipes; what his experience as family business owner and operator has been like; and how he balances modernity, tradition and innovation. Welcome back! We are talking about the funniest family films of our generation and that is Shrek! It's the 20th anniversary of this classic and we are talking about the story behind the making of it and the technicality that went into making this animation come to life! We are sipping on Saranac Brewery's (F.X. Matt Brewing Co.) Mississippi Mud Black & Tan Porter & Pilsner and Schlenkerla's Aecht Schlenkerla Rauchbier Märzen. Hope you all enjoy yourselves on this one and don't feel old if you feeling nostalgic with this one as we did. Let's settle this over a pint! To the Craft! Cheers! Episode 313 - Matthias Trum, Schlenkerla Happy Monday, Thieves! A couple weeks ago, we released an episode you may have had a little trouble understanding. Well, turns out we recorded a real version of that episode with our new friend Matthias Trum of Schlenkerla. Anyone who listens to the show knows we’re big fans of rauchbier and of Schlenkerla in particular, given its historic keystone status in the genre. We asked Matthias to Zoom into the B-Rizzle Virtual Studios and to our surprise he happily agreed! We had a great time talking with him about upholding his family tradition while also exploring creativity within the bounds of rauchbier production. I think we were all a little giddy but it was a fun talk and we can’t wait to have Matthias back on, hopefully in person next time! Tune in and let us know what you think. ***As always, you can email your questions, complaints, whimpers, or whines to us at stealthisbeerpodcast@gmail.com. Joining us today are Matthias Neidhart and David Frost of B. United International – an importer of specialty beer, cider, sake and meads – based in Connecticut. Brewers and producers they represent such as Hitachino/Kiuchi, De Dolle, Schlenkerla, Reissdorf, Domaine DuPont, and Loverbeer have had an enduring impact on the evolution of beer in America over the last twenty five
“If it’s a pain in the ass, we usually do it,” says Live Oak (https://liveoakbrewing.com) head brewer Dusan Kwiatkowski. Brewing the hard way has been a core tenet of the brewery since their start in the mid ’90s. While most breweries launched around the time focused on ales (to distinguish themselves from the “macro” beer of the time), Live Oak committed to craft lager from its earliest days. Its Czech-inspired pale lager, Pilz, has been one of their core beers for more than two decades. Today, Live Oak maintains that focus by pushing lager even further, through the pre-Prohibition-style pils they call Pre-War Pils, and by brewing and advocating for Grodziskie, which they brew as a lager with oak-smoked malt from a small Czech maltster. In this episode, Kwiatkowski discusses everything from the ways they’ve sourced ingredients for the Grodziskie to the process behind the cereal mash necessary with corn grits in the Pre-War Pils. Along the way, he discusses the impact of smoked malt in recipes, brewing Grodziskie as a lager rather than an ale, polishing pils so that it sparkles in the glass, spunding tanks for proper finishing, and more. Live Oak is fond of referring to its Austin, Texas, location as “Bamberg on the Colorado,” referencing the German city’s reputation for smoked beer from breweries such as Schlenkerla and Spezial. While smoked beer is a niche in today’s wider beer world, Live Oak’s passion and focus on the approach are second to none. *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): As the brewing industry’s premier choice for glycol chilling, G&D Chillers has set the standard on quality, service, reliability and dedication to their customer’s craft.

It's October and while Octoberfest happened on a much smaller level, we still celebrated in our hearts and minds. While shouting "PROST" and dancing in our lederhosen, we sample to fine German beers. First is the Brauhaus Riegele Speziator Dunkel, a dark doppelbock that was first brewed by monks over 300 years ago. Schlenkerla Fastenbier is a nice meaty beer unfiltered smokebeer. It's smooth and delicious. It's a snack in a glass.
First German beer, first smoke beer. We're making history in the Shop on this one. Style : Lager - ABV : 5.1% - Price : $4.79(USD) $3.80(CAD) for 500mL, ~16oz tallboy

Blieft gesund!
Kelsey returns to talk rauchbiers with Steve and Adam. What are rauchbiers? Beers made with smoked malts for a smokey flavor. But first they talk about First Sip Brew Box's Veteran's Day collaboration, Fargo Brewing puts dogs in need on their cans, PA Wal-Mart's get beer, and the American Keg company goes up against China. Then they get into the history of the Schlenkerla brewery as well as the history of rauchbiers. Plus they learn what the Ark of Tastes is. Finally Steve and Kelsey face off in a game of Is It a Beer? Is It a Castle? Or Is It Both? Beers: Aecht Schlenkerla Helles Lagerbier Aecht Schlenkerla Urbock Aecht Schlenkerla Oak Smoked Doppelbock

When I was on vacation last summer, I took the chance to visit a beer town that actually should be on every beer lover's bucket list. Beautiful Bamberg. The Mecca of northen Franconia and also home to one of the most mythical malteries in the world. Weyermann. I got a tour from Gregor Einar Fransson (weird name for someone from Slovenia, right, but more on that later), and on the next day we had a beer and a talk at the Schlenkerla taproom. This is what it sounded like. Enjoy!
An airhacks.fm conversation with Simon Harrer (@simonharrer) about: Amstrad Laptop, first line of VB code was a commercial one, customers two desks away, Scheme is an excellent language to learn programming, Java is great - mainly because of the tool support, Eclipse was the first opensource IDE with decent refactoring support, Bamberg is the home of Schlenkerla, teaching is the best way to learn, therefore teaching is selfish, building portals for students with PHP and Joomla, building e-commerce shops for students with Ruby on Rails, 2006 everything had to be Rails, PhD about choreography and distributed transactions, too high expectations on workflow and rule engines, workflow engines are for developers and not for business people, central process view is still desirable, startups with Bosch, in Germany it is hard to find developers who are willing to join startups, Simon works for InnoQ and Stefan Tilkov, Computer Science University of Bamberg, the pragmatic book: Java by Comparison by The Pragmatic Bookshelf, in streams there are no exceptions, over-abstractions cause trouble, reviewing the code of thousands of students for six years, it is unusual for universities to promote pragmatic code, be strict about adding external libraries, clear separation between infrastructure and business logic helps with clean code, moving domain specific libraries into the infrastructure, human centered code, optimizing for machines, not for humans is problematic, writing bad code is often not intentional, "Abstract, If, Impl, Default, Bean Conventions - Just For Lazy Developers", don't write for reuse, reuse rarely happens, reuse as motivator for bad abstractions, do repeat yourself, than refactor, "How To Comment With JavaDoc", Book: Java by Comparison, Become a Java Craftsman in 70 Examples, Simon Harrer on twitter: (@simonharrer).
On today's bonus Episode, Dan and Dave crack into a classic and delicious style brew knows as Rauchbier. They try their first from Schlenkerla, which is super easy to pronounce! In this episode, we discuss BJCP style 32 Smoked Beers while we sample some commercial examples from Schlenkerla that were bought locally, against those recently brought back from Schlenkerla’s home town, Bamberg, Germany. The category has two subcategories, including 32A Classic Style Smoked Beers and 32B Specialty Smoked Beers. However, both categories have the same basic description to start: A smoke-enhanced beer showing good balance between the smoke and beer character, while remaining pleasant to drink.

This week on Beer Sessions an unprecedented combination of Jimmy, Sam, and Ray had a fascinating discussion with Matthias Trum and Matthias Neidhart of Aecht Schlenkerla about German beer. Don’t miss this chance to learn about how beer fits into German culture (perhaps a bit better than in America), how the German Purity Law limits or inspires German brewers, and the 6 generation, 500+ year tradition of Aecht Schlenkerla and “smoked” brewing. This episode was sponsored by Great Brewers.com: a favorite source for beer information and education and one of the internet’s most popular beer destinations.
