Trop sucrées, pas assez complexes… bref, pas très excitantes. Pendant longtemps, les boissons sans alcool ont eu mauvaise réputation. Mais ça, c'était avant. Aujourd'hui, même des grands chefs s'y mettent. Et notamment Sang Hoon Degeimbre. Ce chef doublement étoilé au L'Air du Temps, a décidé de créer ses propres boissons sans alcool. "Ni de l'eau, ni un soft drink, ni un vin sans alcool, mais une boisson gourmet" pour accompagner le repas.Son objectif ? Sortir du sucre à tout prix. Parce que le sucre, il le dit lui-même, ça masque les arômes. Résultat : une gamme baptisée Osan, composée de boissons sans sucre ajouté, avec un apport calorique minime (à peine 4 kcal pour 100 ml). Et surtout… du goût. Ses boissons, il les veut délicates, végétales, qui changent complètement des infusions classiques souvent trop sucrées. Aujourd'hui, beaucoup d'alternatives sans alcool reposent sur des jus fermentés, des thés glacés ou des infusions… qui finissent par être très sucrés et assez simples en bouche.Mais Osan n'est pas seul sur le marché à vouloir proposer des alternatives aux boissons alcoolisées.Du côté de Bruges, la marque Buloo propose une alternative pétillante très intéressante. Un mélange de kombucha et de rooibos, avec des notes de citron, de cerise et d'épices. C'est frais, léger, et bien moins sucré que la moyenne.En France, Symples mise sur des infusions glacées pétillantes à base de plantes locales. Chaque recette a une fonction : relaxante, énergisante… avec toujours cette volonté de rester léger en sucre.Même philosophie chez Jardins et ses apéritifs sans alcool : on ne cherche pas à imiter l'alcool, mais à créer une nouvelle expérience gustative à base de fruits, de plantes et de baies. Uniquement de France.Et puis il y a Cul-Sec, aux Pays-Bas, qui reprend les codes du vin… sans alcool. On utilise les techniques de vinification, mais sans fermentation alcoolique, pour obtenir une vraie structure en bouche.Ce qu'on voit à travers toutes ces initiatives ? C'est que le sans alcool est en train de changer de dimension. On n'est plus dans la boisson « par défaut » ou la solution de secours. On est dans une expérience à part entière, plus saine, plus subtile… et parfois même plus intéressante.L'objectif n'est pas de cracher sur les personnes qui veulent un apéro ou un accompagnement alcoolisé mais simplement proposer des alternatives à ceux qui ne le souhaitent pas. Upon graduation was assigned to Vance for UPT and kept there as a IP till he got an assignment to Eglin and F-15's. Luke, Osan, Langley, and Tyndall followed his flying career. once the desks loomed he transitioned to United Airlines. While at ACSC he hosted Hub Zemke at a Gathering of Eagles weekend. My guest today is retired Air Force Master Sergeant, Shannon Singleton. Shannon grew up in Scarbro, WV and graduated from Oak Hill High School in 1997. He joined the Air Force on a delayed enlistment and went to Basic Training in February 1998. His AFSC was 1N0 Operations Intelligence and he attended tech school at Goodfellow AFB, San Angelo, TX. His first assignment was to Schriever AFB, CO with the 11th Space Warning Squadron. His next assignments included Scott AFB, IL, Osan, Korea, and Wright-Patterson AFB, OH. In 2009, he deployed to Kabul, Afghanistan. He returned with an assignment to Washington D.C., followed by his last assignment to Barksdale AFB, LA. Shannon retired in 2019.

My guest today is CMSgt Kendell Clark, the current Wizard Chief and RAPCON Chief Controller at Kunsan Air Base. This is my second assignment with Chief Clark as we spent a year at Osan together. Chief Clark has been in the Air Force for 27 years and today he shared his insightful thoughts and experiences. He recognizes some of the ways that he has changed and became better throughout his years of Air Force and life experience. For anyone that doesn't make it past the halfway point of this podcast, Chief Clark says that he welcomes and appreciates it when someone of any rank comes directly to him and tells him a problem with an organizational policy or within the facility. He brings up his mentor, CMSgt Scott Rawlings a couple times during the podcast. Towards the end we try to uncover what made Chief Rawlings his top mentor. I conclude that it is the individual investment Chief Rawlings has towards select individuals. However, this is purely an assumption and I hope one day I can get a few minutes of Chief Rawlings' time to ask him some questions and figure out what he attributes to be his best assets as a leader.
