Do you really want to see the calorie count on that barrel aged stout?The requirement for brewers to list ingredients and nutrition info on beers has been going around for a while. Regulators want it, breweries are fighting it. Listing all the ingredients and nutritional data isn't as simple as printed a label. There's a lot of time and cost involved. The spirit of Portland beer is alive at Chelawasi Beer Co. Chelawasi Beer Co. is tucked among the colonial-era architecture of Arequipa, Peru, decorated with many mementos from American craft brewers and a bold KEEP AREQUIPA BEERED sign as nod to owner Casey Workman's Portland roots. When asked how he moved from being an electrician in Portland to opening a beer company in Peru he says, "Because nobody was paying attention." With a variety of popular beers and a recent medal win at the Copa Latinoamericana de Cerveza, they're paying attention now. We talk with Workman about the young craft beer scene in much of Latin America and the challenges brewers face getting ingredients like malt, hops, and yeast. He shares info on the styles that are popular, the crazy politics of brewing in Peru, and some of the collaborations he's done with American brewers traveling in his area. Workman is also planning a Portland tour for Latin America brewers to visit breweries, hop farms, and "build a bridge" for his brewing community. Brülosophy’s Marshall Schott talks exBEERimentation We all know the saying, "if it ain't broke, don't fix it." However, Marshall Schott of Brülosophy reminds us that just because something isn't broken doesn't mean it can't be improved. Schott and a team of other hardcore homebrewers at Brülosophy examine some of the long-held traditions of brewing to see if there's a better way to do things. Sometimes they do find a better way, and occasionally that upsets a few people. It can be tough to let go of traditions. Through their "exBEERiments" the Brülosophy team has tested the idea that a lager needs months of lagering to be great, the importance/necessity of long mash times and boils for your beers, fermentation temperatures, and a host of other brewing methods. They've helped a lot of homebrewers in making better beer, and even a few professional brewers. One of the best things about these exBEERiments is it gets people talking about the way we brew. Won't you take me to, Monkey Town We took a quick road trip to Tennessee recently and found ourselves at Monkey Town Brewing in Dayton, home of the Scopes Monkey Trial. None of my friends were familiar with the case, but it's a pretty interesting case. The short of it is that a high school teacher (John T. Scopes) was accused of teaching evolution in school at a time when that was illegal. He didn't recall ever teaching evolution but took the fall as he thought it would be good publicity for the town. Stan Hieronymus knows a thing or two about hops Stan Hieronymus has forgotten more about the beer industry than most of us will ever know. He's typically leaned on for his knowledge of hops, but his expertise extends to many other areas in craft beer. Hieronymus relocated to the Atlanta area about 1 1/2 years ago and we bend his ear every chance we get. He joined us in early 2018 (BGR #120) and we thought it was about time to have him on again for an update. Naturally, we talk a lot about hops in this episode. We get the update on the hop harvest across Europe and the Pacific NW and discuss hop terroir, a topic that hasn't been mentioned often but is generating more buzz after recent tests. Some yeast talk happens as well, and we talk about our latest obsession - kveik. We hear about the durability of true kveik strains and how real Norwegian farmhouse brewers make their beer, and it's likely nothing like what you've had at your local brewery. Beer Archaeologist Travis Rupp is bringing history back to life one beer at a time As far as cool job titles go, Beer Archaeologist is pretty high on the list. Travis Rupp holds that title, as well as R&D Manager at Colorado's Avery Brewing Co. In addition to his boozy life, Rupp is also a professor of classics, art history, and anthropology at University of Colorado Boulder and he's currently working on a book - Brewing in the Ancient World. I'm not sure if he ever sleeps. Rupp joined us this week to talk about the history of brewing around the world. We discuss the beers of ancient Rome, Greece, and Egypt, Viking brews, monastic ales, and George Washington's penchant for beer and wine. Attitudes towards beer varied in each culture with some celebrating it as the drink of the goods, while others imbibed in secret as they decried beer as the beverage of Plebians. We also dig into the ingredients and methods used and the difficulty some of these ancient additions impose when trying to bring them back to life. Ancient yeasts are the hardest to acquire, and some of the spices used in the past are now known to be toxic. Rupp tells us the other brewers cringe as he brews some of his ancient ales, gumming up the brewhouse with sticky corn or dragging and entire spruce tree into the brewery. Avery has released many of his recipes in their Ales of Antiquity series. We enjoyed the latest release, George Washington Porter and coming soon is an 18th century IPA. Rupp has no intentions of slowing down and has plans for beers years into the future. He'll continue to travel the world scouring archaeology sites for signs of brewing and do his best to bring something to life that will allow us all to get a taste of the past. That’s not to take away from all the incredible changes, old and new, that take place in beer—but in today’s Collective podcast, we’re talking about literal invention. In his latest piece for Good Beer Hunting, Stan Hieronymus shares the story, “There’s a Beer Patent for That — A Brief History of Curious Beer Ideas.” It’s his second story for Good Beer Hunting’s Mother of Invention series, which is told in collaboration with Guinness. In his story on patents, Stan looks at the history of beer, and the variety of people who have applied to get their creations protected through a longstanding government process. It's a way to ensure that a creator’s ideas and intellectual property stay with them. Stan pored over a treasure trove of beer patents to find the examples he shares in his story. Many were tracked down thanks to fellow writer Jay Brooks, who maintains a running collection of beer-related patents on his blog. Along with discussions with GBH editorial director Austin L. One is all about the whacky, the culinary, the mad while the other is more traditional with classic beer style approaches.
