Amanda and Brandon Wright of Werk Force Brewing have been in business out in Plainfield for over a decade, but their story and influence goes far beyond that. We spend a good long time talking with the Wrights and sampling through a lineup of their excellent beers, from lagers to IPAs to barrel-aged stouts. Just some of the topics we cover include accepting the inevitability of flagship beers, leaving ABV off the label, creating a community-based space open for all, finding the right food partner, starting a family while opening a business, capturing just the right images for label designs, dealing out rare Lukr side pull handles, withstanding FoBAB controversies, closing a legendary homebrew shop, collecting an impressive array of barrels, and fixing the toilets more than you could ever imagine. Plus, Craig finally gets the vest advice he's been seeking.  Beers Sampled Really Decent (American Light Lager) Forklift Road Warrior (American IPA) Little Big Penguin (Hazy IPA) DDH Formerly Known As… (American IPA) Bourbon Barrel-Aged Stupid Sticky Fingers [collab w/ Rocky Reef Brewing] (Imperial Stout aged in bourbon barrels w/ cacao nibs, vanilla, and graham crackers) 3 Year Family Reserve Rye B.A. Sleepy Bear (Imperial Stout aged in rye whiskey barrels)

Even though Black Friday doesn't mean what it once did, Bourbon County is still an event - and we have Ryan Tracy with us at Beer on the Wall to help us taste through this year's lineup of six from Goose Island. Sure we were banned from the official media tasting, but we assess the whole group fairly - and find some surprises that are real standouts in the history of BCBS. Also, shenanigans may be afoot at FoBAB in regards to our Fantasy League; Ryan T. and Craig have a proposed wardrobe swap; we discuss BCBS variants that “don't exist”; Tracy shares a Rare Day story that can only lead to bias; we can't help but fondle the box; and we are finally sponsored by Jazz, the style of music. And don't miss out on our annual trip through Bourbon Country. The most popular sub-style in beer at the moment, the India pale ale or IPA has had a very storied history, or has it? Learn how Revolution Brewing grew from a small brewery to Illinois' largest independently-owned brewery — and what makes their beer so special. 03:51 Beer Myth: Do all yeasts ferment the same way? Katherine challenges the idea that top fermenting and bottom fermenting yeasts function in the same way. Learn what yeasts actually do and the role they play in the fermentation process. 09:03 Revolution Brewing Interview: David Blackford, Lead Brewer at Revolution Brewing, explains the difference between a head brewer and a lead brewer, reminisces about his first impressions of Revolution Brewing and the first beer he ever got to work on, and discusses the development of signature beers like Eugene Porter and Anti-Hero, his journey from a packaging specialist to lead brewer, and what it was like for the brewery to transition from a small brewery to a large-scale operation, including the use of new technology like centrifuges to increase production capacity. Then, David talks about Revolution's latest favorite, the Cold Time Lager, and explores the growing trend of lighter, less complicated beers making a comeback, emphasizing the appreciation for quality brewing with fewer ingredients. David and Katherine discuss the difficulty (and fun!) of naming beers before Cody jumps in with questions about Revolution's Deep Wood Series of barrel-aged beers, including what inspired Revolution to release such high ABV beers year-round. The discussion also touches on memorable yet discontinued brews, such as the Bottom Up Wit, discussing its unique qualities and why it's no longer a staple despite its popularity. David also clarifies the differences between Wit wheat beers and Hefeweizens, focusing on yeast's role in defining their distinct flavors.  53:56 Beer Behavior: What's up with hop waters? David discusses the intricacies and challenges of making hop water, a non-alcoholic beverage gaining popularity among beer enthusiasts, including insights into their process for creating Super Zero. He discusses the benefits of hop water as a non-alcoholic alternative that allows breweries to showcase their craftsmanship, its role as an excellent palate cleanser at beer festivals like FOBAB, and its versatile suitability for various settings, from work lunches to outdoor activities.  1:00:12 Today's Featured Merchandise: “Drink a Stout” tee (if you can drink coffee, then you can drink a stout!), available in multiple colors! At last year's Festival of Barrel-Aged Beers in Chicago, a relative newcomer grabbed both the silver and bronze medals in the Wild Beer Mixed Culture with Fruit category, immediately sending the crowd to flood the pouring table with requests for tastes. The brewery brand—Idyll Forest Artisan Ales—is the wild, mixed-culture passion project of Pryes Brewing (https://www.pryesbrewing.com) cofounder Jeremy Pryes. The small production facility he's built about 20 minutes from the main brewery is his culture and flavor laboratory. Despite founding the brewery over a decade ago, Pryes still spends time on the production brew deck and then makes time for his acid-forward labors of love, but the long days are worth it for Pryes. There are too many ideas to try, too many experiments to work out, and too much to learn to slow down now. In this episode, Pryes discusses both their classic approach to “Midwest IPA” as well as the wild path he's forging with Idyll Forest. Along the way, he touches on: their slow and intentional growth from alternating proprietorship to large beer hall the fundamental tenets of classic Midwest IPA challenges in selecting Simcoe with a more classic flavor profile how drinkers' palates have evolved over the past decade changing yeast strains, making drier beers with no caramel malt, and finding balance through lower bitterness differentiating West Coast–style IPAs from Midwest IPAs through hop choices building common lanes for Idyll Forest's wild, spontaneous, and mixed-culture beers the narrow IBU window between bacterial party time and lockdown pre-acidifying or not, depending on flavor intentions decisions and process around fruit additions using carbonic maceration of grapes to improve flavor expression articulating beer-blending goals through writing avoiding vanilla in certain fruited mixed-culture beers And more. Note: After we recorded this episode, Pryes went on to win a World Beer Cup bronze for Soirée, which had also won bronze at FOBAB. God.  I hate this time of year.  Set the clocks back an hour and I'm off schedule for two weeks.  I don't sleep right, day is night, up is down.  What is even happening here?Fortunately last weekend was nice so we hit some patios, drank some good beers, ate some oysters, and visited our local barcade.  Good times that we'll take advantage of while we can.The brewery closures keep coming.  The Brewers Association says craft beer is now a "mature market," listen in for more on that.  We saw Hippin' Hops close a location here in Atlanta, big news out of Austin as Oskar Blue's shutters, and after we went to press news came out that Ecliptic Brewing has been sold and while the brand will live on, the pub and restaurant will close.  We'll see more of that, no doubt. As it is the season and we are all for playing along, we discuss pumpkin beers this week.  I even drink one.  Madness.  Pumpkin beers aren't my thing but NoDa was nice enough to share some of their medal-winning Gordgeous so I gave it a shot.  It's pretty good, opens up at cellar temps IMO.  I may not go for pumpkin beer often but we've all got opinions on what we want IF we do happen to have one. While beer fests are down in popularity the Festival of Wood and Barrel-Aged Beer (FoBAB) in Chicago is still a hot one.  We talk about the winners this year and get excited to see a Brett beer get some love again. In other stories can sales are down, could this mean the end of the shortage?  Brian, for some reason, shares a story about alcohol and sexual assault in Antarctica.  Seriously, I don't even know why this was included.  But here we are.The Beer ListTrillium - Deciduous (Hoppy Pale Rice Lager)Fast Fashion / HW Crooks - Catch of the Day (Fresh Hop NE IPA)Iron Hill - Spruce Moose IPA Homebrew - Tiny Trout (Pilsner)Green Man - ESBWild Leap - Alpha Abstraction vol. 25 (DIPA)NoDa Gordgeous (Pumpkin Ale)Anchor SteamSourceshttps://www.reuters.com/business/retail-consumer/beer-cans-maker-ball-misses-quarterly-sales-estimates-slowing-demand-2023-11-02/https://www.wxyz.com/news/michigan-laundromat-expands-business-tThanks for listening to Beer Guys Radio! We stumble into covering a whole category's winners while running through an updated FoBAB “by the numbers.” Also, we consider how much wood a beer must touch to qualify for an entry; Craig is gonna get so yelled at during rankings; and we implore someone at ICBG to let Randy Mosher check his coat.  Medal-Winning Beers Reviewed Off Color Brewing - Tequila Barrel-Aged Beer for Tacos (Gose style beer aged in oak tequila barrels with lime juice and salt added) - Bronze in Other Pale Beer Forbidden Root Brewery [Columbus ] & Derive Brewing Company - Well Positioned (Oak-fermented Saison) - Silver in Other Pale Beer Ravinia Brewing Company - Spanish Cedar-Aged Steep Ravine (IPA aged w/ Spanish Cedar) - Gold in Other Pale Beer Around the Bend Beer Co. - 1825 (Barrel-aged Raspberry Ale w/ Brett) - Silver in Wild Beer/Brett More Brewing Company - Lucky Bamboo (Rum barrel-aged Tiki Sour w/ pineapple, passionfruit, lemon, lime, and bitters) - Silver in Fruit Beer Mikerphone Brewing & Goose Island Beer Co. - Double LP: Side B (English Barleywine aged in bourbon barrels) - Gold in Barleywine/Wheatwine
