A chef's career can start early, or it can ignite the moment someone finally tells you, “You can do this.” Chef Jackie Page joins us to share the real story behind her Pittsburgh food journey, from years in restaurants to returning to culinary school at 47 with her sister's help and belief. We dig into what Jackie is known for in Pittsburgh catering and private chef work, including shrimp and grits and roasted chicken that falls off the bone. She also breaks down how she plans menus with clients, why buffets can be smarter than plated dinners, and how temperature and timing can make food more enjoyable, not less. Then the conversation turns to one of the most meaningful chapters of her career: opening Love Rocks Cafe in McKees Rocks and pivoting during the pandemic to produce meals for the community. We also learn about her work with Table Magazine, Babesburgh, and her growing role in the beer world through Pink Boots Society and brewing education. To close, Ana Eats PGH hands us an easy Lawrenceville date night: Pizza Lupo for hot honey perfection, then Millie's for a cool end to the evening.Subscribe to The Pittsburgh Dish, share this episode with a food-loving friend, and leave a review so more people can find these Pittsburgh food stories.Support the show

Barry, Abigail, and special guest Nick Martino discuss Ozomatli by Ozomatli and sample Sole of the Sea (collaboration with Rockport Brewing Company in Rockport, Massachusetts), Drip, and girl, so confusing from Lost Shoe Brewing and Roasting Company in Marlborough, Massachusetts.Nick is now a four-timer, having previously appeared on our second Christmas bonus episode, Bonus: A Christmas Day's Eve! Original Songs by Our Friends, and both of our live episodes: Bonus: LIVE from Stand Up! Pod Jam 2024: Pops on Hops Friend Exchange (New York Funk Exchange and Able Baker Brewing) and Bonus: LIVE from Stand Up! Pod Jam 2025: Neon Desert Challenge (the latter of which he also produced for us!). Give his previous appearances some love; they are a lot of fun!Nick, in part, chose to assign us this album because of Abigail's beef with He's the DJ, I'm the Rapper by DJ Jazzy Jeff & The Fresh Prince as displayed in Jukebox: He's the Drinker, We're the Talkers (DJ Jazzy Jeff & The Fresh Prince and Evil Genius Beer Company). Coincidentally, this album reminded Abigail of a different Derek Hummel, Sr., Jukebox selection, Make Yourself by Incubus, as discussed in Jukebox: Make Your Flight (Incubus and Hell 'n Blazes Brewing Co.).Both DJ Cut Chemist and MC Chali 2na left Ozomatli after this album because their other group, Jurassic 5, was blowing up.We found a great blog with additional information about and clips of Nick's favorite “trumpet battle” between Wynton Marsalis and Trombone Shorty at the House of Blues in New Orleans, Louisiana, in 2009. Evidently, trumpet battles have been going on for over 100 years!Watch Chali 2na and New Orleans-based jazz band Naughty Professor perform Cut Chemist Suite live at the Culture Room in Fort Lauderdale, Florida, in 2018!Oh look, more self-promotion! O Le Le names Edie Brickell, whom we have previously reviewed (see Using Honeybees for the Meads [Edie Brickell & New Bohemians and B. Nektar]). We could think of at least one other time an artist we reviewed explicitly names an artist we'd previously reviewed: Crash Test Dummies (see Pops Shuffled His Flight [Crash Test Dummies and Toll Road Brewing Company]) names David Bryne (see Byrned-Again [David Byrne and Lincoln & South Brewing Company]) in When I Go Out with Artists. These two latter albums are both among Abigail's top five favorite albums we've ever reviewed, as revealed in our Pops on Hops Hot 100 Special!Super Bowl Sundae contains a sample that sounds very similar to a sample previously discussed on the podcast: Hip Hop Dancer's Theme by DJ Jazzy Jeff & The Fresh Prince samples Peter Piper by Run-D.M.C., which sampled Take Me to the Mardi Gras by Bob James.Abigail plugged The Manifesto (feat. Trueno and Proof) off of Gorillaz' recently released The Mountain, a song featuring both Indian influence and a Spanish-language rapper!girl, so confusing was brewed with the 2026 Pink Boots hop blend from Yakima Chief Hops. In an industry built on authenticity and community connection, most teams resist AI because they worry it will dilute the brand's voice or sound generic. Used strategically, AI can protect creative energy, support consistency, and make marketing more sustainable without replacing personality. This session explores how breweries can use AI as a calibration tool that supports brand tone, improves operational communication, and helps repurpose existing conversations and knowledge into usable marketing and training material. We will walk through how AI can bridge the gap between operations and marketing, support seasonal storytelling, accelerate employee onboarding, and create content frameworks that still feel like the people behind the beer. The session includes a live example build showing how to turn raw ideas or taproom dialogue into platform ready content while keeping voice intact. No technical background required. The focus is on structure and intention rather than automation.Participants will leave with prompt techniques, best practices for brand consistency, and methods for using AI without outsourcing identity.AI should not replace your voice. It should protect it so you have the energy to keep using it.Madeline McMahon is a fractional marketing strategist and founder of Madeline Fleehart Consulting specializing in sustainable visibility for small teams in the food and beverage sector. This call came near the end of the episode with Gabi Demozzi, which is right here. The film is called Witchy Boots.  Tara is a journalist who covers the beverage business and the personal stories of people in the beverage industry. She is the author of A Woman’s Place Is In The Brewhouse and she has been on Brew Ha Ha many times. Tara covered mental health in the beverage industry on this episode on May 2, 2024. Tara also holds the honor of being the guest on our first podcast episode here in February of 2018. Tara lives near Philadelphia, the site of next week’s Craft Beer conference. The Pink Boots Society is kicking off the conference on Sunday with an inclusive festival that is inclusive of beverages and of people. Philadelphia is known for other foods than cheesesteaks. The Redding Terminal Market is the oldest indoor food market in the country. Also, the Italian Market takes up several blocks in south Philadelphia. In recent years there are some Mexican restaurants in the area and further south, some Asian restaurants. It is becoming more eclectic. Herlinda remembers some killer pizza too. There are several oldest, coolest, original this or that, all over the city, to discover. Look for Philadelphia to be the official home of the 250th anniversary of the US, this year in July, 2026.

There are some raw materials in the brewing world that are the butt of jokes or customers claim they don't like them because they have heard bad or false things about them. Two brewing ingredients come to mind: Sabro hops, which were released in 2018 and crystal malt, which is used in many styles from English bitters to American amber ales. But are these ingredients really so bad? On the All About Beer podcast today we talk to four guests who will help us demystify these misunderstood members of the brewing world and find out if people's ire is really justified or perhaps we should be looking at Sabro and crystal malt with fresh eyes.Visit AllAboutBeer.com for more podcasts, to read original articles, and to get info on upcoming events.Click here to support independent journalism covering the beer industry. This Episode is Sponsored by:HopsteinerLet's talk brewhouse efficiency: Replacing pellet loads with Salvo cannot only boost aroma density, but reduce trub load and increase beer wart. Two years on from leaving Two Birds, she's been carving out a new path, one focused very much on the human side of the food and drinks industry. Today, she operates Full Colour Life, working with small business owners as well as individuals on everything from business strategy to setting and achieving personal goals. The wealth of knowledge she brings to the role comes not just from her time as a brewer and business owner, but also from personal experience: succumbing to burnout and a sense of losing agency, before embarking on a mission to rebuild herself and help others do the same. Given the well-documented issues around burnout, stress and churn in the industry, Jayne is playing – once again – a vitally important role, which she discusses in this episode, along with her experiences as a woman in a male-dominated industry, the remarkable success of the Australian chapter of Pink Boots Society, the importance of allyship, and bobbing like a cork in the ocean – even in the middle of a Melbourne winter. Last week's tech gremlins overcome, the show opens with Will and James discussing the ACCC's decision to oppose MicroStar's proposed acquisition of Konvoy, ten years (or is it 140?) of Pikes Beer Co in the Clare Valley, the growing number of breweries using silos, and a new video launched by NSW indie suppliers Mogwai Labs, Ryefield Hops and Voyager Craft Malt. Mid-show we also reveal the latest Bluestone Yeast Brewery of the Month. If you enjoy the show, please rate and review – and tell your mates! Tapped for Change: What the TTB's Proposed Label Rules Mean

The TTB is at it again—this time with two big proposed rule changes that could shake up beer labels. If you're wondering what this means for breweries, what you need to do, and whether you'll have to start listing things like calories (yes, really), this session is for you. We'll break down the two key proposals in plain English (no legal jargon required):• Major Food Allergen Disclosure (Notice No. 238): If your beer contains milk, eggs, fish, tree nuts, wheat, peanuts, soybeans, or sesame, you may soon have to put that on the label—just like food products.• Alcohol Facts Labeling (Notice No. 237): Think of it as a nutrition label for beer. This would require breweries to disclose serving size, alcohol content, calories, and macronutrients (carbs, fat, and protein). We'll talk about what this means for breweries, from compliance hurdles to consumer perceptions. Plus, since the public comment period is open until April 17, 2025, we'll go over how you can voice your opinion before anything becomes official.Join us for a candid discussion on what's coming, what's still up in the air, and how breweries can stay ahead of the game.Wendy Raymond is the problem solver breweries never knew they needed—until they're drowning in TTB paperwork and wondering if they should've gone into beekeeping instead. As the owner of Taps and Snaps, she helps breweries untangle the bureaucratic mess of federal and state regulations, securing COLAs, TTB Formulas, and Permits Online approvals without the usual headaches. Need help setting up accounts or figuring out why your label got rejected (again)? Wendy's got you covered. She knows the ins and outs of federal and state alcohol regulations and has a background in craft beer distribution, but let's be clear—she's not a lawyer (and will kindly remind you of that before you ask about contract disputes). What she can do is save breweries time, stress, and unnecessary back-and-forth with regulators, so they can focus on making great beer.A Certified Cicerone® and Utah Chapter President of Pink Boots Society, Wendy is passionate about supporting independent breweries. When she's not battling TTB red tape, she's exploring the world one beer at a time. A foodie and devoted dog lover, she's always on the lookout for the best eats and four-legged friends wherever she goes.Stay up to date with CBP: http://update.craftbeerprofessionals.org

From new licenses to additional taxes to dealing with state control boards, the entire process can look different from everything you've become accustomed to.Come hear regulatory experts Alex Koral, Sovos ShipCompliant, and Candace Moon, The Craft Beer Attorney, discuss the ins and outs of how your brewery can move beyond beer to reach new customers and excite existing ones with novel offerings.Candace L. Infinite Ingredient founder and executive director Katie Muggli joins the Brewbound Podcast to discuss burnout in the brewing industry, how to recognize it, and what resources are available for both industry leaders and individuals. Recognizing burnout can help industry members physically and mentally, and can help strengthen business's bottom line, according to Muggli.  May is also Mental Health Awareness Month, so it's a perfect time for this discussion, which was recorded on the trade show floor last month during the Craft Brewers Conference in Las Vegas.  Then, Ashlie Randolph chats with Brewbound managing editor Jess Infante about Lifting Lucy, the company Randolph co-founded that helps provide resources to women and non-binary people of color in the industry. Lifting Lucy helps industry members form deeper connections in beer, including providing financial assistance to travel to, attend and speak at conferences and networking events.  Randolph is also the global vice president for Pink Boots Society, International and on the advisory board for the National Black Brewers Association (NB2A).  Later in the episode, Justin and Zoe review the latest headlines, including Gallo's strategic investment in Montucky Cold Snacks, and Boston Beer Company founder Jim Koch's comments on the company's need to repair its “embarrassing” reputation. Plus, the duo plays Another Round or Tabbing Out on resealable bev-alc packaging and candy-inspired beverages.

There is a talk series called The Future is Fermented, happening at the library on May 22. The Pink Boots Society The Pink Boots Society is a national organization founded in 2007 by a woman brewer who realized that she was often the only woman in the room at beer events. They work on education, offer scholarships and support networking among its members. They have expanded their membership from beer people to people who work with any fermented beverages, and from women to also include non-binary persons. The Pink Boots Society National Conference will be in Philadelphia, June 24-26, 2024. See our sponsor Victory House at Poppy Bank Epicenter online, for their latest viewing and menu options. Taylor Lane has a Bachelor's and a Master's Degree in Microbiology. She thought that would lead her into the veterinary or pharma field, but she discovered fermentation when she took a class in fermentation while in grad school. That made her realize that she knew all about the processes of making beer and other fermented foods and beverages. A job at Russian River would soon follow, as the lab supervisor. Taylor continues to thrive in the same role at Gallo Sonoma. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. When it comes to careers, longevity is hard to come by. Most surveys and job-focused websites will tell you Americans find a new job roughly every three-to-five years. The average American worker changes some aspect of their career—if not their entire professional focus—multiple times over their life. So, when you find someone who's really committed to the people they work with and those they work for, you know something must be going right. Such is the case for Jess Griego, now the chief operations officer and co-owner of New Mexico's Bosque Brewing, which has nine different locations in the state. A decade ago, Jess started with the brewery as a server and has worked up through a variety of jobs, also becoming an equity partner in 2019. But her roots aren't just with the company, they're interwoven in New Mexico itself as a native, college graduate, proud resident, and a co-lead for the state chapter of the Pink Boots Society. Jess has also taken her longtime focus on local to a national stage, where she's a newly elected pub brewery representative to the Brewers Association's board of directors. For as much as beer industry pros tout “local” as core to what they do, that often means locally-produced products. In this conversation, we get about as local as we can get as Jess reflects back on her years with Boseque, what inspires her as a leader, and what it takes to oversee a rapidly expanding brewery today. Growth is hard to come by for beer these days, but Jess and Bosque offer a unique example of what happens when you play the long game, in your career and in your business plan.

This episode features a conversation with the legendary Teri Fahrendorf, the long-time brewmaster and founder of Pink Boots Society. She's here for a wide ranging conversation about her career, brewery safety, recipe development, creativity, and forging a path in the beer industry. After a storied career in beer, Fahrendorf recently entered a working retirement. She's helmed breweries, judged competitions around the world, and founded the Pink Boots Society, which she later ran for nearly a decade. Plus, our Craft Beer & Brewing Best 20 Beers in 2023 (https://beerandbrewing.com/the-best-20-beers-in-2023/) are the culmination of a year of blind tasting by our review panel and then by our editors, achieving an internal consensus on beers of the greatest character and technical excellence. In Geneva, Illinois, Art History Brewing (https://arthistorybrewing.com) doesn't want to be everything to everyone, but they're committed to brewing traditional styles well, while also making them relevant to today's drinkers. That message has resonated in the broader Chicago beer world, winning them fans among some of the most influential bars and retailers in the city. For head brewer Greg Browne, it's the logical outcome of a career spent brewing these beers in smaller ways at other breweries. And for co-owner Tom Rau, it's a way to focus on beers about which they're personally passionate, meanwhile offering something different and beer-focused to the broad community of Chicago drinkers. In this episode, they discuss: innovation through focusing on traditional styles achieving the flavor results of decoction through other brewing means building color in Czech-style pale lager using the Hochkurz (https://beerandbrewing.com/short-and-high-the-hochkurz-mash/) mash and an oversized lauter tun ingredient selection for Northern German-style pils and Czech-style dark lager designing and brewing smoked lagers choosing yeasts for specific, regionally-inspired English-style ales And more. First up is Jason zumBrunnen, cofounder of Denver's Ratio Beerworks (https://ratiobeerworks.com), recent gold medal winner for their King of Carrot Flowers carrot saison (and 2020 silver medal winner in American-Belgo style ale for their Dear You saison dry hopped with Citra, upon which King of Carrot Flowers is based). He dives into saison standards, like building body despite fermenting with diastaticus saison yeast, single infusion mashing in saison, before drilling down on the particulars of using carrot juice—processing, addition timing, maintaining color and haze, and even the secret ingredient that helps promote the idea of sweetness in the very dry beer. Next is Jeremy Claeys, head brewer for Charlotte's Protagonist Beer (https://protagonistbeer.com), recent gold medal winner for the Kal-El classic saison (and 2022 gold medal winner in American-Belgo style ale for the dry hopped saison Bizarro, as well as 2021 gold medal winner in Specialty Saison for Air is Beautiful). He talks through their philosophy of brewing classic styles with small twists that make traditional beers their own, building character through grain, simplified step mashing, the benefits of high temperature fermentation, blending saison yeasts, bottle conditioning, and lagering both bottled and kegged saison for a cleaner and smoother beer. In 2007, after two decades of professional brewing, Teri Fahrendorf hit the road as an itinerant brewer for an odyssey spanning thousands of miles, dozens of brewery visits and collaborations, and a third of a calendar year. Along the way, she met with other female brewers like her, and they all wanted a way to connect with their colleagues, to find community as women working in a male-dominated industry. Armed with an email list and a pair of cheap pink boots gifted to her before her departure, Teri began laying the groundwork for what would become — you guessed it — the Pink Boots Society, now the beer industry's leading professional advocacy group for women and nonbinary people. People in the beer industry often tout the aspiration of using the drink as a way to “build community.” What they typically mean is that interacting over a beer is meant to be some kind of equalizer, allowing humans to connect in a better way. In this episode we meet someone who has taken this idea to heart, acting as one of the most prominent community builders in the Arizona beer scene for several years. Ayla Kapahi is the director of brewing operations for Tuscon's Borderlands Brewing, but is so much more. She's started professional development organizations, including co-founding the Southern Arizona chapter of the Pink Boots Society, which focuses on developing talent and skills among women and non-binary individuals. Ayla also helped launch Las Hermanas, an annual collaboration beer made with female brewers from both sides of the U.S./Mexico border. On the brewing side of things, she's focused on using ingredients and flavor experiences unique to the Southwest as a way to give Borderlands beer a truer sense of home. All these effomjmjrts are part of an ongoing desire to connect people. And as you'll hear from Ayla, while she's had a hard time defining what success means for her career so far, it's these examples that help her stop and realize the impact she's able to have, relationships she's created, and how much more she can do in the future. We all work to find the “why” in our lives—what drives us and inspires us—and you're about to learn how finding a career in beer helped Ayla find hers, and is encouraging others to do the same.
