Sophie Hudson is an accomplished author, a phenomenal Southern cook, and a dear friend! She shares about her new book, Grace Upon Grace, as well as her must-have Southern food staples. Episode At A Glance: This week, Sophie Hudson joined The SavvyCast to discuss her new journaling devotional Grace Upon Grace. Sophie is an author and host of The Big Boo Cast. This book was written with older teenage girls in mind, due to Sophie's experience working with high school girls at Briarwood Christian High School. Sophie shares how to connect with young girls in a way that makes them feel safe and understood. She explains that she never goes into these relationships expecting to change the girls because that is the job of the Holy Spirit. Sophie is not only a talented writer and mentor, but is a fabulous cook! We discussed our Thanksgiving must-haves, as well as some recipes we come back to every year. Questions We Answered In This Episode: What is Sophie's new book, Grace Upon Grace, about? What inspired Sophie to write Grace Upon Grace? How do you form relationships with younger or high-school-aged girls? As a parent, how can you create a safe space for your child? What do you have to have on your Thanksgiving table? Ouida's Squash Casserole Recipe: 10-12 medium-large squash 1 yellow onion, peeled and chopped in large chunks 1 cup chicken stock (optional) 2 Tbs. Kosher salt 2 tsp. black pepper 1 Tbs. sugar 1 stick butter, divided 4 oz. cream cheese ¾ cup sour cream 2 eggs, beaten 1 ½ grated cheese (freshly grated is best) 1 ½ cups Cheez-its, crushed Chop squash and onion. Put in Dutch oven and cover with water and chicken stock. Add salt, pepper, sugar, and 2 Tbs. of butter. Bring to a boil and then simmer about 20 minutes - until squash is fork-tender. Preheat oven to 375. Drain cooked squash/onion in a colander and use a potato masher or spoon to mash out as much water as possible. In a medium-sized mixing bowl, combine squash/onion with cream cheese, sour cream, cheddar cheese, and remaining butter. Mix well. Taste to adjust salt/pepper, then add beaten eggs. Pour mixture into a lightly greased 9x13 pan. Bake for 25-30 minutes (you want a tiny bit of brown around the edges), then top with crushed Cheez-its and bake for 5 more minutes. Let cool for 10 minutes before serving. S: Right. I really haven't blogged much in the last four or five years, though! I think when I started to write books, it was kind of like, well, I can use the words in a blog post, or I can use the words and say part of a chapter and just write naturally. Sort of saving stories for books. So ever since I started to write books, I haven't blogged quite as much the last four or five years, but I still use the blog even if I don't write blog posts. I podcast with my friend, Melanie, who has a blog called “Boo Mama!” When we started the podcast, we didn't know what to do with it unless we put it on our blogs. Just out of habit, many people go to my blog to get the podcast. But, it's a good place for me to have show notes or something, just a good sort of home base for both of us. So, we still post those episodes. R: That's kind of what I did with mine is when I transitioned to do podcasting. S: We've talked about if we wanted a podcast website, but you know, Melanie and I are pretty breezy. We were just like, why are we going to build something new? We both already have something. It works. R: When building follower trust, when you're doing a pivot or you need to do something new, why not use what you already have? Build on your experience R: As we dive into how to build follower trust, let's talk a little bit about some of the things that you've transitioned into. You blogged and then you transitioned into writing and transitioned into podcasting. Did you foresee yourself doing this? S: I would say when I started the blog, I had this deep sense of knowing it was something that I was supposed to do because I loved it so much. I loved the daily writing and then eventually I loved the community that kind of came with that. Then I met my friend Melanie through the blog. So many relationships that I've had now for the last 10 or 15 years have come out of that blog. But, that was it for me. I didn't know what a podcast was when I started it! I certainly never thought that I would write books. Everything that has come out of that has been a surprise to me, honestly. The podcast we started because my husband would hear Melanie and me talk on the phone and said, one day when I hung up, he was like, you should record a podcast. Cause he was a real early adopter of podcast. He was Saying, “People might want to listen to what y'all just talk about every day.” So we did it, and it took us a long time to really get momentum with that because neither one of us could accept that it was something that was really a legitimate thing for us today. Then, the first book was just because I had an idea for one that hit me out of nowhere that I could shake, but I only did something with it because Melanie convinced me to try to be open to whatever possibility is in front of me. So, the reason why I speak is just because at some point somebody asked me if I'd come speak, because apparently that's something that happens when you write books! People decide that you can speak. So, I had been an English teacher for so long at that point that I was really comfortable in front of people.

Sophie Hudson and Jamie share tips and techniques for down home cooking along with quarantine favorite meals that they prepared for their families. With the "stay at home" that left most of us in a type of quarantine for days or weeks, many of us have cooked more than ever. In fact, "home cooking" has made a resurgence. It seems that the recipes, foods, and cravings that most of us have had is for basic food. Homemade...like our mamas and grandmamas used to make:-) My stay-at-home time has involved cooking~lots of it. I have cooked more than I ever have. In the process, I've shared my love of cooking with several friends. We use the "Voxer" app to ask cooking questions, share recipes and tips, and give "grocery store updates" for which stores have certain products (as things sell out quickly). Sophie Hudson is one of the friends with whom I vox about food. I asked her to join my podcast last week just to "talk food" and share tips, recipes, and ideas for easy meals. The podcast is above, or you can listen on iTunes, Spotify or your platform of choice. For those who just want the nuts and bolts, I share them below. Salt, salt and more salt. Probably THE most important thing we discussed was the role that salt plays in cooking. This can't be overstated. The book that I am loving right now~Salt, Fat, Acid, Heat~ goes into great detail about salt if you want to dig deeper. But below are a few of the tips that Sophie and I share from our personal experience. The salt to use is kosher salt. Sophie uses Morton. I use Diamond Crystal. Iodized salt (aka table salt) is not the salt to use. It will make food taste metallic. Salt food in stages. Salt meat before, during and after cooking. Don't cook something then salt it~that won't work. When unloading groceries, unwrap meat and salt it before refrigerating or freezing it. I got this tip from Samin Nosrat who wrote Salt, Fat, Acid, Heat. This will make the meat more tender and flavorful. Salt and sit. Salt meat + let meat sit for 30 minutes at room temp before cooking. How to Make Buttermilk Brine Chicken the video below, I show how to salt the chicken for this fabulous buttermilk brine chicken that everyone is going crazy over right now. Sophie and I both love this chicken, and it is the technique from Salt, Fat, Acid, Heat. Browning ground beef: tips from Sophie At least 2 hours before browning, salt the beef well; let sit in fridge. Let beef sit at room temp for 30 minutes before putting in the skillet.
