It’s been a minute since we last recorded, so of course, the episode starts off on non-beer, non-gaming chat. Ben kicks off gaming chat with his thoughts on Revenge of the Savage Planet. Lucy’s been gaming with her nephew, or gaming for him in Animal Crossing. We end on Blue Prince, having a pretty in-depth discussion which turns to politics. Ben drinks a Beak X Floc collab called Threads 4, then follows it up with Soft Disco Leisure Reception from Verdant. Lucy has Run Free from Left Handed Giant, and Aadil brings a big boy, drinking Vault City’s Crunch. Lucy is beer-free this week, so Aadil and Ben turn to some familiar names. Aadil drinks Vault City’s Peach & Ginger Lychee Lemongrass Coconut Session Sour, and Ben knocks back Deya’s The Walls Leaned Away. Originally recorded on 4th of April 2025. As the only one who has played games this week, Lucy gives her initial impressions of Avowed, talks Glyphica, and then talks through a few demos like The Electrifying Incident, and Is This Seat Taken? Ben and Aadil want to talk a little news with the conversation leading to Shuhei Yoshida’s recent interviews, Cloud in Magic The Gathering, and the prospect of more Tony Hawk. Aadil kicks off the beers with Vault City’s Flying Saucers. Ben drinks Super Glue from Deya and Lucy has a Big Nothing from Donzoko. Originally recorded 21st of February 2025.

Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers. At Holy Goat, they've taken an unconventional approach to yeast and fermentation, opting for a proprietary method that utilises Brettanomyces yeast for long maturation times - typically 3-4 months - to produce unique, complex, full-flavoured sour beer. The brewery, co-founded by Johnny Horn, is driven by experimentation and they're obsessed with the awesome flavours that can be achieved from mixed-culture fermentations. In the episode, recorded at our Brewers Lectures in Edinburgh, Johnny talks us through his career, which has taken in The Hanging Bat, 71 Brewing and Vault City, which he co-founded in 2018.He also explains that while Holy Goat is inspired by tradition, they also seek to pay homage to their brewing forbears, mixing old and new techniques with the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer…

In the early days of craft beer, fruit was added to beer to offer something to people who didn't like beer.  These beers were typically made with syrups added to a beer and not a lot of thought went into them.  Today, breweries are embracing fruit and building beers around them.  The fruit is the focal point of the flavor and with increased scientific knowledge of how to work with fruit, brewers are pushing and pulling levers - microbes used to ferment the beer, when they add the fruit and how much and for how long - to bring forward all the right flavor chemicals.  Modern fruit beer is bursting with flavor.GuestsBret Kollmann Baker is a founder and the COO of Urban Artifact in Cincinnati, Ohio. Urban Artifact is the countries largest fruit beer only brewery, using over 1,000,000 pounds of fruit per year. With degrees in chemical engineering and brewing science, Bret has been able to help build out a brewery dedicated to handling massive amounts of fruit puree. In addition, Bret is the Beer Ambassador for Les Vergers Boiron, helping them reach more professional breweries with their fruit purees. In his free time, writing, hiking, and working on the Brew Skies podcast are his pursuits of passion.5 years ago, Steven Smith-Hay started Vault City Brewing after experimenting with heavily fruited, mixed fermentation sour beers and spotting a niche with huge potential in an otherwise crowded market. As a keen home brewer, Steven saw the accessibility of Vault City's signature style as an opportunity to reach avid craft beer fans and non-beer drinkers alike. He has since seen the company grow from just two full-time employees to nearly 30 across Vault City's brewery and its two bars. Steven's past life as an IT consultant seems a world away in 2023, which makes for a good story about boring day jobs and exciting hobby-turned-career opportunities that may have otherwise remained a daydream. This Episode is Sponsored by:Estrella GaliciaEstrella Galicia is an independent, family-owned brewery  in northwest Spain, founded in 1906.Estrella Galicia Cerveza Especial is a world class lager, brewed using the finest Spanish malts, locally  cultivated Galician hops and the best brewing practices, in a state-of-the-art facility in A Coruna. Edinburgh's Vault City Brewing have earned a reputation in a short time as one of Britain's most well-respected, sought after breweries.  Bucking the hazy producing trend, Vault City focus solely on Modern Sour Beers. With flavours such as Guava Banana Banoffee Toffee Smoothie, Apple Cherry Cinnamon Swirl and Strawberry & Lime Session Sour, Vault City have captured the heart and imagination of craft beer drinkers with their off-the-wall flavour combinations.Sour beers have increased ever more in popularity since the 2010's, to the point now where they are mainstream enough to be stocked by national grocery stores.  Brands such as North Brewing Co, BrewDog and Vocation here in the UK all have a variety of sour beers on the shelves. It was the placement of Edinburgh's Vault City, though - a brewery that solely focuses on modern sour beers - that caused a bit of a stir recently when they were listed in one Britain's biggest supermarket chains. For some, this was a huge step forward for modern sour beers, while for others, another example of supermarkets attacking craft beer.  This is one of the many topics I discuss in this week's episode with Steven Smith-Hay, co-founder of Vault City. It's not hard to see why craft beer veterans love them so much and why people who may not necessarily be into traditional beer styles - dominated by bitterness - may enjoy a glass or two of Vault City's sour beers.Me and Steve chat at length about the brewery, the challenges they've faced - especially in their cuckoo brewing days using lactobacillus in another host brewery - and what the future holds for this contemporary brewery pushing the boundaries of modern beer.THIS WEEK'S EPISODE IS SPONSORED BY LALLEMAND BREWINGLallemand Brewing, a division of Lallemand Inc., a global producer of yeast and bacteria, is helping breweries achieve their growth and quality goals by offering products, services, and education.Lallemand Brewing's premium brewing yeasts and bacteria deliver unmatched consistency, reliability, and purity, allowing brewers to take full control of the brewing process. At the forefront of innovation, Lallemand Brewing recently launched several dry yeast products: LalBrew Voss, LalBrew Verdant IPA, and WilBrew Philly Sour. For more information about Lallemand products in the UK please contact our local representative Andrew Paterson, global contacts details for the UK and other territories can be found via our website www.lallemandbrewing.comADDITIONAL SUPPORT FROM CRISP MALTSince 1870, Crisp Malt has been producing the finest malt at Great Ryburgh in Norfolk. Vault City was launched in 2018 by Founders Steve and Johnnie in Edinburgh, who started out homebrewing on the kitchen stove, before evolving to produce 400l batches in the basement. In 2019 an opportunity came up to rent a corner of 71 Brewing's warehouse in Dundee, as well as to brew on the 71 kit. Production stepped up 10x to 4000l batches. From Jan 2021, Vault City will be coming home to Portobello Beach in Edinburgh, moving into their own Brewery and Taproom. https://vaultcity.co.uk/ Andy wholeheartedly recommends https://www.instagram.com/brauhaus_edinburgh/

It's over to my partner in crime Jonathan Hamilton to host this, our final panel talk from FyneFest 2019. This discussion is all about spontaneous, mixed fermentation and wild ales—perhaps collectively better known, for better or worse, as “sours”. He's joined on the panel by Andy Gibson, who at the time was working for BrewDog Overworks, Steven Smith-Hay from Vault City, Jim Rangeley of Abbeydale's Funk Dungeon project, and Andrea Ladas, who helped establish the Origins project at Fyne Ales. This episode is a must listen for anyone curious about the production of sour beers, as this is a super fun, and geeky chat. I'll leave it there but quickly want to say thank you for listening to these talks, and thanks again to Fyne Ales for having us. We'll see you back in the Glen in 2021. And I'll be back in a week or two with some more episodes, including yet more panel talks from this year's Cloudwater Friends & Family & Beer festival.
