We bezochten De Matroos en Het Meisje op het Deliplein en trapten de avond af met de geweldige champagne van Suenen. Taco, sommelier en mede-eigenaar, tipte vervolgens de zijdezachte Volnay van Louis Billard. We konden ons geluk niet op. Dus mensen, op naar de Matroos! From The Wine Conversation (wine-conversation.com)"Episode Summary: In our latest 10-Minute Masterclass, Jasper Morris MW, author of “Inside Burgundy,” takes a look at the appellation of Volnay, which is situated in the Côte de Beaune, a couple of villages south of Beaune itself. Historically, Jasper explains, Volnay has greater significance than most Côte d'Or villages, as the Dukes of Burgundy built a summer palace there – many of the vineyards have the title “Duc” in their name.Volnay's terroir is a mix of limestone and clay, but Jasper explains that Volnay is known for its more “active limestone, which means it comes through and gets into the vines itself and the wines, making them lighter, fresher and more perfumed.” There are more Premier Cru Volnay vineyard – 115 hectares, than Village Volnay, which has 98 hectares. The appellation runs from Pommard in the north to the south of Meursault, where the reds are known as Volnay Santenots.Some of the most well-known vineyards are around the village: Clos des Ducs, Clos de la Caves des Ducs, Clos du Château des Ducs, and at the southern end above the main road, the D973, you have Clos des Chênes, and Taille Pieds, whilst below is one of the greatest, Cailleret (of which, someone in the 17th century said, “If you don't have vines in Cailleret, then you don't know what Volnay is.”)There are not many producers in the village of Volnay itself, though some have vineyards there, such as Domaine Lafon. The name you will come across most will be the Rossignol family, in one form or another. Blue-chip names found there include Marquis d'Angerville, Domaine Michel Lafarge, Domaine de la Pousse d'Or, and Domaine De Montille. Jasper's tip for up-and-coming producers are Thomas Bouley and his cousin Kieran Bouley, as well as Georges Glantenay, and Bernard and Thierry Glantenay. “The one I like a lot and is excellent value and under the radar, is Domaine Buffet,” Jasper concludes.Volnay produces wines slightly lighter in colour, but “it's the perfume that makes Volnay so special,” Jasper notes. He advises, “one of the things I find particularly interesting is when the wines are young Volnay seems nice, or very nice, in the hands of a great practitioner, but if you happen to have a bottle of 30 to 40 years of age and you drink it in a mix of really top wines from the Côte de Nuits, Grands Crus from famous villages, the Volnay really holds up, it is more exciting and hedonistic with age.”Vintages to look out for: “2017 is absolutely delicious now,” he says. Jasper also suggests 2007,2010 and 2011 for being very attractive now. Join Guy Seddon (Head of Fine Wine Buying), Will Hargrove (Head of Fine Wine) and James Franklin (Head of Merchant Sales) as they introduce Domaine du Pélican. This exciting Jura estate is the brainchild of Guillaume d'Angerville of Domaine Marquis d'Angerville in Volnay and his long-time Régisseur François Duvivier.   Following on from a recent buying trip, the trio discuss the Jura region in detail — the wine styles produced, the techniques used, the grape varieties and soil types, amongst many other factoids. As Biodynamics are particularly important, Guy gives us a quick overview of what this entails and the evident effects this has on the wines. They each conclude that Jura wines have been enjoying a renaissance in recent years and how viticulture has changed to adapt. They also explain how the idea of establishing Domaine du Pélican was sparked and the significance of the Pelican legend! Perhaps an accident or perhaps fate…Finally, Guy, Will and James dive into the wines themselves — how they taste, what they could be likened to, their ageing potential and what food to pair them with.

Richard Sanford co-founded the Sanford and Benedict Winery and planted the Sanford and Benedict Vineyard. He founded the Sanford Winery, and he founded the Alma Rosa Winery, all in the Santa Barbara County of California.Richard discusses his sailing career, working in the merchant marine, racing boats recreationally, and as an officer in the United States Navy. He talks about his travels around the globe, both before and after his service in the Vietnam War. He reflects on his short time working in business and education, and then his segue to planting a vineyard in what became the Sta. Rita Hills appellation of California. That vineyard became known as the Sanford and Benedict vineyard, and Richard co-founded the Sanford and Benedict Winery with Michael Benedict to produce wine from that vineyard. They had realized that Santa Barbara County, with a transverse mountain range, offered opportunities for growing vines in areas cooled by winds coming off the Pacific Ocean.Richard remembers his introduction to wine and a bottle of Volnay, and his desire to plant Pinot Noir in the Sanford and Benedict Vineyard. He talks about the early days getting the vineyard going, in an area where Pinot Noir had not been planted previously. He discusses the geography and geology of the place, as well as the history of ownership there. Richard recalls converting a small barn into a winemaking facility, building the fermenters, and inviting his friends to harvest the first grapes from Sanford and Benedict. He also recalls the subsequent visit from the local sheriff. Besides the attention of the police, the activity at Sanford and Benedict also attracted interest from wine writer Robert Lawrence Balzer, who wrote about the wine being made near Lompoc.Richard talks throughout this interview about both the agriculture aspect and the business side of making wine. He notes that tax write offs were an impetus for the planting of many of the vineyards in Santa Barbara County in the 1970s. He talks about the difficulties of dry farming and of organic viticulture in that area. Richard recalls meeting his wife Thekla during a fun sail. And he talks about the tough breakup with his business partner Michael Benedict that would eventually lead Richard to found the Sanford Winery near to the original Sanford and Benedict Vineyard.Richard recalls the Small Winery Technical Society, and the other winemakers in the group, such as Dick Graff and Josh Jensen. He talks about the role that that group played in his own development as a winemaker, and the camaraderie that he found amongst a group of friends who were also competitors in the wine business. Richard thinks on that period with a lot of fondness. He also has a fondness for the period of time where he felt he was at the forefront of wine and food in California, meeting and sharing time with people like Julia Child and Robert Mondavi.Richard shares his memories of visiting Burgundy and meeting vigneron and winery owners like Vincent Leflaive of Domaine Leflaive, Jacques Seysses of Domaine Dujac, and Aubert de Villaine of Domaine de la Romanee-Conti. Pour démarrer cette 4ème saison de 20 Divin, j'ai choisi de vous emmener à la Foire aux vins en compagnie de Jean-Michel Deluc, maître sommelier, ancien chef sommelier de Drouant et du Ritz à Paris et co-fondateur du Petit Ballon.     Jean-Michel Deluc a en effet été précurseur puisqu'il a créé à la fin des années 90, le 1er site de vente de vins sur internet, Château Online, qui sera revendu dix ans plus tard, avant de lancer en 2011 avec Martin Ohannessian, le Petit Ballon, un groupe qui réalise aujourd'hui 40m€ de chiffres d'affaires.    Il m'a reçu dans sa boutique du 43 rue du Rocher à Paris pour évoquer les pépites de sa sélection  à l'occasion de la Foire aux vins,. After starting his domaine with a small parcel of Gevrey-Chambertin “Bel Air” that was handed down to him through his family, he has progressively grown his portfolio. The wines of Maison Fatien are produced from almost 4 hectares of vineyards, worked exclusively by Charly, and the parcels are spread over prestigious appellations of the Côte de Beaune and the Côte de Nuits: Gevrey-Chambertin, Beaune, Pommard and Volnay. We talk about his philosophy working in the vineyards and the stylistic decisions he makes along the way. He is also a négociant and regularly purchases additional grapes through a very judicious selection process. Benjamin Leroux is the proprietor of the Benjamin Leroux winery located in the town of Beaune, in the Burgundy region of France. Benjamin explains how although his family was not in the wine business, he found himself working in a winery at a young age. He discusses his internships outside of Burgundy, at wineries in Oregon and Bordeaux, before talking about his start as the head winemaker at Comte Armand in the 1990s. Benjamin describes in detail the winemaking techniques he was using to make wine in Pommard during the nineties, and contrasts that with how he makes wine today and for the last several years at his own winery, also named Benjamin Leroux. He discusses what prompted him to make changes to his winemaking, and explains that every vintage must be approached as its own. He also assesses the contribution of his own generation in Burgundy, and talks about the importance of his stint working for Becky Wasserman. Frederic Lafarge operates Domaine Michel Lafarge with his family, with cellars located in the Burgundian town of Volnay, in France. Frederic and his wife Chantal also recently began the Lafarge-Vial domaine, with holdings in the Beaujolais crus of Fleurie, Chiroubles, and Cote de Brouilly. In this interview Frederic goes deep into the explanation of his winemaking for the various crus and grape varieties (including Pinot Noir, Gamay, Chardonnay, and Aligote Doree) that he works with. There are several surprising revelations, and Frederic explains quite well why, for example, he chooses to use stems with Gamay when he avoids them for Pinot Noir, and his thinking about the different crus. This interview comes full circle when Frederic describes how a technique he started using in 2015 is the same method that was used at the family domaine in the early 20th century, before his own father was born.
