Onze Team DutchSail zeilsters zijn terug uit Newport, waar het team de afgelopen week deelnam aan de Women's International Championship. De tienkoppige bemanning van de IC37 boot groeide tijdens het toernooi door veel te leren en steeds beter te worden op het water. De zeilsters bekroonden hun harde werken door de tiende en laatste race van het event te winnen en daarmee de negende plek in het algemeen klassement veilig te stellen. Een mooie afsluiter van een project dat al een aanloop kende van een jaar. We spraken erover met zeilster en initiatiefneemster van dit project Saar van Bemmel. Ein Scharzhofberger Riesling ist eine echte Perle: Ein Liebhaber war unlängst bereit, für eine 0,375-Liter-Flasche Trockenbeerenauslese dieser Lage vom Winzer Egon Müller 16.100 Euro zu bezahlen, wodurch jener zum teuersten Riesling der Welt aufstieg. Die wenigen Milliliter konzentrierten Genusses hat der Käufer sich ordentlich etwas kosten lassen – ähnlich wie der Kaufmann, von dem im Tagesvers die Rede ist. Der war sogar bereit, seinen gesamten Besitz für eine winzige Perle zu verkaufen.Damit ist er eine Metapher für Jesus, der infolge seiner Menschwerdung alles aufgab, was er im Himmel an Vorrechten genossen hatte. Auf der Erde war er dann bereit, mitten in den besten Jahren freiwillig eines blutigen Todes zu sterben – der gesamten Menschheit zugute. Er erkaufte für den teuersten Preis, den es geben kann, restlose Sündenvergebung für jeden, der sie annehmen möchte. Dieser Preis war sein Blut. Es war das Blut eines Reinen, eines Vollkommenen. “He asked me this question because I'm his sister and he loves me.”  Mathematics can often be seen as a solitary endeavour, but as this quote from one of our latest podcast guests show, that is far from the truth. In this episode, we learn how a new proof has developed from one young mathematician talking to his sister – and then collaborating with their father and close family friend. We spoke to Roman Sauer and Uri Bader – and Uri's two children Saar and Shaked – after they had attended a residential research programme at the Isaac Newton Institute where they had worked together and proved a rigidity result around symmetries and group theory. An den Hängen der Saar finden sich teils sehr alte Rebstöcke, die bei fachmännischer Bewirtschaftung international beachtete Spitzenweine hervorbringen. Eine dieser extrem steilen Weinlagen (75 % Neigung!) wartet mit über 120 Jahre alten wurzelechten Rebstöcken auf. Der Spitzenwinzer Roman Niewodniczanski vom renommierten Weingut Van Volxem erklärt, dass Ende des 19. Jahrhunderts Weinbauern dieser Lage den Namen »Gottesfuß« verliehen, weil sie so überwältigt von ihrem Potenzial waren. Gott selbst musste seinen Fußabdruck auf diesem Fleckchen Erde hinterlassen haben – anders konnte es nicht angehen, dass die Rebstöcke dem Boden einen so himmlischen Wein abringen konnten.Und wie recht hatten sie! Der große Gott zeigt seine grenzenlose Kreativität und Finesse in allen möglichen Details seiner Schöpfung – so auch an dieser Stelle. Der Tagesvers sagt, dass er das nicht allein deshalb tut, um seine Genialität zu demonstrieren, sondern auch, damit die Menschen angesichts der Schöpfungsreichtümer unvermeidlich zu dem Schluss gelangen, dass jemand, größer als sie selbst, dahintersteckt. Die früheren Winzer hatten anscheinend keine Schwierigkeit damit, dies anzuerkennen. Und der besagte Niewodniczanski entschied sich dazu, das Kreuz am Gipfel seines Weinberges zu restaurieren, um den Namen »Gottesfuß« auch symbolisch weiterhin zu würdigen.Was geht Ihnen durch den Kopf, wenn Sie Wälder, Blumen und Berge ansehen, Gemüse, Obst, Wein usw. genießen? The artist Betye Saar died last week at the age of 99, just days before her 100th birthday. Saar was famously a leading voice of the Black Arts Movement of the ‘60s and ‘70s, and was known for repurposing found objects that depict harmful Black stereotypes, including ceramic "mammies" she repurposed into sculptures that transform and subvert their original racism. Episode No. 769 features a conversation with Betye Saar recorded in 2016. Saar died on Sunday a few days short of her one hundredth birthday. Saar, known especially for her use of assemblage and her often pioneering address of complicated and often troubling US, and diasporic African and Caribbean histories, was one of the most influential artists of the last 60 years. Generations of artists, including Saar's artist-daughters Lezley and Alison, have found Saar's work foundational. Even though Saar was recognized around the world as among the most influential artists of late-twentieth and early twenty-first century United States, remarkably, shamefully, and revealingly, none of Saar's hometown art museums ever launched a retrospective of her work. Saar was a guest on The Modern Art Notes Podcast in 2016 on the occasion of a survey of her work organized by De Domijnen (which was formerly known as Museum Het Domein) in Sittard, the Netherlands in partnership with Scottsdale (Ariz.) Es gibt einen Moment in jeder Sommelierkarriere, an dem jemand anderes für einen entscheidet, weil man selbst gerade keine Zeit hat. Bei Marco Franzelin war das ein Probeschluck, gereicht von einem Kellner, weil der zuständige Sommelier verhindert war. Der Zufall dieses Glases hat einen jungen Mann, der eigentlich zum Koch und Kellner ausgebildet wurde, in eine andere Laufbahn gestoßen. Ausgebildet hat ihn zunächst Heinz Hanner in Mayerling, einem Ort, der in Österreich eher für Kronprinzendramen bekannt ist als für Weinkarten. Von dort aus ging es über das Restaurant Haerlin und, entscheidender, zu Joachim Wissler ins Vendôme nach Bergisch Gladbach. Dort holte er sich 2016 den Rolling-Pin-Titel als Sommelier des Jahres, ein Jahr später zog Gault&Millau mit derselben Auszeichnung nach. Für einen Sommelier Anfang zwanzig ist das eine Doppelung, die in der Branche nicht viele vorweisen können. 2019 zog es ihn und seine Frau Anna Lena in die Schweiz, ins Schloss Schauenstein bei Andreas Caminada in Fürstenau, ein Haus, das regelmäßig auf den Listen der fünfzig besten Restaurants der Welt auftaucht. Vier Jahre blieb er dort Chef-Sommelier, bevor am 23. Dezember 2023 sein letzter Arbeitstag in Graubünden anstand und schon am 12. Januar 2024 der erste im Waldhotel Sonnora in Dreis folgte. Von einem Drei-Sterne-Haus ins nächste zu wechseln, mitten im Winter, mit Frau und ohne nennenswerte Pause dazwischen, sagt wahrscheinlich mehr über den Mann aus als jedes Adjektiv, das man ihm anheften könnte. Im Sonnora arbeitet er nun mit Küchenchef Clemens Rambichler und dessen Frau Magdalena Rambichler zusammen, die selbst über Jahre Chef-Sommelière des Hauses war, bevor sie in die Rolle der Gastgeberin und Mitinhaberin wechselte. Zwei Menschen im selben Fach am selben Tisch, das dürfte für Diskussionsstoff sorgen, der einem Außenstehenden verborgen bleibt. Marco Franzelin selbst beschreibt seine Rolle im Sonnora nüchterner, als man erwarten würde: Wein sei in allererster Linie als Getränk gedacht und nicht als Speisenbegleiter, hat er einmal gesagt, und dass er sich freue, wenn Gäste gezielt Flaschen von der Karte bestellen statt nur der Weinbegleitung zu folgen. Das ist eine andere Ausgangsposition als die vieler seiner Kollegen, die den Wein primär als Verlängerung des Tellers verstehen. Wer mit ihm über den Keller des Sonnora spricht, redet zwangsläufig über gereifte Bestände von Mosel, Saar und Ruwer, die dort seit Jahrzehnten liegen und auf jemanden warten, der sie richtig einordnet.

Efforts to improve metabolic health through dietary interventions often come with trade-offs. Some approaches that reduce obesity or extend lifespan in laboratory models can also negatively affect other tissues, including bone. One example is sulfur amino acid restriction (SAAR), a diet low in methionine and lacking cysteine that has repeatedly shown strong anti-obesity effects in animal studies. However, despite these promising metabolic benefits, SAAR has also been associated with reduced bone mineral density, weaker bones, and increased marrow fat accumulation. This has led researchers to ask whether the metabolic benefits of SAAR can be separated from its harmful skeletal effects. A new research paper was published in Volume 18 of Aging-US, titled “D, L-Buthionine-(S, R)-sulfoximine recapitulates the anti-obesity effects of sulfur amino acid restriction without the associated deleterious effects on bone in male mice.” The researchers investigated whether those metabolic benefits could be achieved without the same harmful effects on bone. The study was led by first author Naidu B. Ommi and corresponding author Sailendra N. Nichenametla from the Orentreich Foundation for the Advancement of Science Inc., in collaboration with Dwight A. L. Mattocks from the same institution and Mark C. Horowitz from the Yale University School of Medicine. I cannot emphasize enough - this is a major issue in America that not enough people know about. We are asking all parents to please be on guard – check in with your kids and monitor their internet usage.
