Thibaut Hurter, jeune cuisinier côte-d'orien, a remporté le 4e prix du Challenge Foie Gras des Jeunes Créateurs 2025. À seulement 22 ans, Thibaut a déjà travaillé dans de nombreux restaurants bourguignons à Meursault, Beaune ou encore Verdun-sur-le-Doubs. En perpétuelle recherche d'expérience, il a également cuisiné au collège Monge de Beaune et à la Table des Lumières à Disneyland Paris. Dans cet entretien, Thibaut revient sur son expérience au Challenge Foie Gras des Jeunes Créateurs, son parcours culinaire et ses futurs projets.

Kurz bevor die deutschen Truppen 1940 in Frankreich einmarschierten, beendete ein junger, algerisch-französischer Schriftsteller die Arbeit an seinem ersten Roman. Zwei Jahre später, am 19. Mai 1942, veröffentlichte Gallimard den Roman trotz deutscher Besatzung in Paris. Das Buch wurde als literarische Sensation gefeiert und avancierte zu einem der meistgedruckten französischen Romane des 20. Jahrhunderts. Das ist die Geschichte von «L'étranger», dem ersten Roman von Albert Camus. Er traf mit seiner Geschichte über den gleichgültigen Mörder Meursault den Nerv seiner Zeit. Seine Generation war tief desillusioniert durch die Weltkriege und den scheinbar unaufhaltsamen Aufstieg des Totalitarismus. Heute, 85 Jahre später, stehen wir wieder an einem ähnlichen Punkt. Wieder sind Ideale vom Sockel gestürzt, koloniale Konflikte flammen wieder auf, wieder scheint der Aufstieg des Totalitarismus nicht aufzuhalten. Albert Camus sah 1940 den Menschen in einer absurden Situation: Wir Menschen sehnen uns nach Sinn, die Welt aber ist sinnlos, ja sinnwidrig. Camus vergleicht den Menschen deshalb mit Sisyphos, der zur Strafe in der Unterwelt einen Felsbrocken einen Berg hinaufwälzen muss. Kurz vor dem Gipfel des Bergs entgleitet ihm der Brocken und rollt wieder ins Tal. Deshalb steht Sisyphos jeden Tag vor derselben sinnlosen Aufgabe. Es ist eine absurde Arbeit. Camus sagt nun aber, der Ausweg liege darin, dass Sisyphos diese Absurdität seines Tuns akzeptiere und seine Erfüllung im täglichen Kampf mit seinem Felsbrocken sehe. Er schreibt deshalb: «Der Kampf gegen Gipfel vermag ein Menschenherz auszufüllen. Wir müssen uns Sisyphos als einen glücklichen Menschen vorstellen.» Und heute, 85 Jahre später? L'histoire commence bien avant la publication du chef-d'œuvre d'Albert Camus. Nous sommes en 1939, à Alger, dans la chaleur écrasante d'un après-midi d'été. Un fait divers banal, presque insignifiant, attire l'attention du jeune journaliste qu'est alors Camus : un ouvrier européen tue un Arabe sur une plage. Un coup de feu, une querelle autour d'un couteau, du soleil, du silence. L'affaire passe brièvement dans les journaux. Pourtant, elle marquera profondément l'écrivain.Car ce meurtre, Camus ne le retient pas pour sa violence, mais pour son absurdité. Ce crime sans haine, sans motif clair, devient pour lui le symbole d'une condition humaine dénuée de sens. Il en fera le cœur de L'Étranger, publié en 1942, au cœur de l'Occupation. Son personnage principal, Meursault, tue “un Arabe” sur une plage d'Alger, sans raison véritable. “C'était à cause du soleil”, dit-il au procès. Cette phrase glaciale, déroutante, fascine depuis plus de 80 ans.Mais ce que l'on sait moins, c'est que ce meurtre fictif s'inspire d'un événement réel. Des chercheurs ont retrouvé la trace d'un procès en 1939 à Alger, celui de Pierre Cordier, un métropolitain accusé d'avoir tué un jeune Algérien sur la plage de Bouisseville. Camus, alors reporter au journal Alger Républicain, avait couvert des affaires semblables : il observait comment la justice coloniale traitait différemment les Européens et les Arabes. L'injustice systémique, l'indifférence du tribunal, la distance morale — tout cela deviendra la matière de L'Étranger.Le roman n'est donc pas un simple drame existentiel : c'est aussi une critique voilée du système colonial. Meursault est jugé moins pour son crime que pour ne pas avoir pleuré à l'enterrement de sa mère. Comme dans les tribunaux de l'époque, la vérité importe moins que les apparences. Le meurtre devient secondaire, presque accessoire, au profit d'un procès moral.Des décennies plus tard, des historiens et écrivains algériens, comme Kamel Daoud dans Meursault, contre-enquête, donneront un nom et une voix à “l'Arabe” resté anonyme. Ce roman-réponse rétablit la part manquante de l'histoire : celle de la victime effacée.Ainsi, derrière le chef-d'œuvre de Camus se cache un fait divers oublié, un reflet de la colonie, du soleil et de l'absurde. Wine Talks is deeply connected to the Judgement of Paris. Not only were the Barretts good customers of our wine shop, Warren Winiarski stayed in our home on a trip to Los Angeles. The industry was completely different then. California wine had always been a thing, particularly before prohibition. It had even made its way to the east coast in the 1800's. But then came that fateful day in Paris at the Intercontinental Hotel, the Americans won. In Paris, there was a journalist named George Taber. He had heard about this tasting pitting California's boutique gems against the equivalent (at least from a grape standpoint) French stars. Sunny is the Founder of two wine bars, Diogenes The Dog and Aspen & Meursault, and the author of a newly published book, called a "Cynic's Guide to Wine".Sunny's academic background is in engineering and that made him continually question his wine education once he started his career in hospitality. Finding wine textbooks and answers from people in the trade insufficient, Sunny started researching the scientific principles that answered his questions. The book is the output of his research and uses science to challenge many assumptions and ideas that have been handed down generations in the wine trade.So the focus of this episode is wine science as we investigate what TRULY impacts the flavour of your favourite wines. We also taste a wine on the episode, applying Sunny's frameworks and principles! Dan and Mark. Mark McWilliams from Arista Winery is our guest on this edition of California Wine Country with Steve Jaxon and Dan Berger. Dan's weekly cellar dweller bottle is a 2022 Chenin Blanc from Les Atlètes du Vin in France. $15 a bottle at Bottle Barn. Chenin Blanc is coming back. You can get 7-9 tons an acre of Chenin Blanc and it makes nice wine. Mike says it's refreshing. Mark's parents started as grape growers when he was young. They grew a lot of Cabernet. His mom lived in Burgundy after college and got to know Pinot Noir. They family felt a calling to make wine. In 2002 they started the Arista brand to make wine. They use their own grapes and grapes grown elsewhere. Their Chardonnays have been very highly rated. In December they did a 10-year retrospective tasting of their Chardonnay. In 2013 their new winemaker Matt McCourtney was on the job. Now those wines are aging very well and still have years to go. Arista's style has been to focus on the fruit, not on manipulating the wine to make something that the grapes don't want to do. Acidity is always front and center in their wines. They also have the 2021 Russian River Valley Chardonnay. The appellation wines are the top of their production. Wines like this which are not single-vineyard estate wines, are put together on purpose to combine elements ideally. This wine has so much complexity that it promises to age well. Arista is the shining star of California Chardonnays Steve Jaxon quotes Wine Spectator, which declared, "Arista Wines are the shining star of California Chardonnays." Mark says that's because they use the best fruit and they have the best staff. There is a hazelnut component in the flavors that Dan detects. It resembles Meursault which is a district in Burgundy. The wines have trace flavors of hazelnut. There is also a lemon peel component in the nose. But the wine is only 3 years old. "A great Chardonnay like this really deserves time in bottle," says Dan "Lay It Down" Berger. Mark declares that there is world-class Chardonnay coming from California and Oregon and that Burgundy no longer is the only place that makes the best wine from that varietal.

Doublé historique, en cette année 2024, pour les auteurs du continent africain qui ont remporté les plus célèbres récompenses du milieu littéraire français : le prix Goncourt qui récompense «Houris», le troisième roman de Kamel Daoud et le prix Renaudot décerné à Gaël Faye pour «Jacaranda». Deux livres qui mettent en lumière les périodes sombres de l'Algérie et du Rwanda dans les années 90. Reportage à Paris au restaurant Drouant avec les lauréats, le jour de leur consécration. Kamel Daoud, né en1970 à Mesra, en Algérie, est un écrivain et journaliste algérien d'expression française. En 1994, Kamel Daoud commence sa carrière journalistique au Quotidien d'Oran, un journal francophone algérien. Parallèlement à sa carrière de journaliste, Kamel Daoud se lance dans l'écriture littéraire. Son premier roman, Meursault, contre-enquête (2013), est une réécriture du célèbre L'Étranger d'Albert Camus, vue du point de vue de l'Arabe anonyme tué par Meursault. Ce roman lui vaut le Prix Goncourt du premier roman en 2015, ainsi que le Prix François Mauriac et le Prix des Cinq continents de la Francophonie.En 2024, Kamel Daoud publie Houris, une œuvre qui explore les thèmes de la religion, de la liberté et de l'identité. Ce roman est salué par la critique pour sa profondeur et son originalité. Daoud continue de s'interroger sur les questions existentielles et sociétales, offrant à ses lecteurs une réflexion profonde sur le monde contemporain. From The Wine Conversation (wine-conversation.com)"Episode Summary: In our latest 10-Minute Masterclass, Jasper Morris MW, author of “Inside Burgundy,” takes a look at the appellation of Volnay, which is situated in the Côte de Beaune, a couple of villages south of Beaune itself. Historically, Jasper explains, Volnay has greater significance than most Côte d'Or villages, as the Dukes of Burgundy built a summer palace there – many of the vineyards have the title “Duc” in their name.Volnay's terroir is a mix of limestone and clay, but Jasper explains that Volnay is known for its more “active limestone, which means it comes through and gets into the vines itself and the wines, making them lighter, fresher and more perfumed.” There are more Premier Cru Volnay vineyard – 115 hectares, than Village Volnay, which has 98 hectares. The appellation runs from Pommard in the north to the south of Meursault, where the reds are known as Volnay Santenots.Some of the most well-known vineyards are around the village: Clos des Ducs, Clos de la Caves des Ducs, Clos du Château des Ducs, and at the southern end above the main road, the D973, you have Clos des Chênes, and Taille Pieds, whilst below is one of the greatest, Cailleret (of which, someone in the 17th century said, “If you don't have vines in Cailleret, then you don't know what Volnay is.”)There are not many producers in the village of Volnay itself, though some have vineyards there, such as Domaine Lafon. The name you will come across most will be the Rossignol family, in one form or another. Blue-chip names found there include Marquis d'Angerville, Domaine Michel Lafarge, Domaine de la Pousse d'Or, and Domaine De Montille. Jasper's tip for up-and-coming producers are Thomas Bouley and his cousin Kieran Bouley, as well as Georges Glantenay, and Bernard and Thierry Glantenay. “The one I like a lot and is excellent value and under the radar, is Domaine Buffet,” Jasper concludes.Volnay produces wines slightly lighter in colour, but “it's the perfume that makes Volnay so special,” Jasper notes. He advises, “one of the things I find particularly interesting is when the wines are young Volnay seems nice, or very nice, in the hands of a great practitioner, but if you happen to have a bottle of 30 to 40 years of age and you drink it in a mix of really top wines from the Côte de Nuits, Grands Crus from famous villages, the Volnay really holds up, it is more exciting and hedonistic with age.”Vintages to look out for: “2017 is absolutely delicious now,” he says. Jasper also suggests 2007,2010 and 2011 for being very attractive now. L'émission 28 Minutes du 02/09/2024 Kamel Daoud, l'écrivain qui brise le tabou de la guerre civile algérienne Après “Meursault contre-enquête” (Actes Sud, 2014), salué par le prix Goncourt du premier roman, Kamel Daoud signe “Houris” (Gallimard), une plongée au cœur de la mémoire de la guerre civile algérienne des années 1990. Le personnage principal du roman, Aube, est une jeune femme rescapée d'un massacre perpétré par des islamistes. Défigurée et dans l'impossibilité de parler, elle porte en elle la douleur et le silence de ces années de guerre — qu'il est interdit d'évoquer sous peine d'être puni par la loi. Enceinte, elle s'adresse à l'enfant qu'elle porte pour lui raconter la destruction de toute sa famille. Journaliste, Kamel Daoud a lui-même couvert la guerre civile algérienne pour "Le Quotidien d'Oran", dont il a été le rédacteur en chef. Ce deuxième roman continue d'explorer des thèmes qui lui sont chers : la place des femmes et celle de la mémoire dans la société algérienne. Victoire de l'extrême droite en Thuringe : un pas de plus vers la chancellerie allemande ? C'est la première fois depuis la Seconde Guerre mondiale qu'un parti d'extrême droite arrive en tête d'un Land lors d'une élection régionale en Allemagne. L'AfD, “Alternative pour l'Allemagne”, est sorti grand vainqueur ce dimanche 1er septembre en Thuringe avec 32,8 % des voix. Une progression de plus de neuf points par rapport à 2019. En Saxe, le parti talonne de près les conservateurs. En revanche, la coalition menée par Olaf Scholz recule significativement, dans la lignée des élections européennes.
