Nada is a well-known name in the world of sake. Almost a brand, it is associated with the area whose sake dominated the Edo (Tokyo) market in the later part of the Edo period (1603-1868), and it is still the largest sake production area in Japan.  Despite this track record, “Nada sake” can sometimes be reduced to an association with “Industrial sake” and carry a slightly negative image. We think it is important to set a few facts straight! In this episode Andrew Russell, sake brewer at the iconic brewery Kenbishi, John Gauntner and Sebastien Lemoine discuss Nada and its sake: the area's boundaries (across 3 cities today) and history, the sake style, the huge contribution it made to the development of the sake brewing industry (processes, tools, sakagura design). That history was rough at times and Nada breweries last showed their strength and resilience at the occasion of the 1995 Hanshin earthquake. It led to deep changes in the area. Nada breweries can make any sake, and it should not be a surprise that Hyogo (including 9 Nada breweries) collected the largest number of gold medals at the New Sake Appraisal Competition in 2024. Andrew Russell is originally from Scotland, but has been living and brewing sake in Japan for more than 8 years. In winter, Andrew is busy brewing sake from Oct to Mar each year, but during the off-brewing season, he gives excellent Sake tours in the famous brewing region of Nada in Hyogo. This is the third sake brewing area in Japan where he has worked with a local brewer.Originally from Scotland, Andrew has a MA in Japanese studies and has worked in 3 sake breweries in Okayama, 3 in Hiroshima and now 3 in Nada so he has a deep understanding and appreciation for Sake in Japan. If you have a gas car, you never really need to double-check which gas station you go to when you fill up. Every gas station in North America is compatible with every personal vehicle. This standardized fuel network enables our gas-driven transportation system in a way that most of us don't notice on a day-to-day basis.If you have an electric vehicle, though, you do notice this. Or rather, you notice that a similar network is missing. There are currently 3 different charging standards for EV's in the US, so drivers have to routinely check maps to find compatible chargers or purchase and travel with expensive adaptors. The lack of charger standardization and availability has stood as one of the larger barriers to EV adoption in the US, which currently sit at a paltry 6% of total vehicle sales. This needs to change quickly in order to meet the ambitious goals set by the Biden administration and car manufacturers and to eliminate the use of fossil fuels as quickly as possible. Fortunately, the majority of the major US-based automakers announced this summer that they would be transitioning to Tesla's North American Charging Standard (NACS) by 2025, opening a path to total standardization across the US EV charging network. This week, we're diving into how and why this standardization process unfolded and why technical standards matter when it comes to technological transformation. Jim made his debut on TWTT [The Project] back in September 2020, interpreting for the session with Yamada Shoten from Gifu Prefecture. He then went on to co-host and interpret for a number of TWTT sessions showcasing Yamaguchi breweries. He also interpreted for the Meet the Artisan session featuring Hagi potter, Hideo Hadano, in 2021. Jim, originally from Kansas, USA, is a translator, writer, and sake lover who has lived in Yamaguchi Prefecture since 2004. He is also the co-host of the super informative and sake-geek Podcast: Sake Deep Dive, (which he hosts alongside former guest on TWTT Podcast [episode 2], Andrew Russell. He's an SSI certified international kikizakeshi, a Certified Sake Professional, and a Shochu Navigator as well. "Innovation" is one of those words that has, unfortunately, been used so frequently as to almost be without meaning. What began as an economic term to describe productivity gains from technology, has morphed into a catch-all for anything new or different, regardless of whether it improves our lives or not. The pursuit of this nebulous idea of innovation as an ultimate goal has crowded out much of the important, less exciting work that keeps our world functioning. We idolize "innovators" and "disruptors", but undervalue the simple, daily tasks of maintenance necessary for the upkeep of both our physical and digital infrastructure. Kimoto: Raising Wee Beasties sees Andrew Russell and Jim Rion discuss the venerable kimoto method of making the seed mash for sake brewing, and hopefully clear up some common misconceptions about it and its close relative of yamahai. Recommended Sake in this Episode: Andrew: Tamagawa Kimoto Junmai Stork Label Jim: Nakashimaya Kimoto Junmai Chokarakuchi Useful vocabulary for this episode: Yamaoroshi / Motosuri: The iconic “pole mashing” that everyone imagines for kimoto starter. Two kurabito stand on opposite sides of a wooden hangiri tank and mash rice, rice koji, and a bit of water into a paste. The goal is to help physically kickstart the koji's primary job of saccharifying rice. Sodatemoto: Another name for the kimoto-kei family of starters, it means “nurtured starter,” or “raised starter.” Namamoto: In kimoto-kei, after the starter has gone through lactic bacterial fermentation but before it starts yeast fermentation, it was once called 生 nama. The character can also be read “ki.” Utase: A stage of kimoto-kei starters in which the saccharified mash is left at low temperature to encourage bacterial fermentation. A key part of the process.

They also give some insight into how it's made, and how to know which ones are worth trying. Lasted from 1942 to 1992. Now, many futsushu labels call back to this system with 特撰 Tokusen, 上撰 Jousen, and 佳撰 Kasen.
