Fennel, Tomato & Cucumber Salad INGREDIENTS: 1 large fennel bulb, sliced thin 2 Persian cucumbers, sliced thin ½ red onion, sliced thin 2 cups cherry tomatoes, cut in half 1 cup mint, minced 1 tablespoon dried oregano ¼ cup apple cider vinegar ¼ cup orange juice DIRECTIONS: In a bowl combine the onion with the vinegar, orange juice and crushed oregano, let sit for 20 minutes. Combine the fennel, tomato, cucumber and mint. Toss well and adjust seasoning to taste. Curried Carrot & Parsnip Soup INGREDIENTS: 4 cups carrots, diced 2 cups parsnips, diced 1 cup fennel or celery, sliced ½ onion, diced 3 garlic cloves, peeled 1 tablespoon curry 2 cups coconut milk 4 cups vegetable broth 1 tablespoon nutritional yeast Pepper, to taste Dukkha, to garnish DIRECTIONS: Heat a pot at medium high heat and sprinkle with some water, add the onion, fennel/celery and garlic. Cook until golden brown, sprinkle with more water if needed to prevent the vegetables from burning. Add the carrots and parsnips, cook for 5 more minutes. Add the curry powder and toast for a minute to release all the aromas from the spices. Pour the coconut milk and vegetable broth. Once the soup boils add nutritional yeast and pepper and reduce the heat to simmer for 5 minutes or until all the vegetables are soft. Blend until smooth and serve topped with dukkha.

Strawberry, radish and cucumber salad with mint dressing SERVES 4 PREP TIME: 15 MINUTES COOK TIME: NIL FOR THE DRESSING: 1 cup loosely packed fresh mint leaves, washed and dried ½ tsp honey 3½ tbsp freshly squeezed lemon juice 3½ tbsp extra virgin olive oil ¼ tsp salt FOR THE SALAD: 250g (1 punnet) strawberries, washed, hulled and sliced 1 medium-sized telegraph cucumber, peeled, deseeded and sliced 1 cup sliced radishes (about a small bunch, depending on size) 150g feta, crumbled small mint leaves, for garnishing Sweet, crunchy and refreshing, with creamy, salty crumbs of feta and a hint of heat from new-season radishes, this is a complete pick-me-up. It's best enjoyed soon after making. Make the dressing first: put all the ingredients in a blender or small food processor and whiz until smooth. Taste for seasoning and set aside. Tumble the sliced strawberries, cucumber, radishes and crumbled feta into a serving bowl. Drizzle over the dressing and toss gently. Garnish with mint leaves and serve. Zesty Italian Cucumber Tomato Salad Ingredients ▢ 3 cucumbers ▢ 1 chopped tomato ▢ 1/4 fined diced onion ▢ 1/4 cup of green olives ▢ 1/4 cup chopped nitrate free pepperoni ▢ 1/8 cup Parmesan cheese ▢ 1 tbsp. oregano ▢ 1/4 tsp black pepper ▢ Italian dressing* you want enough to coat and marinade the salad (This is my recipe for zesty Italian dressing) 1 tsp Basil, dried 1 tsp Garlic powder 1 tsp Onion powder 1 tsp Oregano, dried 1 tsp Parsley, dried 2 tsp Honey 1 tbsp Lemon juice 1/4 tsp Black pepper, ground 1/4 tsp Red pepper 3/4 tsp Salt 1/2 cup Olive oil, extra virgin 1/4 cup White wine vinegar 3 tbsp Parmesan Instructions ▢ Spiralize your cucumbers, and add to bowl ▢ Chop tomato and onion, and add to bowl ▢ Add all remaining ingredients and mix ▢ Let stand in the refrigerator for an hour before serving Notes I like to use homemade dressing but if you buy store bought, just check to make sure it contains good oils and is without high-fructose corn syrup. If you don't have a vegetable spiralizer, you can easily serve this with diced cucumbers. We have used ranch dressing instead of Italian when I know I am serving kids because ranch is such a kid favorite. (Who am I kidding, it's an adult favorite too!)
