Isabel González y Alberto Fernández hablan con Andrés Madrigal sobre cómo limpiar y usar correctamente la placa de inducción en vacaciones. En esta entrega de la sección de gastronomía en esRadio, el colaborador Alberto Fernández aborda un tema muy práctico para la época estival: el correcto uso y mantenimiento de las placas de inducción. Durante las vacaciones de verano, es muy común alquilar apartamentos o visitar casas donde estas cocinas vitrocerámicas se encuentran deterioradas, con rayaduras o manchas blancas difíciles de quitar. Para evitar estos problemas, Fernández comparte los valiosos consejos de un decálogo elaborado por el reconocido chef Andrés Madrigal, quien en su día obtuvo una estrella Michelin en Madrid y que ahora, ya retirado, sigue ofreciendo excelentes recomendaciones culinarias a través de sus redes sociales. El primer consejo del decálogo resulta sorprendente para muchos: colocar papel de cocina o de horno sobre la zona de cocción antes de poner la sartén. Dado que la inducción funciona mediante un sistema de electromagnetismo que solo calienta los recipientes aptos de metal y no la superficie en sí, el papel no se quema. Este sencillo truco no solo protege el cristal de posibles arañazos, sino que también facilita enormemente la limpieza al recoger las salpicaduras de grasa o aceite. Asimismo, el colaborador recomienda bajar la potencia de la placa un par de puntos en cuanto los líquidos o el aceite comiencen a hervir, garantizando una cocción constante y eficiente. Otra de las prácticas habituales que dañan las placas es inclinar la sartén para flambear los platos, lo que puede provocar golpes y rozaduras en el cristal. Fernández explica que el flambeado se produce por la temperatura del alcohol, por lo que basta con calentarlo y arrimar un mechero o cerilla, sin necesidad de mover el recipiente de su sitio. Además, advierte del peligro de colocar una sartén vacía a la máxima potencia desde el primer instante. Este fuerte choque térmico deforma el metal de la base, haciendo que los recipientes queden combados y bailen sobre la placa, lo que perjudica la transmisión del calor. Lo correcto es precalentar a fuego medio antes de añadir la grasa y subir la temperatura después de forma progresiva. El decálogo también incide en la importancia de aprovechar el calor residual de las placas de inducción. Dado que estos dispositivos calientan todo el recipiente de manera uniforme, se aconseja apagar la zona de cocción durante los dos últimos minutos de elaboración en platos como arroces, salteados o salsas para pasta. Por otro lado, es fundamental elegir el tamaño adecuado de los utensilios. Colocar una sartén pequeña en un fuego demasiado grande hace que la placa desperdicie energía al calentar toda la zona, mientras que usar un recipiente excesivamente grande en un fuego pequeño provoca que solo se caliente el centro, corriendo el riesgo de quemar la comida por el medio y dejar los bordes crudos. En lo que respecta a la higiene, la regla de oro es realizar la limpieza en frío y nunca mientras la placa permanezca caliente. Para mantenerla impecable y brillante, se deben emplear bayetas suaves y jabón neutro, pudiendo añadir unas gotas de vinagre para un acabado reluciente, descartando por completo el uso de estropajos que puedan rayar la superficie. De igual modo, Fernández destaca que la base de las sartenes debe estar totalmente seca antes de cocinar. El agua acumulada entre el cristal y el metal genera un vapor a alta presión que hace que el recipiente patine y deje unas manchas blanquecinas indelebles muy difíciles de eliminar. Por último, el experto subraya que bajo ningún concepto se deben arrastrar las sartenes sobre la placa, ya que cualquier pequeño grano de sal o suciedad puede actuar como un abrasivo y rayar el cristal de forma permanente. Ante la consulta de la presentadora sobre las nuevas placas de inducción total o flexible —que permiten cocinar en cualquier punto de la superficie—, Fernández se muestra entusiasmado con esta tecnología. El espacio concluye con la promesa de abordar en una próxima intervención las claves para elaborar un buen arroz tipo paella empleando cocinas de inducción, un reto culinario muy demandado por los oyentes.

Sometimes called the 'couch potatoes of the sea', nurse sharks are famous for their laid back attitude to life spending most of their days cosied up in piles, napping. But their gentle, docile nature doesn't make them any less special. In this episode, we sit down with SOSF project leader and PhD Researcher Sergio Madrigal Mora - who has spent a lot of time hanging out with the Labradors of the shark world - to discuss how nurse sharks are perfectly adapted to life in the tropics and why they form 'cuddle huddles' on the sea floor. And, we learn more about Sergio's research into the influence of changing temperatures on the movements of Pacific nurse sharks in Costa Rica's St Elena Bay. On July 5, 2000, Ricardo Aguilera was shot and wounded in a gang related drive-by shooting in Los Angeles, California. Several witnesses identified 25-year-old Rafael Madrigal Jr. in a photo lineup as either the shooter or driver of the car involved. Those witnesses testified against Rafael at trial. Rafael, who maintained his innocence throughout the ordeal, had been at work at Proactive Packaging, a 50-minute drive away, at the time of the shooting. A co-worker could have confirmed his alibi, and his boss could have testified that he was certain Madrigal was at work because he was the only one who knew how to operate one of the machines in the production line. But Rafael’s defense attorney only called a single co-worker to the stand at the trial, and did not present a recording of Rafael’s co-defendant admitting that Rafael was not involved.
