GRAIN FREE GLUTEN FREE PIZZA EVEN YOUR MEAT EATING FRIENDS WILL LOVE THIS RECIPE! Ingredients: Crust: 1 1/4 cups almond flour 3/4 cup arrowroot 1 tsp. baking powder 1 tsp salt 1 tsp dried oregano 1 tsp dried basil 1 tsp dried parsely 1/2 tsp garlic granules 1/4 tsp crushed red pepper flakes 1/4 tsp ground black pepper 2 Tbsp of chia seeds soaked in 2/3 cup water & let sit for 15 mins 1/4 cup coconut or almond milk Directions: Preheat the oven to 425 F. Grease a round pizza pan or baking stone-use parchment paper. Combine wet ingredients (chia seeds & milk) mix all dry ingredients together in a separate bowl. Add dry and wet ingredients together and mix the batter, It will be a bit runny and this is normal. Spread onto pizza pan and bake for 20-25 mins depending on how crispy you like your pizza crust. Top pizza with sauce and toppings of your choice and return to the oven and bake for 5-10 mins until the cheese is melted or put on a broil to lightly brown top and melt cheese. Don't walk away...leave the oven door ajar a bit. Toppings of your choice: (this is what I like) Miyokos vegan Mozz or your fave vegan mozzarella shreds. Saute mushrooms with fresh crushed garlic and sliced red onion. Happy Thanksgiving week! In celebration of this time of gratitude and people celebrating with family and friends, I am taking a moment on this week's podcast to share all I am thankful for and especially focusing on my relationship with my bestie, Lizzy.  We've been through some thick and thin moments together through teaching, Covid, pregnancy and births, and all the while enjoying a lot of talks about health and our relationship with food.  You see Lizzy was one who was truly there for me the moment I found out two years ago this week that I was being diagnosed with preeclampsia at 35 weeks pregnancy and would have to induce our son 5 weeks early. I didn't take it well at first and there's more to that in Episode 1 where I share my weight loss story. To recap for you, that scary moment in the hospital where I wasn't sure what would happen next is what brought me to going to the Institute of Integrative Nutrition for answers to weight loss questions, finally understanding why I've been overweight my whole life, and wanting to become a weight loss coach.  When you have a best friend by your side as you go through a transformation, it's not only reassuring when things get tough, but it's also affirming when someone is there telling you, “Yes, I've been there and I get you.” When working on your weight loss journey, you have to be your own accountability coach, but as social beings we also crave the chance to share the ups and downs. We know that melatonin has antioxidant properties and even anti-inflammatory activity as well.   But, all of these ideas and information are ultimately confusing, to say the least. Throughout the years, she has been active as a functional medicine clinician in clinical trials and in her own practice (Food & Spirit™), which has now become oriented towards groups, workshops, and retreats. She is the author of six consumer books on wellness topics, four book chapters, and fifty scientific publications. Her academic background is in nutrition science, including a Master of Science (M.S.) degree in Human Nutrition and Dietetics from the University of Illinois at Chicago (1995) and a Doctorate (Ph.D.) in Medical Sciences (nutrition focus) from the University of Groningen in the Netherlands (1999). Kim is a former teacher, having taught high school band and colorguard for 17 years, but now she teaches about her other passion, whole food plant based eating. She started Simply Plant Based Kitchen because she wanted to help busy & overwhelmed people learn how to make whole food plant based eating simple, easy, and delicious so they can feel amazing and have their best health. Her first attempts at whole food plant based eating 10 years ago were not successful and only lasted a few months. Even though she lost weight and felt great, she didn't have enough simple & easy recipes that tasted good to make it last. As a busy mom, working 60+ hours a week, she was discouraged when so many recipes would take hours, have ingredients she'd never heard of, and would end up tasting terrible. Not a recipe for success. Slowly the vegan processed foods crept back in, as well as dairy, and then the wheels fell off and she was back to eating the Standard American Diet. And all the weight came back and more. The turning point was when her father passed away from Alzheimer's. He also had high cholesterol, high blood pressure, prostate cancer, & heart disease requiring quadruple bypass. Kim decided she didn't want this to be her future or the future of her kids' and husband. She was already experiencing brain fog, was overweight, had joint pain, and was tired all the time. She went back to all the research that said a whole food plant based diet was the best way to improve health, prevent and even reverse chronic disease, and to lose weight. But even so, she was still hesitant to go back to whole food plant based eating because of her failed attempt several years prior. She knew she would have to do things differently this time and not treat it like a diet, but a lifestyle. She took a “Progress Not Perfection” approach and learned to make simple & fast recipes that tasted great with normal ingredients. It was a lot of trial and error, but she knew she couldn't give up because her life was at stake. After just 3 months, she lost 17 pounds & 20 inches, had more energy, the brain fog lifted, her joints stopped hurting, her mood improved and she felt 10 years younger! This inspired her to share it with everyone she could! So she quit her teaching job and started her business to help people skip the struggle she went through and get right to loving a whole food plant based lifestyle to improve their health, lose weight, and feel AMAZING! She's coached thousands in her program Plant Powered Life and will be coming out with a book in 2023 to inspire even more people to take control of their health with the power of plants! Kim has received her Plant-Based Nutrition Certificate through eCornell and the T. Colin Campbell Center for Nutrition Studies, as well as her Health Coaching Certification from the Institute of Integrative Nutrition.
