Learn about the surprising origins of Pollyanna's award‑winning Lexical Gap IPA, freeze‑distilled Eisbocks, and Snickers‑inspired pastry stout.Brian Pawola, co‑founder, head brewer, and distiller at Pollyanna Brewing Company, shares the story behind Pollyanna's most unique beers. In particular, he discusses the freeze distilling involved in crafting their Jötunheimr Eisbock Lager, the reluctance behind creating the award-winning Lexical Gap West Coast IPA, and what goes into creating their Dr. Pangloss Black IPA. He also discusses his German brewing education and his approach to balancing bitterness in high‑ABV beers. After the beer break, Brian shares some of Pollyanna's Bourbon Barrel Aged Imperial Toasted Marshmallow Fun Size pastry stout with peanut, coconut, vanilla bean, sea salt adjuncts, while sharing his thoughts on how to brew with lactose appropriately. Then, he discusses Pollyanna's expansion into distilling, the difference between brewing and distilling, and how much overlap there is between beer drinkers and consumers of spirits. Plus: why whiskey comes out clear from the barrel, where the color of bourbon comes from, and why roasting coffee is the next logical step in Pollyanna's evolution.Learn more about Pollyanna Brewing Company and its three locations in Lemont, St. Charles, and Roselle on their website at https://pollyannabrewing.com/ —You can learn more about Crafty Brewers and get in touch with us on our official website, https://craftybrewerspod.com Crafty Brewers is a production of Quantum Podcasts, LLC.
Kitchener, ON is a tight-knit brewing scene, and one man has been a pillar of the community for around a decade now. Rob Hern launched Short Finger Brewing in 2019 after running a successful home brew shop out of the same space, and he jumped back on the pod after two years to catch Cee and Nate up. They touched on his love for his "bastard Gueuze", why he transitioned from a home brew shop to a brewery, his connection with Bebo from Third Moon, how he curates his taproom lineup, the full story behind Pulp (his legendary collab with the now-defunct Barncat Artisan Ales) and successful launch event, his Eisbock collab with the also now-defunct Half Hours On Earth, his relationship with Arabella Park, the story behind their flagship Lando, and they also talked about the Short Finger x BAOS collab for the BAOS 10th Anniversary this spring. They got into five killer beers - Lil' Sippy mixed fermentation session saison collab with Escarpment Labs, True Believer Pale Ale, Existential Risk golden sour aged in peach brandy barrels, Fresh Hell Helles Lager, and Lando (AI) variant, their neutral oak blended barrel-aged farmhouse "bastard" Gueuze. This was fantastic - cheers! BAOS Podcast Subscribe to the podcast on YouTube | Website | Theme tune: Cee - BrewHeads

We made it to 150 in the Adjunct Series, y'all! Almost two years exactly to the recording date, we finally had Andrew Silver from Kingston, ON's Fine Balance back on the pod. We caught up on what's been happening the last two years, we went in-depth into their third-anniversary beers (all 9 of them!), we discussed the value of joining provincial bodies like the Ontario Craft Brewers Association, the pros and cons of getting SKUs in the LCBO, how breweries can survive "in this economy", and how to appeal to craft beer drinkers in every segment of the market. We got into their Bene Pilsner collab with Bar Volo, Single Pop IPA with Badlands, Double Pop Double IPA with Town, and Triple Pop Triple IPA with Counterpart, Gelato Sour with peaches and vanilla, and Reclaim, their bourbon barrel-aged Eisbock (all but Bene were anniversary beers). This was a truly thought-provoking conversation - cheers! BAOS Podcast Subscribe to the podcast on YouTube | Website | Theme tune: Cee - BrewHeads

As the days get cooler in the DC area, we thought it would be fun to highlight the coolest beer (literally) style, Eisbock. While it isn't trending, it is a style begging for a deep dive. Michael Stein, champion of all lagers, joins the show to explain how the style (possibly) came to be, why it's so cool, and why it's so challenging to make.
There's a lot more to lager than just Pilsner We all have a friend that has made a statement like, "I don't like lagers," or, "I don't like dark beer." It's likely the lager-hater is thinking of something like a Pilsner when they think lager, and the dark beer-averse has a thick and boozy stout on their mind. Dark Lagers are here to change those opinions. There's a huge variety of flavor in the dark lager world. On the lighter end, something like a Czech Dark Lager will deliver a touch of toffee, dates, and chocolate. On the bolder end an Eisbock can be sweet and boozy, with big malt presence of toasty caramel. If you like Imperial Stouts and Quads, give an Eisbock a try. German Beer Terms The Germans make it pretty easy to know what you're getting in your beer. Learn these terms and you'll be ready to do some shopping. Doppel = Double Dunkel = Dark Hefe = Yeast Schwarz = black Weiss = White Weizen = Wheat Bock = Male goat / Buck (Listen to the show to see how this became associated with beer.) Now you know that Dunkelweizen is a darky, wheat beer. Boom. Drink Local, Give Local Our friend (and show sponsor) Adam Silverberg from The Nest Kennesaw joined us this week. We sample some brews and he tells us about his annual event to help those in need at the holidays. Through his Drink Local, Give Local event and The Nest you can enjoy some great brews and get on on the raffles for some awesome beer gifts. Bring a toy for MUST Ministries to add to their holiday store to make sure everyone can have something under the tree for Christmas.
We discuss:Steve's background and how he got into German beersA unique beer process involving freezing beer to remove some of the water content, called an Eisbock. The story of strong, "nutritious" beers being created for the fasting during Lent.German culture and what brewing according to the purity laws of Germany meansThe food at KC BierTo learn more about their brewery check out their very in-depth website at kcbier.com, it has some really great info about their history and processes and also a beer finder to go buy some of their beers.
In diesem Podcast lernt Autorin Dagmar Hager endlich richtiges bügeln.
Cheers!
This week on the second biggest podcast in the Pacific Northwest, Abby Spyker and Travis Buck of Northwest Media Collective join us on the program. A website design project from the county initially brought them together professionally, and while Travis battled and overcame several simultaneous personal challenges, they were able to complete the project and ultimately built a successful business partnership that eventually turned into a life partnership as well. Guest Beer: Kona Brewing Company - Kona, HI Gold Cliff IPA, 7.2% ABV, 50 IBU "At the southern tip of Lanai, not far from the island’s first pineapple fields, lies a cobalt blue inlet rimmed with golden cliffs that welcomes divers of every stripe. This is Kaunolu Cove. Catamarans anchor here beside a blade of black rock known as the Moku Noio, where snorkelers explore a dazzling rainbow of tropical fish below and cliff divers soar from the sun-drenched cliffs above. It has been said that the ancient Hawaiians once proved their courage here by making this electrifying 70-foot jump from the famed keyhole notch at the top. Today, you may still see a fearless adventurer leaping from these rocks into the cool embrace of the Pacific below." Angie's Mystery Beer: Alaskan Brewing Company - Juneau, AK Pilot Series Imperial Bock, 12.5% ABV, 25 IBU "This is a stronger version of a Doppelbock, which is often produced by freezing a Doppelbock and removing the ice crystals to intensify flavor and strength. Our Imperial Bock shares the same flavor intensity and strength of an Eisbock, but instead of freezing this beer, we brewed it to high alcohol content and then let it rest on oak chips to enhance the mellow vanilla sweetness." We go from the light elegance of the Belgian Tripel to this dark beast of a beer. This beer is jacked. No, really, that's what some people call freeze distillation, which is what makes an Eisbock an Eisbock. We also touch on pirates, the Bud Ice Penguin, the Maillard reaction, and the films of John Carpenter.
German-Style Doppelbock or Eisbock-2 Subcategories:A.Subcategory: German-Style Doppelbock(Description courtesy of Beer Advocate) https://www.beeradvocate.com/beer/styles/35/“Doppel” meaning “double,” this style is a bigger and stronger version of the lower-gravity German-Style Bock beers. Originally made by monks in Munich, the Doppelbock beer style is very food-friendly and rich in melanoidins reminiscent of toasted bread. Color is copper to dark brown. Malty sweetness is dominant. Malt character is more reminiscent of fresh and lightly toasted Munich-style malt, more so than caramel or toffee malt. Doppelbocks are full-bodied, and alcoholic strength is on the higher end.-Color – Copper to Dark Brown-Clarity: Appearance should be bright; chill haze should not be present-Perceived Malt Aroma & Flavor: Pronounced aromas and flavors of toasted malted barley. Some caramel and toffee character can contribute to complexity in a secondary role.-Perceived Hop Aroma & Flavor: Hop aroma is absent. Hop flavor is low.-Perceived Bitterness: Low-Body: Full -ABV: 6.6%-7.9%B.Subcategory: German-Style Eisbock(Description courtesy of Beer Advocate) https://www.beeradvocate.com/beer/styles/36/This is a stronger version of Doppelbock.Eisbock is an extremely strong beer with a typical alcohol content well beyond 7 percent ABV. This beer undergoes a freezing process called “freeze distilling” that separates water from the other components (alcohol and sugars) to concentrate these. Because water has a lower freezing point than ethanol, the water freezes, leaving the alcohol liquid. When the water ice is removed, the remaining beer is stronger than before. Eisbock can range from near black to as light as tawny red. Hop bitterness and flavor are mostly cast aside with a big alcohol presence replacing it, which can range from sweet to spicy, and fruity to fusel. Look for a heavy or almost syrupy body with tons of malty flavor.-Color – Light brown to black-Clarity: Appearance should be bright; chill haze should not be present-Perceived Malt Aroma & Flavor: Sweet malt character is very high-Perceived Hop Aroma & Flavor: Hop aroma and flavor is absent.-Perceived Bitterness: Very Low to Low-Body: Very full-ABV: 8.6%-14.3%-Glassware: Snifter - Used for brandy and cognac, these wide-bowled and stemmed glasses with their tapered mouths are perfect for capturing the aromas of strong ales. Volumes range, but they all provide room to swirl and agitate volatiles. Benefits: Captures and enhances volatiles. -Examples (courtesy of Beer Advocate)(https://www.beeradvocate.com)Troegenator | Tröegs Brewing CompanyBrewed by: Tröegs Brewing Company Pennsylvania, United Statestroegs.com Style: German Doppelbock Alcohol by volume (ABV): 8.20% Notes / Commercial Description: Monks had fasting figured out. “Give Us This Day Our Daily Guinness” - DAY 5 Germany has a winter tradition of brewing a dark-strong beer called an "Eisbock" (pronounced Ice-Bock... yes... Ice is actually involved) But here's the real kicker: Tradition is to heat up an iron rod till it gets red hot and 'poke' your beer by sticking it in for a split second. The reaction is an instant boiling frothy head, a toasty aroma and the rest of the beer stays cold. I've never seen it done in person, so when Sarah found out Joel Scott at Northbound in South Minneapolis was doing it this afternoon... we had to check it out. ------------------------------ Call The Official Podcast Hotline: (612) 584-9330 Visit Recording Locations: www.thecuriouspod.com/map Subscribe on iTunes: www.thecuriouspod.com/itunes Subscribe via RSS: www.thecuriouspod.com/rss Like us on Facebook: www.thecuriouspod.com/facebook Follow us on Instagram: www.thecuriouspod.com/instagram Gregorian Chant Recording Courtesy Of: Darren Curtis

Homebrewing beer. Eisbock is a huge, malty German style lager, similar to a Doppelbock, but with more mouthfeel, more malt and more alcohol. It is a great beer, but it can be tricky to brew. Jamil and Jon explain how to brew a great Eisbock and loads of brewing tips.
