Add a sprig of rosemary and serveThe Magic is that “you can make lemon barley cordial at home (it's a very old-fashioned British cordial of pearl barley and lemon), but this recipe works great with any store-bought cordial that brings sweetness and acidity. Elderflower, blackcurrant, or even more regional ones such as redcurrant or gooseberry also work-although there's a richness to the barley addition that works wonderfully. Tabasco adds a background heat, but try adding other accent spices such as gochujang or sriracha - just sieve it after mixing to remove any particulates, as they will interfere with the fizz. Today I'm talking to Ryan Chetiyawardana. You may have heard of him. The London-based bartender and creative is behind the Mr Lyan group of venues, which began in 2013 with White Lyan in Hoxton — he closed that in 2017 to launch two venues in its place: Cub, and Super Lyan. In 2014 he launched Dandelyan in London — before killing that venue in 2019 to relaunch as Lyaness, one of my favourite bars in the world. He moved Super Lyan to Amsterdam in 2019, and launched Silver Lyan in the US in Washington DC in 2020 just before the pandemic arrived.He's known for his creativity and an approach to bars and drinks that asks, why do we do it this way? And many of the trends we see around the world in bars today have taken at least some inspiration from his experiments with White Lyan and Dandelyan some years ago.

Lynnette (Twitter, Instagram) got her start at the Flatiron Lounge. She has worked in many capacities across the industry and most recently ran the bar program at the Llama Inn and Llama San. Alongside bartender Ivy Mix, she co-founded Speed Rack, an all-female high-speed bartending competition designed to highlight up-and-coming women and raises money for breast cancer. Hace 10 meses, y en el medio de la pandemia, Lyan tuvo un parto prematuro de 31 semanas que resultó en una hospitalización de su bebé. Con la intención de lactar, se encontró obligada a extraerse la leche sin ninguna orientación en la gestación sobre esta posibilidad. No pudo tomar a su bebé en brazos hasta dos semanas de nacer y no lo llevó a su casa por un mes. Buscó mucha ayuda con la intención de relactar a su bebé pero en el proceso se enfrentó a muy poca orientación sobre la extracción. Incluso, enfrentó mucha resistencia profesional en cuanto al uso de la máquina y el biberón cuando era necesario para ella. Would you believe it - today’s guest is an actual scientist! As in Ph.D. from Oxford in Materials Science scientist who happens to also be a world expert in fermentation and uses his scientific powers to help chefs and bars make food more delicious, in thoughtful, sustainable ways. I first heard about Dr. Johnny because of the work he does with Doug McMaster at zero-waste restaurant Silo and with Mr Lyan at his cocktail bars and restaurant Cub here in London where Johnny heads up the fermentation cave. Yes, a real below-ground bunker dedicated to fermenting things. Despite only working in the food world for the last 6 years, Johnny has done so much - from fermenting butter at the Nordic Food Lab in Copenhagen to making ramen noodles in Switzerland, to co-founding MOLD magazine which explores the intersection of food and design, focusing on how we’re going to create a sustainable global food system that can feed 10 billion people by 2050. So yes, Johnny is a very cool, fascinating guy who cares a lot about food and creating a better, more sustainable food system. We chat about Johnny’s career so far, some of the interesting, wacky projects he’s worked on, what set him on the path to directing his work more around sustainability, and some ideas on what the future of food and restaurants could look like…

In recent weeks we’ve had the opportunity to sit down with some exciting guests for special events and interviews, and this week is no different. First, we’re finally giving some much-deserved attention to the world of shochu this week. Better yet, we were able to round up an amazing group of bartenders, mixologists and all-around beverage specialists that have been resetting the standards for quality and innovation in some of the world’s most recognized and lauded drinking and dining establishments across New York, London and Sydney. For those following the cocktail scene, everyone on the show this week likely needs little-to-no introduction. We’re joined by Thomas Waugh, bartender and director of bar operations for Major Food Group in New York, overseeing establishments such as Dirty French, ZZ’s Clam Bar, The Pool Lounge, and others; as well as heading up the bar operations at Karasu, the izakaya-style Japanese restaurant and cocktail bar. We also welcome Mike Enright, owner and bartender at Sydney’s famous gin bar, The Barber Shop, often popping up on many Most Influential Bar and Bartender lists, both in Australia, as well is internationally. He’s even taken his mastery of gin to a new level with a line of gin-infused/inspired grooming products – a rather perfect pairing for a Barber Shop. Then we have Ryan Chetiyawardana, likely better known to everyone as Mr. Lyan. He’s the man responsible for White Lyan in London, the cocktail bar that shook up the industry when it opened in 2013, as well as Dandelyan, voted World’s Best Bar 2018, Cub, and Super Lyan. He might very well be one of the busiest men in the business. And last but certainly not least, we have Matthew Hunter, head bartender at the renowned Eleven Madison Park, ranked best restaurant in the world at 2017’s World’s 50 Best Restaurant awards. A huge thanks to these gentlemen who were kind enough to join us for a quick chat, and a shochu tasting, following a whirlwind week-long journey throughout Kyushu, Japan’s southern island and motherland of shochu. Watching movies in original version, I've realised that a lot of times, I can hear the expression "How would you like...?" followed, for example, by either "a punch in the nose", or "being left by a woman that way" or something like that. Transcript I was living in the outskirts of Valencia, in the same city where I've always lived. Close to my home flowed one of the seven main channels in this city. Its water was used by a big paper factory, therefore the channel passed into the factory by a tunnel where there were two enormous wood blades rolling constantly in order to break up the things that the water dragged. Back then, the children we played on the street all our free time and naturally all of us had forbidden playing (had been forbidden to play) close to the channel. But you know how children are because you have also been two of them not very long ago. One day, we were around this forbidden place and the channel was so fast-flowing because of the previous rainy days, that water was on the edge, almost overflowing. I was walking on the edge admiring the speed and strength of the water when I slipped and fell into the water. My friends started to yell my name because they wanted to help me, but they couldn't because the water ran speedily and swept me along very quickly. I tried several times to reach the edge to get out from the water, but I couldn't. I realized, that I was approaching to the tunnel dangerously close to the tunnel and I knew I had just one more chance to reach the edge, but I fell again. Then, I knew that I didn't have enough time to try it again. I was afraid because I was already entering into the tunnel and I knew that this meant dying like many gypsy children had already drowned. However, the volume of the water was so high that my small body hit into the top of the tunnel and it stopped me for a few milliseconds and gave me time to reach the edge and get out from the water when my legs were already into (in) the tunnel. All of it happened just in around thirty seconds, no more. When my parents were told about that, they didn't scold me. Just gave me a huge hug and they thank God THAT nothing bad had HAPPENED to me. So, I could survive this way from a certain death from drowning. Surely I had still a lot of things to do in my life. Of course, we never went to play near the channel again, at least me. A few years later this channel was covered because of the city development, and nowadays the water is running underground. Well, this is my story. I hope you like (it).
