In “Where There's (Southern) Smoke, There's Help for Restaurant Workers,” Gravy producer Evan Stern introduces listeners to the Southern Smoke Foundation, a relief organization dedicated to providing a safety net for food and beverage workers. As the pandemic reminded us, restaurants aren't just places where people go to satisfy hunger. The best ones reflect, anchor, and at times help define the communities they serve. From diners and drive-thrus to chophouses, maintaining them is a group effort made possible by managers, line cooks, servers, and cleaning staff, whose duties are essential and frequently challenging. They also comprise one of the largest labor forces in the US. Even so, these same workers often lack health coverage, live shift to shift, and don't have the option to work remotely. In times of unforeseen hardship, they might find themselves forced to choose between paying for housing, groceries, and medical care. In the absence of governmental reform, the Southern Smoke Foundation is working to respond to and call attention to these needs. Southern Smoke helps facilitate free mental health counseling and puts immediate cash in the hands of laborers in need. In this episode, we'll learn of its history from Houston-based chef and founder Chris Shepherd, who was inspired to take action in 2015 upon learning his friend and sommelier had been diagnosed with MS. From there, we'll learn about how forces like Hurricane Harvey and the 2020 pandemic reshaped the charity's focus. Finally, Charles Parra tells how Southern Smoke stepped in when his bartending career was upended after a major accident. This episode explores why efforts to make this industry more equitable are worth pursuing. Hobbs Kessler is a 21-year-old professional runner who ran a 3:34 in the 1500m in his senior year of high school. He has also climbed as hard as 5.14c with an ascent of Southern Smoke in the Red River Gorge. Hobbs just returned from the Paris Olympics, where he competed in both the 800 and 1500m races. Elite climber Sasha DiGiulian shares her struggles and breakthroughs in Training, Nutrition, Tactics, and Mental Game - Sasha is one of the most accomplished climbers in the world. She has been Female Overall World Champion twice, the undefeated Pan-American Champion for a 10-year span, and 3-time US National Champion. Sasha was just the third woman in the World to climb the grade 9a (5.14d), and she has more than 30 First Ascents and First Female Ascents to her name. Some of her sport FFAs include 14d/9a Era Vella in Spain, 14c/8c+ Southern Smoke and Pure Imagination at the Red River Gorge, and she has onsighted multiple 5.14a / 8b+ routes. She is the first woman to free the north face of the Eiger by way of Magic Mushroom, a technical 2,000 foot climb; she was the first woman to free Bella Vista, a big wall in the Dolomites with difficulty up to 5.14b / 8c; and Sasha was the first woman and only the second human to free the Trilogy in the Canadian Rockies - three separate climbs that feature 5.14 pitches and total 9000 vertical feet. With all of those groundbreaking wins one might assume things come easy for Sasha but let me assure you that she is no stranger to struggle. Chef Chris Shepherd joins me to talk about how he changed his business model overnight from dine-in service to stocking HEB grocery stores with take-home meals, including king ranch casserole and wagyu burger helper. Chris is also the co-founder of Southern Smoke Foundation, an organization that’s providing direct relief to restaurant workers who have been laid off in the Covid-19 crisis. The need is great. For the last month, I’ve been working with Restaurant Workers’ Community Foundation to raise funds, half of which we’re sending straight to Southern Smoke. This episode is at the intersection of some of the things I care about most: restaurants, the hospitality professionals who make them special, and, of course, casseroles.
The restaurant industry is in deep pain right now and the future looks very uncertain. Dan spoke with Chris Shepherd, award winning chef and owner of four Houston restaurants that employed 200 people before the shutdown, to learn about the creative approaches his business has taken to weather the crisis. Chris explains the tough economics of running a restaurant, policy ideas that would help businesses like his survive the shutdown, and the most effective ways to support your local restaurants and their employees during this crisis. Chris Shepherd’s charitable foundation ‘Southern Smoke’ has donated more than $2 million to those in the food and beverage industry in crisis and to the National MS Society. In 2014 he won the James Beard Award for Best Chef in the Southwest for his contributions to the incredibly diverse Houston culinary scene.
Before the coronavirus pandemic completely halted the world, Chris Shepherd was one of the country’s most acclaimed chefs with his Underbelly Hospitality family of restaurants being must-visits destinations in Houston. Now, Chris finds himself in the role of relief aid fundraiser, stepping up to take care of his own. He built the restaurant to support the Houston food community and its suppliers by buying local and drawing inspiration from the people and cultures that live in the city. Thanks to Chris’ vision and passion, Underbelly was a James Beard Award semifinalist for Best New Restaurant, was named one of the best new restaurants in the country by Bon Appetit and Esquire and was named one of 38 essential restaurants in America by Eater. Chris was named one of the 10 Best New Chefs in America by Food & Wine in 2013 and was then awarded the 2014 James Beard Award for Best Chef: Southwest.In 2017, Chris opened One Fifth, a five-year restaurant project that changes concepts every year. He closed Underbelly in March 2018 to convert the building into Georgia James, his take on a steakhouse. He also opened UB Preserv as his culinary interpretation of Houston’s evolution. He continues to tell the story of Houston food, but without limitations of locality and whole animal butchery. He formed Underbelly Hospitality in 2018 to preserve the ethos of Underbelly—learning about diverse cultures through food. When I was just starting this whole podcast thing, one day I received a note from a chef. He told me that he loved the podcast and loved what I was doing and to keep up the good work. That chef was Matthew Register of Southern Smoke BBQ in Garland, NC. It was one of those days that I really needed to hear that someone was listening, and it meant a lot to me since I didn’t know him or how he’d found the show. When we met in person at Lambstock, it soon became obvious that he not only wanted to be a listener, he wanted to be a guest, and although I was flattered, I didn’t know if that would ever happen because I hadn’t had his food and had set a high standard of BBQ coverage interviewing greats such as Sam Jones and Tyson Ho. Little did I know how clueless I was. Over the next year, each time I heard about Matthew or interacted with him, I was more and more impressed. He became one of the most passionate and motivated chefs I’ve met, passionate maybe because he came a little late to the cooking party, but just happy to be among the barbecue family. These days, I know his food speaks for itself, and that his restaurant deserves to be the barbecue destination that it’s becoming in Garland. And although the barbecue is a great example of Eastern NC ‘cue, I just want as much of his collard soup as I can eat, along with a side of Mexican street corn and a scoop of coleslaw. Matthew is a rising star in the great tradition of NC barbecue doing things his own way, and so I’m thrilled to introduce him to you.

One smokes the best Central Texas-style brisket on Planet Earth. The other is the country's foremost practitioner of whole hog barbecue. Both deal with fire, day through night. And, wouldn't you know it, they're buddies who were in Houston recently to cook up their respective specialties at Southern Smoke to raise money for hospitality industry workers affected by Hurricane Harvey. Austin-based brisket king Aaron Franklin and South Carolina's pulled pork superstar Rodney Scottreally need no introduction, but there you go. Episode 62 - euphoria Greenville, SC 2017 Max & Matt hightailed it to euphoria in Greenvile, South Carolina to catch up with legends and rising stars of the culinary world. The conversations had there were not only euphoric, they were historic. Leading off was a 2009 James Beard Award nominee for best chef in the southeast, Mr. Bruce Moffett. Bruce has three restaurants in Charlotte, Barrington, Good Food on Montford & Stagoni. We talked about his upcoming book “South by North,” his influence on elevating the Charlotte food scene, which oh by the way he won a Pegasus award for! We did have to end the conversation when Chef Bruce began professing his love for the New England Patriots all while explaining why his son was a Carolina Panthers fan. Then, Matt & Max knelt at the feet of BBQ royalty Sam Jones as he joined us with Matthew Register of Southern Smoke BBQ. Sam and Matt dug deep into the pit of BBQ, we discussed regional differences, wood preference and of course vinegar versus tomato based sauce. We also got the official story of why National Geographic named Skylight Inn BBQ the capitol of BBQ in America and why Sam Jones BBQ is the evolution of that. Plus we get insight into Sam’s life and what its like to be the crowned prince of BBQ. Taylor Garrigan & Aaron Siegel of Home Team BBQ then stopped by our studio to educate us on how to evolve from a fine dining chef to a BBQ pit master and thus create a powerhouse BBQ franchise in multiple states. Taylor and Aaron also explained why their version of BBQ is upholding the integrity of BBQ while still being able to push it to new heights.
