History is important, yet no modern techniques or ingredients are off the table, as the beers they make respect and reference the past without dogmatically recreating them. Five years into cold IPA, the arguments still aren't settled, but one thing is certain—strategic brewers have embraced the style for the unique counterpoint it can provide to more ester-driven IPAs, and the focus on light body has struck a chord with beer drinkers who increasingly want strong hop notes in ever-paler beers. We thought it was time to revisit the subject with three brewers who are no stranger to the podcast, and who each have contributed to the evolution of the style in their own way. Sam Tierney of the Firestone Walker (https://www.firestonebeer.com) Propagator in Venice, California has helped develop some pioneering cold IPAs for the California brewery, like core brand Hopnosis. Soundscape Brewing Co. founder Ashley Harrell joins Herlinda Heras and Harry Duke in the studio on Brew Ha Ha today. Get tickets for the Freshtival 2022 on eventbrite dot com. The Freshtival is this Saturday, June 25. It is a production of Hen House Brewing and an updated list of breweries is on the Hen House Freshtival web page. There are breweries from as far away as Portland and San Diego and every beer will be no more than 7 days old. Ashley got to beer from other avenues. She studied music in college and as an art song and opera singer, her dream was to sing on Broadway. She worked behind a bar while living in New York City and pursuing a career in musical theater. Having developed an interest in craft beer, she then worked a brewery and started home brewing. Now she is looking for commercial space in Benicia. As an artist and performer, she likes the idea of infusing storytelling into beer. Lay All Your Love On Me To begin with, a Belgian Whit beer is the first tasting. This Soundscape Brewing product is in competition at NHC the National Homebrew Competition, in Pennsylvania right now. Ashley associates music with the flavors of beer. This beer is called "Lay All Your Love On Me" after an Abba song. The Belgian Whit is a style that Hoegaarden Brewery in Belgium is famous for. It has coriander and orange peel. Ashley likes to use as many local ingredients as possible. She used orange peel from her front yard and coriander from the back yard. She has licensed the name Soundscape Brewing and is in the process of establishing the location and operations. In the meantime, while still a home brewer,  her product is so good it's "ridiculous" according to Herlinda Heras. 11-26-19 Tonight we're talking with Annie Zipser and Amy Olsen, Annie and Amy are both award winning home mead makers, and are now involved with the Michigan Mead Coalition. The Michigan Mead Coalition is a group of meadmakers who are looking to create a shared environment where they can talk mead, share their skills, and even have shared equipment and supply buys. We'll be talking more about that in the show. We'll also talk meadmaking, things we've learned, and generally just geek out on meadmaking. More about Annie: Annie Zipser has been making mead for about 6 ½ years now. She started making mead because so many excellent meads were being offered to her at Ann Arbor Brewer’s Guild meetings (that she was attending because her husband is a homebrewer). The Guild has a large mead presence and Annie has always felt very lucky that she had so many excellent resources in her learning experience. She joined Fermenta, a group focused on women in the fermenting world, and through a Fermenta scholarship took the BJCP mead exam. Annie retired from teaching in 2016…and working at Adventures in Homebrewing provided a great springboard into retirement activities. While working there she presented seminars and classes about mead, got to teach people about mead, and connected to the larger mead world. Since getting her BJCP ranking, Annie has been judging at the National Homebrew Competition and the Mazer Cup along with the Michigan Beer Cup and the Michigan Mead Cup. Going to the Mazer Cup to judge led her to going to the AMMA conference as a volunteer. This has since led to being on the planning committee for the conference. She is also on the planning committee for the Michigan Mead Cup and is one of the organizers of the AMMA presence at HomebrewCon. She is currently on the Home Governing Board (AMMA) where she serves as secretary. Her newest activity is the Michigan Mead Coalition where she serves as event coordinator. Michigan is a great state for mead makers and the Michigan Mead Coalition hopes to bring meadmakers together the same way that a homebrew club brings brewers together. Annie is a self professed “mead geek” and is having a great time letting her hobby be her retirement career! And some info on Amy: Have you ever had a conversation with a total stranger that changed the course of your life? That is what happened to me nearly 5 years ago. I was having a beer after work at Kuhnhenn Brewing in Warren, MI; and making conversation with other people at the bar. Some random small talk turned into a fairly in-depth conversation about flavor and my new friend asked me that life changing question..."Have you ever considered making mead”? Long story short, the gentleman at the bar turned out to be Frank Retell, the mead maker at Kuhnhenn Brewing. I was extremely fortunate to have a very experienced and talented mead maker show me how to make mead, let me ask a million questions and allow me to work with him on several batches that were released at the brewery. I was hooked! I am a classically trained chef by trade. I now teach culinary arts, baking and pastry arts and run a restaurant in my school district. So, food and flavor are a huge part of my life and background. Mead seemed like a very logical and natural progression. Within a year I was making solo batches at home. My family and friends were very supportive, but they pretty much would tell me that they liked it and drank a lot. I wanted some impartial feedback and constructive criticism. So I entered my first competition; The Michigan Mead Cup in 2014. I earned a gold medal and won Best of Show with my very first entry. It was Michigan wildflower honey with Medjool dates, black mission figs, and sultanas…all desert fruits. I called it A Gift to the Khaleesi. That’s pretty much where things got started. I have continued to make mead and enter competitions. Since then, I have earned several gold, silver,

Mike Pallen paid his dues as a homebrewer and after helping some other breweries get off the ground all while working on his own recipes, he's busted out onto the national beer scene.  11-28-17 This is our last show of 2017! We go on our December break after this, and will return in January with new, fantastic shows! To finish 2017, we will be talking with Steve Fletty, two time Meadmaker of the Year at the National Homebrew Competition, and a member of the St. Paul Homebrew Club in St. Paul, Minnesota. Fletty has also won two Minnesota State Fair Best of Show awards (for a Russian Imperial Stout and Saison), as well as 2009 Midwest Homebrewer of the Year. While he enjoys brewing beer and making cider, mead is his serious passion. Fletty has been making mead since 2002, when he was introduced to it at a Beer Judge Certification Program study class. “Even though mead wasn’t yet a part of the exam, we did a mead tasting night with 60 meads, not kidding,” he said. “Most sucked, but two of them blew my mind. I thought, ‘I need to make that!’” One was a mesquite chipotle mead—Fletty convinced the guy who made it to divulge his secrets, and he went on to win medals with his own version. The other was a commercial pyment (fermented with a blend of honey and grapes/grape juice). Fletty’s research and hard work to replicate it won him his first Meadmaker of the Year award in 2007. In 2016, he won his second honor as Meadmaker of the Year, in large part because of his Best of Show mead called Holy Cacao, a specialty mead made with cacao nibs, Dutch cocoa, and vanilla bean. And though there were no vikings present during recording, we did have the next best thing. Our BJCP Grand Master James Lallande, Who just won first place gold for his Traditional Mead at the 2016 National Homebrew Competition. Mead sounds like it might be the easiest thing you can ferment, but mead is well known for being difficult to get right without running into flaws. As in the kind of flaws that often ruin people's first experience. Also, they can take forever to be ready. But it can be done! And in a shorter amount of time than you might read about. Luckily, James is here to help discuss his process. Plus, he brought 10 meads made with different honey varietals for us to try and discuss. So, be prepared!

Season 1, Episode 7 - This week, we’re shaking trees and drinking something old and tasty with award-winning local homebrewer, Robert French. Denise Ratfield of Pink Boots Society and Stone Brewing Co. is also along for the ride.   Fort George Brewery – Sunrise Oatmeal Pale Ale and 3-Way IPA Jason is, once again, bringing the Fort George love with these two excellent offerings, Sunrise Oatmeal Pale Ale, and 3-Way IPA, which is a collaboration between Fort George, Block 15, and Boneyard Beer. Suffice to say, we’re all becoming huge fans of Fort George. The topics of the localization of breweries and prioritized markets also come up in the discussion. Feature: Homebrew – Robert French’s “Old Bandersnatch” and “Shake Your Tree.” Robert French is a long time friend of ours, and he’s been brewing for about 18 years. Recently, he built this super-dope single tier brewing stand that’s just beautiful. But he’s not just a pretty dude, with a pretty brewing stand—he makes excellent beer, too. Robert French and His Brewing Stand Robert’s first offering is his rye whiskey barrel-aged old age called, “Old Bandersnatch.” It was aged in an eight gallon rye whiskey barrel for two weeks. This bottle has about a year or so of age on it, and it’s tasting fantastic. It won gold in the first round of the National Homebrew Competition in San Diego, and it completely deserves it. This beer is also a testament to the wonderful grain that is Maris Otter. It’s silky, smooth, and has just the right amount of sweetness with a wonderful texture. Robert French – Shake Your Tree His second offering is a beer that he made for his daughter’s wedding, called “Shake Your Tree.” It’s a peach saison that was fermented with White Labs’ WLP670 American Farmhouse Blend. Whole, puréed peaches were added to the fermentor. This beer is about a year old and the peaches still shine through wonderfully and are complimented perfectly by the brettanomyces yeast present in the beer. Feature: “Going In Blind.” Going In Blind – Green Flash White IPA and St. Feuillien Saison Sara‘s back and pouring the brews for another round of “Going In Blind,” but this time, she’s pouring some beers that Yvonne purchased. To be honest, both of these beers were zingers for all of us, but in the end, Matt narrows it down and ultimately gets the gold star for this round.
