And those metals that we feel that we can smell and taste, that's actually a tertiary influence of our oils reacting with those metals.Technically, metal and most other minerals except for salt, don't have smell or taste. Yeast autolysis is the process that gives champagnes and traditional method wines their bready, yeasty, autolytic flavor. Autolysis is when a yeast thinks it's gonna die and it's pretty stressed. So as alcohol levels pick up, and your yeast knows it's going to pass away soon, its enzymes will switch on to a different mode, and this is autolysis mode. They'll start eating away at the cell membrane of the yeast, and eventually they'll make little puncture holes, and all of the insides of the yeast will end up in the liquid. So that self-detonation of yeast in stressful environments is what gives the physical texture to your wine. That's why autolytic wines have that texture and it gives you those yeasty, bready flavors. Natural wine makes us question how we farm and how we produce all food and drink, not just wine. Wine is one that we can talk about and have a real discourse without it getting too boring. And with natural wine, those bigger topics are, how do we farm? What are the pros and cons of how we farm now, and how are we making our food and drink? About Sunny Hodge Sunny Hodge is the sole founder of Diogenes the Dog and aspen & meursault; two multi award-winning wine bars associated with challenging the status quo of wine. He is in the process of developing a wine qualification, The Science of Wine Course. Chat GPT-5 is here – what does it mean? What does it do? They claim it's the best yet at creative writing and coding, and apparently just feels more human-like in its responses. It will also make information up 25% less than GPT-4. Importantly, they've trained the model to fail gracefully when posed with tasks that it cannot solve, which is better than it taking shortcuts or lying about finishing it. It is much better with health related questions too, according to its benchmarks. Users can pick from four preset personalities—Cynic, Robot, Listener, and Nerd. Something you'll notice if you've never paid for ChatGPT, or used another provider, is a new thing called "reasoning". This is effectively where the AI talks to itself a little, and spends time "thinking" through the question before answering. ChatGPT is huge They say they now have 700 million weekly active users of ChatGPT, 5 million paying business users, and 4 million developers utilizing the API. The company is not yet profitable. It plans to raise $40 billion this year and is on a pace to pull in revenue of $20 billion by year's end. If you've got an Emirates flight later this year, there's a new rule about power banks Emirates will ban the use of power banks aboard its flights and only allow passengers to bring one such device onto the plane. The airline says the "significant growth" in customers using power banks has led to a rising number of lithium battery-related incidents during flight across the industry. This interview is with Randy Freund of Vitae Springs. In this interview, Randy talks about his vineyard philosophy and passions for stewardship and viticulture. Growing up in Texas, Randy wasn't exposed to a lot of wines, but after visiting Oregon and working at a vineyard in France, he knew that he wanted to be more involved with wine. Maintaining the vineyard at Vitae Springs has allowed Randy to create a space that focuses on regenerative agriculture and doing things by hand. Randy also touches on his new wine brand, Cynic, where he aims to create natural wines. He also discusses the future of Oregon wine. This interview was conducted by Rich Schmidt at Vitae Springs in Salem on June 16, 2025.

Born in 103, he was a philosopher from the Samaritan town of Shechem in Palestine, who had devoted his life to the search for truth, trying many philosophical schools and sources of human wisdom: the Stoics, the Peripatetics, the Pythagoreans and finally the Platonists. One day an old man (whose name and origin are unknown) appeared to him and spoke to him of the Prophets and Apostles who had learned of God not by their own wisdom, but by revelation of God Himself. He read the scriptures and was convinced of the truth of the Faith, but he would not be baptised or call himself a Christian until he had tested all the pagans' arguments against Christianity. To this end he traveled to Rome, where he engaged in debate at philosophical gatherings, impressing all with his wisdom. In Rome he also witnessed the martyrdom of Sts Ptolemy and Lucian; this moved him to write an Apologia for the Christian faith and the Christian people, which he gave to the Emperor Antoninus and the Senate. They were so moved by this document that the Emperor ordered that persecution of Christians should cease. For the remainder of his life, Justin devoted all his skills to the proclamation of the Gospel and the defense of Christians. To the end of his life, wherever he preached Christ, he always wore his philosopher's garb. In addition to his Apologia, he wrote a number of other learned defenses of the faith. Eventually he was imprisoned following the false accusations of Crescens, a jealous Cynic philosopher. He died (one source says by beheading, another by poison) in Rome in 167 under the Emperor Marcus Aurelius, successor to Antoninus.

Devin & James are back in the Den to bid a final "ciao" to the TOUR OF ITALY series with a look at the violent world of POLIZIOTTESCHI movies! (or Eurocrime, for the pronunciation challenged.) Italy had a special touch with crime thrillers during their politically tumultuous "Years of Lead," and we go over some of the genre's highest points, starting with Enzo G. Castellari's HIGH CRIME (1973), starring Franco Nero, and Franco Nero's mustache. We follow that with Lucio Fulci's only crime film, the gloriously bloody CONTRABAND (1980). Then we get into the sticky details around the release of Mario Bava's underseen and underrated RABID DOGS/KIDNAPPED, and why two different cuts of this movie were finally released over 20 years after the movie was shot and abandoned in 1974. We follow that with some fun in Umberto Lenzi's THE CYNIC, THE RAT, AND THE FIST (1977), which matched up 3 of the genre's most iconic stars (Milian, Merli, & Saxon). Finally, we cover the influential second entry of Fernando Di Leo's "Milieu Trilogy," THE ITALIAN CONNECTION (1972), where actor Mario Adorf outshines hitmen Henry Silva and Woody Strode to give the most heart-pounding and heartbreaking pimp performance we've ever seen. We're sad to finally be leaving Italy behind (for now), but we closed out with some of our favorite movies ever committed to celluloid. Buckle in and hold on for some off-the-wall Italian mayhem.
