It was 6 p.m. on the evening of Wednesday, Dec. 16, 1931. Legendary fashion designer Nell Donnelly was headed home from work. Her chauffeur, George Blair, drove Nell's lime green Lincoln through the streets of downtown Kansas City. When they arrived at her palatial home, George noticed a vehicle blocking the driveway. Two unfamiliar men stood on either side of it. George slammed on the brakes. In seconds, one of the men charged at him with a gun. Two more men came running. One jumped into the backseat with Nell. The gunman took charge of the vehicle. The other man jumped in on the passenger's side, effectively trapping George. Nell screamed. She kicked. She fought. She thought for certain that someone would hear her. They didn't. America's best, most successful businesswoman, along with her chauffeur, had just been kidnapped. Becoming proficient in property investment is like learning a foreign language, but you can master it, says Kate Hill. Kate Hill has lived an extraordinary life. As a young woman she loved to travel and cook and ended up buying a barge and travelling the regional canals of France until she found her little home which back then was a ruin on the bank of the canal. So she parked the barge at the bottom of the garden gate and continued to live on the barge for her first 25 years in the area of Gascony, until the ruined 300 year old building was eventually renovated 10 years ago for her to live in. Early on in the 35 years in total that Kate has lived there, she built her little dream kitchen and learned how to butcher and create charcuterie as well as then teach others to do the same.Kate published an introductory book about how she ended up living this wonderful life, “A culinary journey in Gascony” which was published in 1995 (and is still in print!) She then wrote another book which contains everything one might need to know about Cassoulet, followed by a series of 12 seasonal monthly books, a compilation of her essays and recipes titled “A Gascon Year”. Through substack, Kate now publishes her memoir about how she found France, “Finding France: a memoir in small bites” is now released on a serialised basis.I loved chatting to Kate about the slowness of her life, not that she is slow in her actions, but how life in her rural part of France has forced her to slow down and live a deep immersive life in her kitchen and potager in Gascony. Locals in her area kept explaining something to Kate that sums up their philosophy on how to prioritise the important things in life: “prendre le temps de prendre le temps” (take the time to take the time). In other words, they do things such as stopping on a Sunday to share a meal with family or friends, they stop and enjoy the smaller but precious parts of life. Kate grew into this way of life, she learned how to work a potager, how to raise chickens, how to be connected to her soul. Now in her 70s, Kate is excited about more changes and choices she is making in her life. She is focusing on how to start anew at any age and how to live a connected country French life. This she calls “champêtre”, to be country. As part of this she will continue to host residencies at her Relais de Camont, but she will also have the time to create more herself, with her writing, her potager, cooking in her kitchen. Rural health clinics and critical access hospitals seek to provide care for those living in underserved areas. With the increase in public health concerns, sometimes these organizations require help to meet their community's needs. This week we welcome back Kate Hill, the Vice President of the Clinical Division with the Compliance Team. Kate will update us on her work with rural health clinics and critical access hospitals along with how the Compliance Team continues to help these organizations navigate their changing environment.  “We put a certification together to verify and validate the good work that our critical access hospitals do in swing beds in their hospital” -Kate Hill  Kate Hill, RN, is a graduate of Albert Einstein Medical Center School of Nursing in Philadelphia, PA. As an Army Nurse, Kate served in Viet Nam (27th Surgical Hospital in Chu Lai) where she was awarded the Bronze Star for meritorious service. Kate has worked with orthopedic patients in several capacities including Head Nurse of Orthopedics in Newark, NJ., followed by Biomet working in various capacities.  Kate joined The Compliance Team (TCT) in early 2012 to direct TCT's rural health clinic accreditation program and has fallen in love with Rural. As VP of Clinical Services, she has spearheaded the TCT Rural Health Clinic Accreditation program combining her clinical expertise, business acumen, and passion for delivery of the best care possible to every patient.  She presently serves on the Board of the National Association of Rural Health Clinics. Kate also works with clinics in TCT's PCMH program and is ensuring that a PCMH accreditation is being increasingly rewarded by payers.

The Hearing Voices Network is a global affiliation of support groups where people who hear voices or see visions can find support and be believed, rather than pushed towards medication. The group was started in the 80's and has chapters all over the world, including the Pacific Northwest. One of their fundamental precepts is that trying to convince people that their experiences aren't real isn't effective. Kate Hill is the director of the Portland Hearing Voices group. Derek Pyle is the group facilitator for Bear Creek Hearing Voices Network. They both join us to talk about their experiences.

Kate says she lives in one of the most beautiful little corners of southwest France along the canal dig around in the farming area. A big river valley, very fertile soil, and very diverse agriculture, including grapes and wine.She says that as a cook she couldn't have landed in a better place when she came over 30 years ago. Kate operated a Canal Barge, and was cruising along from Holland south, and the boat engine broke down here. She ended up sinking a little bit more time in this area around Agen, and learned to love it. It reminded her of northern California, her most recent home in the US. It's a four season kind of gentle climate, with farming and wine––sort of like Northern California. She says she got stuck in the mud here and bought an old house on the side of the canal where she parked her boat.Kate has been restoring the place she bought over the years, and created a cooking school that was based there. Recently she decided to quit standing at the stove as much and sit more at her computer, writing. Kate has been working on a new book, that will be a bit memoir plus food, plus stories travel. She's calling it Finding France, because it is about how she found France and  still finds France, and how you could find France, no matter where you live. It's sort of a state of mind. As the cooking school winds down, Kate is pivoting her guest house into a creative residency for writers, photographers and cooks, and anybody in the food arts basically, to come like an artist residency.  This is  my goal!

The greatest secret to mastering the art of cooking? It's' not the recipes, but in using the freshest ingredients that are indigenous to the land. In France, this means buying locally grown, in-season fruits and vegetables from the nearest farmer's market. This is a long-held practice in Gascony, a rural province of southwestern France where "the good dirt" is prized and protected for the preservation of its culinary heritage.  The culture of food in Gascony has its own unique flavors and methods. Kate has been collecting recipes for years, gathered from friends and neighbors and even from knocking on the doors of strangers to learn how to cook something new. Kate teaches methods such as oven roasting, braising, emulsifying sauces, and has recently been featured on a "Cooking with Wine" series streaming on Somm TV. But it doesn't stop there, Kate also intertwines these culinary lessons with in-person road trips in France and Spain.  Kate masterfully wears multiple hats in her personal life and profession. She is a cook, teacher, mentor, and wonderful storyteller. Whereas most of us caught a plane to get here or maybe drove, my guest this week has the most original means of arriving in France...by barge. Kate Hill is a cook, teacher and writer who has lived in Gascony, SW France for over 30 years. We talk about how she learnt French cooking, the language and how she has become integrated into her community. We talk about her identity as an American, where she feels at home and her ability to be ‘nimble' in these trying times. Kate reflects on her new challenges with teaching online but also how it has inspired new projects. With the re-release of her 1989 book The Culinary Journey in Gascony - now available as an e-book - she's able to create video content to bring her recipes to life. We talk about all things seasonal, regional, veggies and broth and also, the beauty of the traditional food practices she has learnt. Kate is full of heart, she loves the artistry of cooking and it shows. When I asked her why she came to France she replied, “the better question is why have I stayed!”, and whilst she feels ‘mega American' (love that!) she feels truly at home in her 18th-century house by the water where she first arrived and where her barge still sits. Kathryn Hill is an elite trail runner.  She has won several ultra marathon races in China this past year.  In her first attempt at running a 100 mile (168km) race, she finished in 26 hours, breaking the previous record by 2 hours at the 2020 Jiangnan 100, which is the largest and most competitive 100 mile trail running event in Eastern China.  She holds workshops on mental toughness, helping others to run incredible distances, tolerate pain and push through limits.   Follow us on Instagram: https://www.instagram.com/thehonestdrink_/ Join us on WeChat ID: THD_Official
