We're making a little trip to Poland this episode. Known for their traditional lagers and pilsners, Poland has become a craft beer wonderland with exciting craft breweries delivering lots of delicious beers. We start with a collab between Sweden's Hop Notch and Poland's Browar Nepomucen. Peach & Love is an Azacca hopped NEIPA with a dash of peach and blood oranges to give it some extra fruitiness. That's followed by the Maltgarden/Funky Fluid collab Funky Garden. These two breweries have created 10 different beers in this series. We had volumn 8. This is a chocolate, coconut, caramel, carob, cinnamon, coffee, milk and vanilla birthday cake imperial stout. Foam Brewers Dead Wax is an American IPA by style. A single IPA, dry hopped with generous portions of Denali, Vic secret and Azacca. This craft beer is 6.8% ABV. In this craft beer review, we will take a look at the color, smell, and taste.
Alex from Carolina joins Andrew in the Brew Pub where we talk teenage brewing disasters, and kettle souring! Mixed Berry Kettle Sour 5.5 gallon: 6.25 lbs pale malt 2 lbs Flaked Oats 2lbs white wheat 1.25 lbs Lactose sugar (added during the boil) .5oz Nugget (or similar) at 60 min 2 oz Galaxy at flameout Whirlfloc tablet at 15 min 1pkg of Lactobacillus (Wyeast #5335) or similar 1 pkg of US-05 Heat 7.5 gallons of water to 154 and mash in. 75 minute mash. Mash out at 168. Once mash is finished cool wort to 100 and pitch the Lacto. Keep the wort between 90-100 degrees F for a day or so regularly checking PH. 3.5 is going to be somewhat sour and 3.1 is going to be about as low as you want to go. Once you hit the PH that you want, start the boil process as normal. After the beer ferments out, add in your fruit ~1lb / gallon brewed. I used costco frozen mixed but you can use whatever you'd like. I recommend freezing whatever fruit you use before hand to kill any unwanted bugs and breakdown the cell walls of the fruit. I was fortunate to spend a day in the city capped off by a visit to Highland Brewing, which was founded in 1994 by Oscar Wong. Today the brewery is led by his daughter Leah Wong Ashburn. Highland put in the hard work and laid the groundwork for the scene to come and today continues to make flavorful beers and welcome visitors to their expansive taproom and grounds that now feature a volleyball court. This discussion was held in the brewery's barrel room, which opened during the pandemic and hasn't seen much use. But on this night where pints of Gaelic ale flowed and a crowd gathered to snack on bites from a local food truck, we could forget about the worries of the world for a few minutes and just enjoy some camaraderie. Birds Fly South calls itself a “progressively old school urban farmhouse” brewery. It might sound like several contradictions until you start talking with Shawn and Lindsay Johnson, the co-founders, and suddenly this Greenville, South Carolina brewery starts to make sense. The origin story might sound familiar. Shawn was a beer fan who tried a lot of different styles and visited breweries during his time in the Coast Guard. At the time they were stationed on Kodiak Island, Alaska where early sunsets meant more times for hobbies. Lindsay got him a homebrew kit for Father's Day one year and the rest… well, you know. The moved to Florida and Shawn started working with Bob Sylvester of Saint Somewhere, and a deep appreciation for saison and farmhouse ales flourished. A move to the D.C area had Shawn helping to open Fair Winds Brewing Co. in Virginia at that point the idea to have their own place had cemented and needed to come a reality. Birds Fly South opened in 2016. Made with Strata, Nelson Sauvin, Cashmere and Azacca hops, it's quite crushable. Stefan just got it because he liked the name. Lehe Pruulikoda is from Keila, Estonia. They made Heaven or Hell BBA. This American Barleywine is a balance of sweetness with bourbon notes. Yum!

Advent 2021 Day 4 is really exciting because we get to finally feature another IPA from American Solera. We reviewed Terpy Citra way back in season 1. We loved it. This Is Cashmere! is exciting because it's a hop variety that we don't know too much about. Cashmere hops haven't been as high profile as Citra, Idaho-7, Mosaic or other trendy varieties. This is Cashmere! features Cashmere, Azacca and Mosaic hops. It's a little grassy, a little bitter and overall yummy.
We're doing our first series. De Moersleutel is celebrating their 5th anniversary with their annual anniversary release. It's a five course meal with plenty of surprises and really big beers. The next three episodes will cover all five beers plus an extra release. First is the aperitif Rock, a fruited sour. We follow up that course with our starter Paper, a double IPA made with Azacca, Galaxy, Citra and Idaho7 hops. It's a great start to a complex anniversary dinner.

In this podcast we unabashedly borrow from the Seinfeld episode where George and his father celebrate an alternative holiday, Festivus. So grab a couple of beers, prepare a Festivus dinner (meatloaf on a bed of lettuce is key to stay true to the holiday), get a Festivus pole, air your grievances and join in the feats of strength then settle in for the show. HAH!! On this episode we have the pleasure of having Scott Walker (no, no not the former Governor of Wisconsin) sit in with us. Scott is the current Vice President of the Forest City Brewers of Rockford, IL. He discusses with us planning, prepping, setting up and tearing down for a beer festival. There is plenty of home brew beer to sample. Scott brought a delicious Amber ale @ 6% ABV using Bravo and East Kent Golding hops. He also shared a New England style IPA that has a 6.2% ABV using Citra, Strata and Azacca hops. Both were great beers! Kent brought his first attempt at an Oktoberfest with a modest 5.4% ABV, golden orange in color and a good malt flavor, very tasty. Kent also made a 5.5% ABV IPA using strictly Loral hops which offered a unique combination of floral, citusy and peppery notes. A very enjoyable session IPA, nice job Kent! Sears went with the high octane and brought a 12% ABV cherry cyser. Cysers are fermented from honey and apple cider then aged to smooth out the flavor. This one was back sweetened and sour cherry puree added for flavor. A sneaky drink that will “grab ya by the Boo Boo” (nod to Cheech and Chong) as the alcohol is well hidden. We also tried Pig Minds Brewing Totally Caked is a pastry style stout at 11% ABV using coco nibs, vanilla and marshmallow. This was a very good beer even for those of you that are not pastry beer fans. Founders Brewing Moon Rambler IPA is an American IPA by style. Moon Rambler IPA touches down with a big dose of Azacca, Mosaic and Cascade hops that provide a blast of tropical fruitiness, assisted by a classic foundation of wheat and oats. Milk sugar is added to create a sweet yet slight creaminess; giving it a round mouth feel, remarkably less bitter taste and fuller body than your typical IPA. Ramble on. If you are new to homebrewing one way to brew might be to make a 5 gallon batch then split it so you can try out different yeasts and dry hops. In this series we are going to use different dry hops. Drink Of The Week Today on the seventh episode of Season 3 on the Bois & Bar Talk podcast, the Drink of the week is B-Side crafted by New Britain's own Alvarium Brewery. According to Alvarium, B-Side utilizes Idaho 7, Azacca, and Simcoe hops for a delicate and multilayered drinking experience. Soft tropical fruit, mango, citrus and pine flavors combined, give B-Side a delightful taste, clocking in at a 4.9% ABV. It’s a sweet blonde ale that we had no problem drinking in the middle of November. Arachnophobia is common among people, while some have it worse than others. But what is it that makes spiders so terrifying? We started playing a free game on Game Pass, Grounded on the Xbox One. Grounded is a survival game which is still testing in beta where you play as kids who shrunk themselves (sort of like Honey I Shrunk The Kids). The objective is to survive in the garden, fighting against nature including “giant” ladybugs, ants, and dreaded spiders. We raised the question: What ever happened to those tiny electrical zaps on the tips of our fingers? In theory, it has to stem from the fact that carpets were left behind in most houses. As kids we used to charge up the shock by rubbing our feet on the carpet and poke somebody else. It's been completely forgotten about over time. Rayshard Brooks is murdered by Atlanta police for falling asleep in his car in a Wendy’s parking lot. That Wendy’s later burned to the ground. The autopsy concluded the killing was a homicide and the officer who murdered Rashard Brooks is now charged with felony murder and ten additional charges. The same cop who killed Brooks was previously disciplined for use of force involving a firearm. Workers United in Upstate New York - a union that represents more than 9500 workers in the state, joined the call to kick the police union out of the AFL-CIO. That branch of Workers United joins the Writers Guild of America, East, the Labor Council in Seattle, and the Association of Flight Attendants and other unions putting pressure on the police union and the AFL-CIO in light of the national uprisings. Big primary elections in New York on Tuesday. AOC is fighting for reelection against another establishment plant. And, and Jamaal Bowman is looking to unseat Eliot Engle. Bowan got the call from Bernie this week too. The University of Cincinnati is calling for 12% permanent cuts, using COVID-19 as the excuse. Brian Bailie from the University of Cincinnati Blue Ash College was on this program a couple of weeks ago warning that this was coming. Completely unrelated, the University of Cincinnati’s president, Neville Pinto, is paid $660,000 a year, which includes a house and a car. Florida man Daryl Metcalfe - yes you heard that correctly, Florida Man - Filed 5 impeachment counts against Governor Tom Wolf because of how the governor handled the coronavirus outbreak. And, say what about Daryl Metcalfe’s house in Florida? Mike Turzai officially resigned as House Speaker this week & then took a job with Peoples Gas and as their head of General Counsel. Peoples Gas recently merged with Aqua America and this job falls right in line with Mike Turzai’s desire to privatize utility as possible Black Lives Matter protests are still going strong in rural Pennsylvania. Over 300 protesters showed up in support of the black lives matter movement in Hummelstown, Pennsylvania over the weekend. Gravy Seals, Wooder ISIS, Gaba Goons, and Provolone Boys and other white vigilantes take over South Philly’s Marconi Plaza in order to defend the Christopher Columbus statue. Yes, it was like a parody of the Soprano’s but this time the Philly Police were enabling and allowing the crowd of neighborhood fascists to attack and pummel Black Lives Matter protesters. Kutztown University and other PASSHE schools plan to announce a return to campus plans this coming week. Oh, and Kutztown has hired robot owls at around $1,000 a pop for classrooms. I kid you not. Azacca and Medusa are 2 newer hops that could be used in a lot of IPAs and NE IPAs. I wanted to make some small batches with only one malt to see how they would stand up to that one malt. This was an all grain BIAB batch of homebrew.

Until now, the only place to watch independent films year-round was at the mall. On this week’s episode, we learn the story of the KanKan, Indianapolis’ first arthouse cinema, from Executive Director Louise Henderson and Director of Programing Daniel Arthur Jacobson. Louise’s love of film began while she was dating her husband. They were not of age to drink, so they spent many evenings at the theater. Meanwhile, Daniel grew up passionate about producing movies and videos, which steered his career away from teaching math and towards film. In homebrewing there are a lot of different ways to make a beer. One of the options you have is a no boil. Most of the time in a no boil homebrew you are going to use DME or something that has been boiled down.
