The contentious relationship between Twin Cities restaurants and employee unions is once again making headlines. Minneapolis restaurant business mogul Daniel del Prado's DDP Restaurant Group announced that the four Café Cerés locations will close this month. In a statement, DDP Restaurant Group said they are closing the Café Cerés locations to focus on their other restaurants, which include fine dining restaurants Martina, Colita and Porzana. “While we are proud of what we accomplished in the café space, it is clear that the DDP Restaurant Group's future lies in what we do best — creating and operating amazing, and highly successful, restaurants by delivering exceptional hospitality, crafting unforgettable dining experiences, and leading chef-driven food and beverage programs,” the statement said in part. Last August, baristas at Café Cerés voted to unionize under hospitality union UNITE HERE Local 17. Employees were in the first few months of contract negotiations with DDP Restaurant Group when the closure was announced last week. “Heads of restaurant empires like Daniel del Prado would rather close shop than give a fair share to the workers who make them rich,” a spokesperson for the union said in a statement. A similar situation happened last year at chef Ann Kim's Uptown restaurant called Kim's. Kim's workers voted to unionize and within two months the restaurant closed, citing “financial losses.” Adam Platt, the executive editor of the magazine Twin Cities Business, joined Minnesota Now to break down what he thinks is happening in Twin Cities restaurants.

It's opening weekend for Chef Ann Kim's newest venture. Her new restaurant is simply named “Kim's.” Kim's is replacing the beloved Uptown restaurant Sooki and Mimi. It closed on Oct. 21 and just two and a half weeks later, Kim's was born. Chef Ann is of known for her award-winning pizza at Young Joni, Pizzaria Lola and Hello Pizza. But Kim's won't be a pizza parlor. It's Korean American cuisine. Ann Kim joined MPR News host Cathy Wurzer to talk about the new restaurant. Updated: 3:33 p.m. Theater lover Katie Fetterly of St. Paul calls “Arla Mae's Booyah Wagon,” a traveling musical comedy celebrating the joy of local food, “adorable” and “hilarious.” Booyah is a hearty stew —and a specialty of Arla Mae's traveling food wagon. The show is performed at different local farms, and most performances feature a booyah tasting. Sarah Agnew directed and performs in the show, and she also created the booyah recipe with culinary advice from James Beard award-winning chef Ann Kim of Young Joni and other restaurants in Minneapolis. “Arla Mae” travels to Ferndale Market in Cannon Falls at 6 p.m Thursday and to Pleasant Grove Pizza Farm in Waseca on Friday. The production moves to Dream Acres Farm in Spring Valley on Saturday and Big Raven Farm in Spring Grove Sunday. The following week performances are scheduled in Oronoco, Red Wing and Northfield. Musician Mischa Suemnig of Plymouth is excited for a quadruple album release concert by four Minnesota musicians Saturday. Justin Bell and the Lazy Susan Band, the Jonathan Earl band, Sarah VanValkenburg and Samuel J. DuBois all have albums coming out. Suemnig wants to hear new music performed live and “the pent-up anxiety and energy we all have from COVID directed in a positive way” by musicians he admires. The show is Saturday at the Amsterdam Bar and Hall in St. Paul. The venue requires proof of vaccination or a negative COVID test from within 72 hours. Comedian Emma Dahlenberg felt like she'd stumbled upon a real gem when she performed at the Club Underground of the Spring Street Tavern in Minneapolis a few months ago. She loves the lighting, the feeling of intimacy with the audience in the low ceiling space. The venue runs a regular Monday Night Comedy Show starting at 7 p.m. In October, each comedy night will have a theme for the comedians to follow, starting Oct. 4 with “alien abduction night.” Upcoming themes include super villains and character night, as well as one night each of “clean” and “dirty” humor. “I think it would be really fun as an audience member,” says Dahlenberg, “because you're seeing the comedians have fun in a way that they don't normally do,” as they try out new material to fit each theme. We first set out to make a better wetsuit for women. We weren't happy with our options, so we made our own. We questioned things and found joy breaking from convention. When our global realities changed this year, it was an opportunity to take a hard look at ourselves. Were we still proud of what we'd created? Did it still resonate? When you wake up in the morning, can you say you’re proud of what you built? James Beard award-winning Minneapolis chef Ann Kim joins Billy Shore to talk about her immigrant experience, approach to food, and observations about her community in the wake of the George Floyd murder. “It is our job to make changes, educate and learn. We can’t make decisions rooted in fear,” she says. “People scream when they feel like they’re not being heard. I was trying to listen and I wasn’t quite sure how I was to react, except that I wanted to support the black community,” explains Kim.Kim talks about her immigrant experience and the importance of the dinner table. “There is no room for hate in food. Food is about nurturing and taking care of people. It’s about making people feel special and welcome. It really is the great peacemaker,” says Kim, who is a staunch supporter of No Kid Hungry.
Star Trek: Lower Decks – Season 1 Episode 4 – Moist Vessel We’re back with the fourth episode of Lower Decks, titled Moist Vessel. This episode was written by Ann Kim and directed by Barry J. Kelly. A generational ship, ascending, and a dysfunctional family/command dynamic… This episode, we finally got a little bit of the dynamic between Mariner and Freeman and how they rub each other the other way. In the end, they did end up working well together in a serious crisis. They saved the ship and the crew of the Merced. I was wanting to see that family dynamic, although we still don’t know how Mariner got that way. I still say she was pushed into command before she was ready, at too young of an age. However, Mariner’s behavior is really hard to stomach. Again, this is probably exaggerated for an animated show, but why would they keep her in Starfleet if she acted that way? Tendi gets involved in O’Connor’s ascension, and he ACTUALLY ascends, which made little to no sense to me. HOW did that happen? WHY did that happen? Am I overanalyzing? Maybe. While I was editing this episode, I wondered if I was taking it too seriously, and holding this show up to a live-action standard. Again, maybe. It did bug the heck out of me, though, enough to take off two points from my rating. Tendi was a little annoying, too. By the way, the t-shirt I mentioned that had the koalas and galaxies can be found here. The terraforming ship was cool. What it did to the USS Merced and Cerritos wasn’t. It seemed like a LOT of damage to just be able to reverse. That took me out of the episode. A Tellarite captain was cool to see, although the name of Durango was confusing unless he had some human DNA. I don’t really know but it would have been nice to explain. Ann Kim is the James Beard Award-winning owner and executive chef of Young Joni, Pizzeria Lola and Hello Pizza in Minneapolis. She and her husband and business partner Conrad Leifur created parent company Vestalia Hospitality and, without any outside investors, formed a team that is now working on its fourth restaurant concept slated to open in 2019 in Uptown Minneapolis. Kim did not follow a traditional path to the restaurant industry. She pursued an acting career after graduating from New York’s Columbia University with a degree in English. Burnt out after eight years of theater and commercial work, she and Leifur decided to open the neighborhood restaurant of their Minneapolis dreams and New York memories. That was Pizzeria Lola. Kim didn’t attend culinary school; a Korean immigrant, she grew up watching her mother and grandmother make kimchi from scratch out of necessity—no restaurants in Minneapolis had it on the menu. “It wasn’t unusual for me growing up as a kid to have a dinner table that had a bucket of KFC and biscuits with kimchi and a side of rice,” Kim says. “So to have Korean short ribs, with three kinds of kimchi and a pepperoni pizza and cauliflower is not foreign. It’s totally normal.” In fact, Kim believes being an industry outsider has worked in her favor. "Instead of listening to the rules of opening up a restaurant—where you put the seats, what you can and can’t put on a pizza—those were all thrown out the window and we just followed our guts and what we thought was missing from the pizza landscape. That worked for us. When you do something that’s against the grain, people are hungry for that." Following the success of Lola, she opened Hello Pizza, a New York-style slice shop, and then came Young Joni, the critically acclaimed restaurant she describes as “my heart and soul.” She talks about learning to work on the business rather than in it, and realizing that her favorite part of the process is creating new things. “I’ve got a million ideas in my head. I love the idea of creating things, coming up with an environment in which people can eat that makes them feel good and special. That’s the part that drives me.” As much as she loves designing a restaurant and menu, Kim takes just as much joy and satisfaction in the business. “Creation is not just about the next dish. To me, creativity is how can you take an organization and grow it in a sustainable way.” Kim talks about the shock of being nominated for the culinary industry’s top honor, a James Beard award. Shortly after this recording, she won the 2019 James Beard Award for Best Chef Midwest. After our conversation with Kim, we go back to the classroom with the University of St. Thomas Opus College of Business associate professor Alec Johnson to discuss how entrepreneurs can successfully move from creative inspiration to scalable business.
