Food is, of course, an important part of culture. A new exhibit at the Illinois Holocaust Museum and Education Center in Skokie, Illinois, is exploring the role delis have played in Jewish culture and history. In America, many delis were founded by Holocaust survivors.
I sit down with Jenny Goldfarb, the founder of Mrs. Goldfarb's Unreal Deli to discuss her vegan deli meat. She shares how she ties veganism into her torah practice, how she got her new product into the market, and her experience on Shark Tank. Jenny Goldfarb, aka Mrs. Goldfarb, is the founder of Unreal Deli. She grew up on the Standard American Diet (SAD), and in her early 30s, learned about the plight of animals on factory farms, which led her to adopt a plant-based diet. After much trial and error she became a whiz in the plant-based kitchen and realized the thing she missed most after becoming vegan was premium NY-style deli meat. She sought to recreate a corned beef made from beets, chickpeas, tomatoes and high protein wheat. The recipe became such a hit that it encouraged her to produce her Corn'd Beef Reubens for Delis, Whole Foods, even Shark Tank, where she took on Mark Cuban as primary investor. The company then developed Unreal Roasted Turk'y followed by Unreal Steak Slices (coming soon). With no experience in the food sector, let alone launching a company, she gave birth to this rapidly expanding business in her tiny kitchen while pregnant with her 3rd child. Deli culture, much like pizza and bagel culture, is part of the New Yorkers' (specifically Long Islanders') DNA. If you're from Long Island, you know someone who worked in a deli or have worked in one yourself, and you most definitely have a strong opinion about which deli you think is best. Steven A. Lyon, Ph.D., is the Director of Food Safety–Field Operations at Chick-Fil-A Inc. He has been with Chick-fil-A since 2009, leading various food safety and animal welfare initiatives. His current role is centered on control of foodborne and respiratory diseases within the enterprise. He has held several roles encompassing supply chain food safety; product safety; restaurant procedure; kitchen design reviews, solutions, and innovations; animal welfare; and regulatory compliance. Prior to Chick-fil-A, he was with the U.S. Department of Agriculture (USDA) for seven years, where he worked on several projects involving antimicrobial resistance (AMR) and surveillance programs aimed at protecting public health from emerging foodborne pathogens. His work has been published in peer-reviewed scientific journals and magazines associated with poultry production. Dr. Lyon holds a B.S. degree in Poultry Science, an M.S. degree in Microbiology, and a Ph.D. in Food Microbiology, all from the University of Georgia's College of Agricultural and Environmental Sciences. Today we'll talk about the history of Jewish Delis. If we turn the clock backward for a few years, we'll notice that Jewish delis in New York City began in the late 19th century when Eastern European Jewish immigrants settled there. These immigrants brought their homeland's culinary traditions, including pickled herring, smoked fish, and pastrami. In the big apple, delis appeared on small storefronts that sold traditional Jewish foods like bagels, lox, and gefilte fish. These delis quickly became popular gathering places for the Jewish community and soon became an essential part of Jewish culture in the city. As the popularity of Jewish delis grew, they expanded their menus and offerings to include a wider variety of foods, such as matzo ball soup, knishes, and corned beef. These delis also began to develop their unique style, with large, ornate displays of meats and pickled vegetables, murals, and other decorative elements. In the mid-20th century, Jewish delis reached the height of their popularity, with hundreds of delis scattered throughout the city. These delis were often bustling, noisy places where customers would line up for hours to taste their favorite foods. However, in the latter portion of the 20th century, the popularity of Jewish delis began to wane as the Jewish population in New York City declined, and younger generations moved away from traditional Jewish foods. Today, only a handful of delis continue to serve traditional Jewish foods and provide a taste of the city's rich cultural heritage, most located in the Brooklyn and Queens neighborhoods. 16 year old Melania Delis has the dream of making the US National figure skating team. If all goes well she can go on to the Olympics. Her drive and dedication is impressive for any athlete much less for someone as young as her. Melania's work ethic seems to come natural because she seems so calm and cool describing her hard days. Her days are filled with hours on the ice and doubled up with time in the gym. The respect I have for the work she puts in is without words. All young athletes needs to listen to her words of motivation.
It was so interesting hearing what it's like running a dance studio and what motivated her to go from being a San Diego Charger cheerleader to opening her own dance studio. Kyli is full of energy and you can definitely tell that by her enthusiasm to teach young dancers. There are more benefits to dance than I even realized such as memory improvement.
