Hailing from Barna in Co. Galway, Lorraine Heskin studied in University of Limerick before heading off to New York for 4 years working in a diverse range of food businesses. On returning to Dublin in 2006, she founded the Gourmet Food Parlour, opening its first 25-seater café in Dun Laoghaire. Since then, it has evolved to become Dublin's most trusted restaurant group, with 12 locations across Dublin, Meath and Galway including a state-of-the-art catering kitchen in Santry. In 2023, they opened 3 unique dining concepts inside the iconic Arnotts Dublin department store, and now have a fourth there, as well as two in Brown Thomas, employing 320 people in total. As CEO, Lorraine's hands on approach to running the business is the driving force behind the company. Her dedication, determination, and hard work filters down throughout the company. She was an EY Entrepreneur of the Year Finalist in 2023 and recently won CEO of the year at the inaugural Business Post, Leadership and Excellence Awards. She has her own consultancy business established where she works with female entrepreneurs on their business journey, guiding and encouraging them to grow and scale. From Ice-Cream Parlour to Record Label In the early 1960s, the Kong family ran Beverley's Restaurant, Ice-Cream Parlour & Record Shop at 135A Orange Street, Kingston—a hub in Jamaica's emerging music scene. One day in 1961, a teenage Jimmy Cliff auditioned his song “Dearest Beverley” outside the shop. Leslie Kong, impressed, recorded it and paired it with “Hurricane Hattie.” This single became Beverley's first big hit and launched both Cliff's career and the label itself. If Pepe's Italian & Liquor is all swagger and spectacle: snow machines, themed decor, and a big personality, then Pepe's Parlour offers something quieter and more composed. The original venue opened in 2019 in a former synagogue on Exhibition Street, serving Italian American classics in a space that leans into old-school New York glamour. Next door, Pepe's Parlour channels the elegance of a London members' club, softened by a Melbourne sensibility: martinis, soft light, hand-painted tomato murals. It's also where Antonio Loffredo is doing quietly brilliant things in the kitchen. Antonio grew up in Campania and then the Amalfi Coast and started making pizza in his father's shop at 16. He has worked across just about every section of a kitchen since arriving in Melbourne more than a decade ago. Now head chef at the Parlour, he's turning out focaccia made from a slow-fermented dough, fresh pasta, and light, lunch-friendly plates that still manage to feel generous. We talked about the emotional pull of food, why he won't use bread with a 15-ingredient label, and how a baking course during lockdown completely reshaped the way he cooks.
