Segment 2, November 16th, 2024 When we last spoke with our next guest, we had a sneak preview of a proposed restoration project involving NC's most prolific cold water fish hatchery, the  Bobby N. Setzer Hatchery in Pisgah forest. Of course Helene's devastation brought unimaginable devastation to property, lives, & communities across parts of WNC.  It also has caused a possible change of plans to recreational fishing in the mountains. Jake Rash is the Coldwater Research Coordinator for the NC Wildlife Resources Commission, where he helps with the coordination of research and management of NC's trout resources.  He recently spoke with Carolina Outdoor host, Bill Bartee, about the trout waters on North Carolina in 2024. Show Highlights: The Armstrong Fish Hatchery near Marion had the most damage during the Helene storm There is a revised trout stocking occurring for the rest of 2024.  The NC Wildlife Resource Commission is developing plans on how to properly move forward. The western region of North Carolina & its economy count on trout fishing and it was important to safely stock the streams for people. The Trout Page is the best resource to learn plans as they are announced and developed. Eastern Brook Trout Joint Venture approved Jacob "Jake" Rash as its new Chairman in 2022.  He says that he's anxious to find how the Brookies handle the storm in certain parts of the state.  They can handle lots of water but the landslides are another story. He also notes that other species of fish may not require such precautions. 33:54 - Hank explains the difference between pelagic and benthic fish. Pelagic fish, such as tuna, mackerel, and bluefish, live in the middle or top layers of the water, whereas benthic fish, like flounder, live on or near the bottom. 37:18 - Hank discusses his book "Hunt, Gather, Cook," describing it as a primer on various wild activities like fishing, foraging, and hunting. The book aims to inspire and provide foundational knowledge for those looking to delve into these fields, whether they are experienced in one area or new to another. 38:51 - For those in the Midwest or the East, Hank recommends the books by Samuel Thayer which he says are some of the best foraging books. 40:48 - Hank mentions that he has a course on venison through an online course called Outdoor Class. In addition, he hints at an upcoming fishing course that has already been filmed and is expected to be released soon. 42:33 - To help you identify plants on your hike or outdoor trip, Hank suggests a few books, including one by H.D. Harrington called "Edible Native Plants of the Rocky Mountains". He also highlights "Botany in a Day" as a valuable resource for learning basic plant knowledge. 44:30 - Hank emphasizes the importance of clinical identification in mushroom hunting, using a method called "keying out," where you follow a series of if-then statements to accurately identify a species. This precise approach helps prevent mistakes that could arise from over-relying on instinctual pattern recognition. He also recommends books by Paul Stamets, a renowned expert on mushrooms, and mentions that Michael Pollan has also written a book involving mushrooms. 46:35 - Hank offers useful advice on identifying edible berries. He explains that any berry that looks like a blackberry or raspberry, with its compound fruit structure, is generally safe to eat. He also mentions that berries with a star-shaped mark on the bottom, like blueberries, are part of the Vaccinium clan and are all edible. This star mark is a reliable indicator of whether a berry is safe to consume. 51:01 - We talk about cooking methods for surf perch, a type of fish that can be challenging due to its mushy meat. Hank also recommends Asian markets for high-quality fish, though cautioning that one must be able to identify fresh fish. 55:06 - He explains how to determine the freshness of a fish, emphasizing that the fish should look as if it just came out of the water. Key indicators include bright eyes that are not sunken or clouded and gills that are a pleasing pink or red color. For fish fillet, Hank mentions the press test: fresh fish meat will bounce back when pressed, although most fish markets may not allow this test. 55:55 - Hank mentions that the most common problem in cooking fish is fish sticking to the pan or grill. To prevent this, he advises that the pan and oil must be very hot, and the fish must be extremely dry. Hank emphasizes the importance of using high smoke point oils like canola, rice bran, or avocado oil. He also shares a crucial tip: when placing the fish in the pan, immediately jiggle the pan to ensure the fish doesn't stick. This motion helps the fish slide, preventing it from sticking to the pan and potentially overcooking. 57:16 - Hank's favorite ingredient to add when cooking fish is wild fennel, but also highlights mushrooms as a versatile option. He explains that mushrooms like morels pair wonderfully with trout, and button mushrooms complement white fish. Our destination is beautiful Shenandoah National Park for mountain Brook trout with 60-year fly fishing veteran, Harry Murray, Murray's Fly Shop, Edinburg VA.   Virginia has over 3,500 miles of trout streams, and the Shenandoah Valley and surrounding mountains are loaded with brook trout.  With 79,000 acres of protected wilderness area, prolific hatches, and dozens and dozens of steams to choose from, the Park is where to go for scenery, solitude and wild brookies.   Harry opened his fly shop in 1962, the same year he received his pharmacy degree. Palmer Henson is an avid angler from Georgia (also appearing in episode 3), who has spent the last few years trying to hunt down as many brook trout streams as he can in Georgia. Sarah Baker is a fisheries biologist with the Georgia Department of Natural Resources who focuses on trout. Palmer and Sarah have been working together on a sort of “citizen science” project, in which Palmer's personal passion for finding remote brook trout streams assists the DNR with their surveys. In this episode, Palmer and Sarah discuss how they got connected, how they've been working together to uncover new brook trout streams, and a few ways the DNR will be able to use the data to protect this iconic species. A Negroni is one of the great cocktail classics. In fact, it’s celebrating its 100th birthday this year, when, as legend would have it, Count Camillo Negroni asked his bartender to add a drop of gin to his Americano.   Folks are changing up ingredients all the time and the negroni has been tinkered with by creative bartenders trying their hand at redefining the basic recipe of vermouth, campari, and gin. Our guest today knew the native flavors he had in his backyard were crying out for attention and he was going to be the one who answered their call!  I can’t say his original m.o. was to rework the Negroni per se, but the outcome of his pursuits have provided bartenders with a new spirit to play with. I’m Susan Schwartz, your drinking companion, and this is Lush Life Podcast, every week we are inspired to live life one cocktail at a time by the best in the industry.  Eddie Brook’s family had macadamia nuts on their mind when purchasing an old dairy farm in Byron Bay ,an eight hour drive north of Sydney. They discovered they had landed in the region’s largest subtropical rainforest, home to hundreds of Australia’s native  botanicals. After a childhood spent enjoying literally the fruits of his parents labor and a chance meeting with his idol, Jim McEwan of Bruichladdich fame, Eddie established Cape Byron Distillery and the awards keep pouring in, especially for that one ingredient that gives his take on the negroni a particularly Australian character.   Our cocktail of the week is the Slowgroni! It has the best of both worlds - the old and the new. It starts with the traditional Gin, Campari and Vermouth recipe, but this time the gin is Brookies and the additional ingredient is the Byron Slow Gin that Eddie described!   INGREDIENTS 30ml Brookie’s Byron Dry Gin 15ml Brookie’s Byron Slow Gin 30ml Campari 15ml Premium vermouth Garnish: Orange slice or zest. This week we welcome V. Paul Reynolds editor of the North Woods Sporting Journal to the Hunt Fish Journal. Paul also writes a self-syndicated weekly outdoor column for a number of Maine newspapers and co-hosts a Sunday night radio program called "The Main Outdoor".  Paul is a member of the Outdoor Writers Association of America and serves on the Board of Directors New England Outdoor Writers Association.  Paul is an active outdoorsman who loves Maine's Great Outdoors.  From 1994 to 1998 he was Director of Information & Education for the Maine Department of Inland Fisheries and Wildlife.  We brought Paul Reynolds on the show to talk about the Great Outdoors of Maine, from fly fishing to moose hunting to its' well kept secret, the wild trout ponds and popular land locked salmon.  If you ever wanted to know more about Maine and its' rich hunting and fishing heritage, this show will give you a glimpse of what's available in Maine.               Thank you V.
