What's it like spending 24 hours a day together? Ruth Alexander speaks to couples who run restaurants. She hears how they met, what they argue about and why being a couple might be good for business. Ruth visits Andrea Follador and Jazz Navin at ‘The Perfect Match' restaurant in Sale, in the North West of England. Jazz is the chef and Andrea is the sommelier, the two met working at Gordan Ramsay's ‘The Savoy Grill' in London. Ruth speaks to Frederico Araya and Fernanda Guerrero, chefs who have lived and worked together in their native Chile, China, and now Singapore where they run fine dining ‘Araya' restaurant. Rita Sodi and wife Jody Williams ran a restaurant each, and then decided to open one together, 'Via Carota' in New York, United States. Today they run five bars and restaurants together in the city. Billy Trudsoe spent 20 years as a chef in New York before making his way to Central Florida. “The winters are long in the Adirondacks, so my wife and I said why not give Florida a shot?” Trudsoe said. The chef came down south to work as an executive chef for a restaurant in Brevard County, but the gig did not end up working out in the long run. “So I went all in on Hell's Kitchen,” Trudsoe said. Trudsoe had attempted to get on the hit reality show previously but did not make the cut on his first attempt. “It's a pretty grueling process — seven to eight months — and I got the phone call just before Christmas of last year, saying, ‘Hey, you made it. You need to be in LA in two weeks.' Dreams do come true,” he said. Trudsoe did not ultimately end up winning in the cooking competition, but he is hoping to use his elevated profile from the show to launch his own restaurant. “My ultimate goal is to get BTrue's Mad Flava, the first restaurant up and going,” he said. The name comes from Trudsoe's days as a college athlete. “When I was playing college basketball many moons ago, my basketball coach gave me a nickname, BTrue, so it's stuck ever since,” he said. “And then mad flavor — when I was a young chef on Lake George, I'd always — when I'm putting the food up in the window — I'd be like ‘Mad flavor.' You know, that was just my slogan, my slang, and it's stuck with me ever since.” In the meantime, while he looks for investors, Trudsoe is working as a private chef. “I'm willing to, you know, do whatever it takes to be successful,” he said. “I'm the type of chef that likes the formal sit down and everything like that. I like to be able to talk to my patrons and get their feedback.” On the latest episode of Florida Foodie, Trudsoe shares more about what it was like to compete on Hell's Kitchen and meet Gordan Ramsay, who is a personal idol of the chef. Christina WilsonHailing from Phillipsburg, NJ, Chef Christina Wilson moved to Philadelphia to pursue her cooking passions. In 2005, Chef Wilson jumped head first into an unpaid apprentice position at Stella Blu, later becoming sous chef. She then shifted gears to kitchen manager of Gypsy Saloon located in West Conshohocken to pay her way through Temple University. Natural talent and self guided passion helped Christina climb to sous chef within two years of prepping her first kitchen shift. Having learned all that was available to her at Stella Blu, Wilson lmoved to Center City, Philadelphia to tackle her next position head on as sous chef at 13th Street's, Lolita (Philly Top 10 Traditional Mexican Cuisine Restaurant), in 2009. Christina quickly became accustomed and took both creative and managerial command of the kitchen and ascended to Chef de Cuisine in under a year. Yearning for more knowledge and varied experience, Chef Wilson later moved to Top 50 Philadelphia restaurant, Mercato, as Chef de Cuisine. Christina created trendsetting and unique daily specials for the Italian eatery in addition to launching its lunch service this past spring. She joined 17 cast mates from around the country competing to win Season 10 of Hell's Kitchen. Chef Christina was the winner of this season 10 show and claimed the head chef position at Gordon Ramsay Steak at the Paris Las Vegas. Now She is the Corporate Chef!
