Ngành ca cao Việt Nam đã đạt nhiều thành tựu trong việc quảng bá hình ảnh ca cao Việt ra quốc tế trong những năm gần đây. Tuy nhiên, để trở thành nước xuất khẩu ca cao, nông dân trồng ca cao và các thương hiệu sô-cô-la Việt phải đối mặt với nhiều thách thức. Mười năm trở lại đây, sô-cô-la Việt Nam không phải là cái tên quá xa lạ với những người yêu thích sô-cô-la. Sô-cô-la Việt Nam có mặt ở khắp các phòng trà tại Luân Đôn, trên các con phố của Nhật Bản, hay trong những trung tâm thương mại đồ cao cấp tại Galarie Lafayettes ở kinh đô ánh sáng Paris.  Nhờ các chính sách truyền thông mạnh mẽ, thương hiệu ca cao cao cấp Marou, một trong những thương hiệu sô-cô-la Việt Nam đầu tiên, đã thành công đưa tên tuổi của ca cao Việt  ra thế giới. "Hương vị ca cao không phải ở đâu cũng có được" Được thành lập năm 2011 bởi hai người Pháp, Vincent Mourou et Samuel Maruta. Hai nhà sáng lập đã bắt đầu từ việc đi tuốt quả ca cao tận vườn để thử nghiệm làm sô-cô-la đến việc mang những thanh sô-cô-la Việt đến 32 quốc gia trên thế giới. Tại hội chợ quốc tế sô-cô-la “Salon du Chocolat” diễn ra ở Paris, từ ngày 28/10 đến 01/11/2021. Sự kiện là cầu nối cho các nhà sản xuất sô-cô-la và ca cao giao lưu trực tiếp với những người quan tâm, yêu thích sô-cô-lat. Tại đây,  RFI đã gặp ông Arnaud Normand, đầu bếp, chịu trách nhiệm sản xuất làm ra những thanh sô-cô-la Marou đầu tiên. Theo ông Normand, hạt ca cao Việt Nam có một vị đặc biệt mà không phải ở đâu cũng có được : “Nhờ vào Việt Nam mà tôi yêu thích làm sô-cô-la từ hạt ca cao. Tôi biết rằng tôi sẽ luôn làm sô-cô-la bằng ca cao Việt, bởi vì vị của nó rất đặc biệt so với các loại ca cao khác, hơi đắng, hơi chua, và đúng vị của trái cây. So với hạt ca cao từ Châu Phi, đa phần là ‘sản xuất hàng loạt', gen của cây ca cao bị biến đổi để cho nhiều quả hơn, nên chắc chắn nó không có vị gì đặc biệt. “Chương trình ca cao Việt Nam” cũng là một nhân tố quyết định lớn, vì giống cây được trồng là loại tốt, nên dĩ nhiên sẽ cho ra hạt chất lượng, và tạo nên một hương vị  sô cô la tuyệt hảo. Khí hậu cũng là nhân tố quan trọng. Thời tiết nắng nóng, mưa nhiều, phù hợp cho  phát triển ca cao, để có hai vụ thu hoạch”  Chặng đường dài để trở thành nước xuất ca cao Cây cacao được đưa vào trồng ở Việt Nam từ trước những năm 1945.  Do hạn chế về chiến tranh, thiếu kỹ thuật và không đem lại nhiều lợi nhuận như cà phê hay hồ tiêu nên đa phần bị chặt bỏ, nông dân chuyển qua trồng cây khác. Ca cao chủ yếu được trồng xen canh với điều, hồ tiêu và dừa thay vì chuyên canh như ngành trồng ca cao ở Côte d'Ivoire và Ghana ở Châu Phi, hai nước đứng đầu thế giới về xuất khẩu ca cao. Quan chức Việt Nam tham vọng đưa quốc gia thành nước xuất khẩu ca cao giống như gạo và cà phê. Năm 2012, Bộ Nông Nghiệp và Phát Triển Nông Thôn đưa ra Nghị định quy hoạch phát triển ca cao bền vững, đề ra mục tiêu đạt 50 000 ha diện tích trồng ca cao vào năm 2020, hướng tới tổng giá trị xuất khẩu 65-75 triệu USD. Ca cao được trồng chủ yếu ở 15 tỉnh tại khu vực Tây Nguyên, Đông Nam Bộ và Đồng bằng sông cửu long. Sau khi Nghị định được ban hành, Cục trồng trọt đã thống kê con số kỷ lục về diện tích trồng ca cao, lên đến đạt 25 700 hec-ta vào năm 2012. Tăng vọt so với những năm về trước khi diện tích trồng ca cao chỉ dao động từ 5000 đến 15000 hec-ta Tuy nhiên kể từ năm 2013, diện dích ca cao liên tục giảm, đến năm 2020 chỉ còn  chưa đến 5000 ha. Trả lời phỏng vấn của RFI Tiếng Việt, ông Fréderic Amiel, chuyên gia nghiên cứu về ca cao từ mười năm nay. Ông vừa xuất bản cuốn sách mang tên "Câu chuyện về toàn cầu hóa dành cho những người yêu thích sô-cô-la". Chuyên gia đánh giá về chiến lược phát triển ca cao ở Việt Nam như sau : “ Từ trước đến nay, thị trường cà phê và ca cao luôn cạnh tranh nhau. Cây ca cao và cà phê được trồng trong cùng điều kiện môi trường sống. Nhiều quốc gia, ví dụ như Venezuela. Quốc gia này chỉ trồng ca cao từ thế kỷ 19, rồi đột nhiên chuyển hẳn sang chỉ trồng cà phê. Thông thường, các quốc gia chọn một trong hai thị trường để phát triển, một là ca cao hai là cà phê. Trừ một số trường hợp hiếm như Côte d'ivoire, phát triển cả hai. Sự cạnh tranh giữa hai thị trường dẫn đến việc một quốc gia khó có thể vừa là quốc gia đứng đầu xuất khẩu cà phê, và ca cao cùng một lúc. Một thị trường sẽ chiếm ưu thế hơn. Việt Nam đã chọn thị trường cà phê. Điều này có thể giải thích về việc chính phủ Việt Nam đã có ý định đưa đất nước thành nước xuất khẩu ca cao cách đây khoảng gần một thập kỷ. Nhưng lại gặp phải nhiều khó khăn.Thứ nhất là cạnh tranh về diện tích đất trồng với cà phê, vốn đã được quy hoặch từ trước. Thứ hai là về sản lượng, nếu không đáp ứng được sản lượng cho xuất khẩu. Ngành trồng ca cao khó có thể lấy được chỗ đứng”.Định hướng theo mô hình ca cao bền vững, chất lượng cao Theo cơ quan phát ngôn của bộ Công Thương, diện tích đất trồng ca cao sụt giảm cũng liên quan đến các yếu tố như biến động giá, do vùng trồng cây chưa được lựa chọn phù hợp, hay do hạn chế về kỹ thuật và thiếu nguồn thu mua từ nội địa và quốc tế. Sô-cô-la Marou được cho là đã mở ra một trang mới cho phát triển ca cao bền vững tại Việt Nam. Marou, ngay từ đầu đã hướng tới sản phẩm cao cấp, giá thành cao. Ca cao được được định giá cao hơn vì thương hiệu này thực hiện mô hình “bean-to-bar” :  thu mua hạt ca cao từ người trồng, sau đó chế biến trong xưởng sản xuất sô-cô-la mà không qua trung gian. Theo ông Frédéric Amile, việc định hướng thị trường chiến lược như vậy là một thách thức không nhỏ đối với sô-cô-la Việt Nam và ngành sản xuất ca cao : “Một thách thức lớn đối với người trồng ca cao ở Việt Nam, đó là, hiện nay, có hai thị trường ca cao phân chia rõ ràng. Thứ nhất là thị trường trồng ca cao “hàng loạt” do Bờ Biển Ngà và Ghana đứng đầu, đây là thị trường cho các loại ca cao “vô danh”, dùng cho tiêu dùng sô-cô-la đại chúng. Thứ hai là thị trường ca cao chất lượng cao, chủ yếu được gắn với các nước châu Mỹ la tinh bởi người tiêu dùng sô-cô-la. Những người yêu chuộng sô-cô-la thường sẽ không nghĩ đến châu Á như một nơi có sô-cô-la chất lượng cao. Việt Nam đã cố gắng đầu tư vào ngành này, để trở thành một nước xuất khẩu ca cao.  Nhưng lại hướng đến phân khúc ca cao hảo hạng để làm ra socola chất lượng cao. Thế nhưng, hình ảnh sô-cô-la Việt Nam lại quá mới mẻ, nên khó để người tiêu dùng gắn hình ảnh sô-cô-la chất lượng cao với Việt Nam”     Tìm chỗ đứng trong một thị trường đã bão hòa Hơn 60 % sản lượng ca cao thế giới được sản xuất đến từ Côte d'ivoire và Ghana. Các đồn điền ca cao ở Tây Phi chủ yếu được trồng từ những năm 1990. Năm 2018, bệnh “sưng chồi”, còn được gọi là “bệnh si đa ở ca cao” bùng phát ở cả hai nước, ảnh hưởng tới gần 300 000 hecta ca cao. Hơn 100 000 hec ta ca cao sẽ phải nhổ bỏ. Sản xuất ca cao hàng loạt là một trong những nguyên nhân chính dẫn đến nạn phá rừng ở Tây Phi. Tiếp đó là biến đổi khí hậu và suy thoái đất trồng cũng như giống cây. Trước những tình trạng này,  Frédéric Amiel cho rằng “cục diện thế giới đang dần thay đổi” đối với thị trường sản xuấ ca cao lớn nhất thế giới : “Hai nước xuất khẩu ca cao hàng đầu thế giới đang đứng trước hai lựa chọn : một là làm mới lại đất trồng ca cao; hai là để cho các nước khác “vượt mặt” lấy mất vị trí dẫn đầu, đó có thể là ca cao từ châu Mỹ la tinh hoặc từ châu Á. Ở châu Á, ngành trồng ca cao đã xuất hiện từ rất lâu, từ ít nhất hai thập kỷ. Indonesia là nước xuất khẩu ca cao đứng thứ ba thế giới. Vị trí của ca cao châu lục này không thể chối bỏ. Tôi thấy rằng có một khuynh hướng phát triển các vùng trồng ca cao mới ở Châu á. Nhưng các nước này lại gặp phải khó khăn lớn. Hiện nay, ca cao đang trong tình trạng “sản xuất thừa”. Lượng ca cao sản xuất ra nhiều hơn lượng tiêu dùng. Thế nên, không có nhiều chỗ cho thị trường mới để phát triển. Thực ra, ca cao ở châu Á có thể có cơ hội để phát triển nếu chúng ta nhìn vào dữ liệu của chuỗi cung ứng. Đó là thị trường sô-cô-la Nhật bản và Trung quốc, đã hình thành từ khá lâu. Ở các thị trường này, sô-cô-la đang rất được ưa chuộng ở tầng lớp trung lưu. Chính vì thế, có khả năng hai thị trường tiềm năng này có thể tạo chỗ đứng cho sô-cô-la ở châu Á, mà nguồn ca cao chủ yếu đến từ Indonesie, chế biến ở Malaysia rồi xuất sang Nhật Bản và Trung quốc. Chuỗi cung ứng có thể được mở rộng ra hơn nữa với các nước khác trong khu vực, đầy hứa hẹn phát triển cho thị trường Việt Nam” Theo tiêu chí của Tổ chức Cacao Quốc tế (ICCO), Việt Nam đứng thứ 23 trong danh sách những nước có sản phẩm ca cao đạt hương vị tốt, là quốc gia châu Á thứ hai đạt danh hiệu này sau Indonesia. Tuy nhiên, trong khi 40 % sản lượng ca cao Việt được công nhận thì đối với Indonesia, con số này chỉ là 1 %. Những tiêu chí quyết định đến chất lượng ca cao liên quan đến cách thức trồng cây theo mô hình bền vững, thổ nhưỡng, và độ lên men của hạt ca cao. Năm 2016, Sô-cô-lat Marou của Việt Nam được New York Time đánh già là một trong những loại sô-cô-la ngon nhất thế giới.   Đối với Arnaud Normand, ca cao Việt nam hoàn toàn có tiềm năng để phát triển hơn nữa. Theo ông, để ca cao Việt Nam có chỗ đứng vững chắc trên trường quốc tế, các nhà sản xuất sô-cô-la cần đẩy mạnh chiến dịch truyền thông hơn nữa về chất lượng hạt ca cao Việt. “Nhiều người vẫn chưa biết đến ca cao Việt, nó mới xuất hiện trên thị trường thế giới không lâu, chỉ khoảng 10 năm nay. Và khi nhiều khách mua sô-cô-la của tôi thì tôi sẽ mua nhiều hạt ca cao hơn” Sau khi kết thúc hành trình "sản xuất sô-cô-la" với Marou, Normand đã quay trở lại Paris năm 2019 để tạo dựng thương hiệu của riêng mình, cùng một số người bạn gây dựng thương hiệu sô-cô-la “Les copains de Bastien”, chỉ sử dụng nguyên liệu ca cao hảo hạng từ các nước ít được biết đến như ca cao đến từ Cuba, Colombia hay Việt Nam. Ông nhấn mạnh rằng Việt Nam cần phát triển thêm nhiều thương hiệu sô-cô-la hơn nữa. Nếu như không có nhiều thương hiệu sô-cô-la sử dụng ca cao Việt, sản xuất ca cao khó mà tăng lên  được. Hương vị ca cao Việt đã được công nhận rộng rãi, vậy nếu muốn thâm nhập thị trường thế giới, thì định hướng phát triển của ca cao Việt Nam là đi theo theo con đường phát triển bền vững, duy trì mô hình trồng trọt xen canh, thích ứng với điều kiện môi trường tự nhiên.

Samuel Maruta is the co-founder of Marou Chocolate, a craft chocolate company based in Ho Chi Minh City, Vietnam. Since its founding in 2011, Marou has worked directly with Vietnamese cocoa farmers to source the seven cacao origins they work with. Two shops and nearly nine years later, the company is still going strong, and serving as an inspiration for other up-and-coming chocolate brands based at-origin. So what inspired Sam & his business partner to start Vietnam’s first craft chocolate company? How has their business had an impact on the ground? In the interview, we dig into the company mindset at Marou, Vietnamese agriculture, and how quickly the country is changing.
