Kako bi iz čebule, ki zdaj zelo poganja, pripravili juh, sprašuje poslušalec. Sestra Nikolina mu je svetovala, naj za šest oseb pripravi liter in pol do dva litra vode. Potrebujemo tri srednje velike čebule (15-20 dag). Narežemo jih in solimo. Prilijemo malo vodo, da se najprej pokuha, nato pa se na maščobi začne pražit, da dobi barvo, da da okus in potem lahko še pridamo malo krompirja, malo korenčka ... Zalijemo, da sa dobro skuha, zmiksamo, po okusu solimo. Okus izboljšamo s kislo smetano. Še več čebule bomo potrebovali, če se bomo lotili pripravljanja golaža.

Oglasil se je poslušalec iz Tuhinjske doline, kjer je zdaj čemaža v izobilju - seveda pravi, da je potrebna previdnost pri nabiranju. Zanima pa ga, kaj vse lahko iz njega pripravi. Sestra Nikolina pravi, da bomo največ ohranili, če ga uporabimo svežega. Krompirjeva solata s svežim čemažem je dobra, pa tudi v raznih solatah se poda. Ali pa sveže narezan v juhi. Sicer pa kot delamo s špinačo - očiščen čemaž damo v vrelo vodo, pustimo minuto ali dve in ga nato narežemo ali damo v mikser. Takega lahko dodamo v krompirjevo juho: krompir skuhamo, stlačimo in dodamo zmiksan čemaž. Okus obogatimo s kakšno žlico kisle smetane. Lahko pripravimo tudi zavitek s čemaževim nadevom (potrebujemo še jajca in smetano). Za konzerviranje pa čemaž operemo in posušimo. Naložimo ga v multipraktik, solimo in dodamo malo olivnega olja. Zmiksamo in naložimo v kozarčke. Hranimo jih v hladilniku. Tako pripravljen čemaž bo prišel prav namesto česna pri različnih jedeh.

Pripravljamo ga podobno, kot iz govejega mesa. Okus bo seveda drugačen, kot je tudi pri divjačini ali konjskem mesu. Odstranimo kosti in meso narežemo. Posebej na maščobi pražimo čebulo, ki jo tudi zalijemo z 1 dl vode, da se pokuha. Ko voda izhlapi, dodamo meso in ga ob stalnem mešanju počasi pražimo. Čez čas lahko dodamo malo narezanega korenčka, gomolj zelene ali kakšno drugo zelenjavo. Malo zalijemo in pokrito dušimo. Dodamo lovorjev list, malo rožmarina, šetraja ... Ko je meso drobljivo, ga zalijemo s toliko tekočine, kot bomo potrebovali golaža. To je lahko tudi krompirjevka ali ostanek kakšne juhe. Dodamo tudi 1-2 žlici paradižnikove mezge, malo gorčice, zgostimo ... Okus obogatimo z žlico vina ali domačega kisa. ... Zraven ponudimo krompir, polento …
Enolončnica je dobra, močna, okusna juha. Ena takih je ješprenj, ki je odličen, tudi če je brez mesa. Ješprenj dobro operemo in namočimo. Nato ga (najbolje naslednji dan) v tej vodi tudi skuhamo do vrenja. To vodo odlijemo in zalijemo z vročo vodo ter dodamo kuhat še zelenjavo (na kocke narežemo korenje, korenino zelene, grah ... ). Zabelimo ga lahko s slanino, zaseko, ocvirki, dodamo lahko strt česen in malo kuhanega fižola. Okus bo dopolnil tudi zelen peteršilj. Ješprenj bo povsem drugega okusa, če se bo hkrati v njem skuhala še kranjska klobasa. V tem času lahko pripravljamo tudi že jedi na žico iz kisle repe ali zelja. Seveda ne gre brez krompirja, stlačenemu dodamo strt česen in zabelimo z vročimi ocvirki ali zaseko. Enolončnice lahko čakajo, lahko jih pogrevamo ...
V postnem času smo, radi pripravljamo jedi na žlico, zato je sestra Nikolina povedala tudi, kako pripraviti dober ješprenj. Prvi dan ga namočimo, naslednji dan pa v isti vodi pristavimo in pustimo, da vre pet minut. Nato ga odcedimo in zalijemo z novo, čim bolj vodo ali ostankom juhe. Ko znova pride do vrenja, dodamo narezano zelenjavo: korenje, zelena, cvetača, grah, fižol, krompir ... Posebej prepražimo čebulo (na masti, zaseki ...). Ko postane zlatorumena, dodamo še narezano papriko (lahko tudi iz skrinje) in česen (tega ne smemo pražiti). To dodamo v ješprenj. Že med kuhanjem dodamo 2-3 lovorjeve liste in solimo. Okus dopolni taka ali drugačna mesnina – npr. že v tej tekočini kuhana kranjska klobasa … Na koncu dodamo sesekljan peteršilj ...
Ob začetku kinematografske poti francoskega filma Okus strasti razmišljamo o podžanru gurmanskega filma - filmih, pri katerih ogled na prazen želodec ni priporočljiv. Ocenjujemo tudi fantazijski muzikal Wonka, ki ga je navdihnila knjiga Čarli in tovarna čokolade Roalda Dahla, v filmu pa nastopata Timothée Chalamet in Hugh Grant, ki je spet poskrbel za razburjenje, ko je rekel, da film sovraži. Bliža se tudi 21. december z najdaljšo nočjo v letu, ki je že tradicionalno posvečena kratkemu filmu – letos v dvoranah Art kino mreže po vsej Sloveniji in v Slovenski kinoteki v Ljubljani v sodelovanju z goriškim Kinoateljejem ter prvič tudi v gledališču Miela v Trstu.
Slovenski naslov filma Okus strasti povsem nazorno predstavi njegovo vsebino. Zgodba namreč spremlja kuharico Eugénie, ki živi in dela pri gastronomu Dodinu Bouffantu, večina dogajanja pa je osredotočenega na njuno skupaj strastno pripravljanje slastnih jedi. Obenem sta tudi par in tako dobimo vpogled še v njuno romantično strast. Ta je sicer nekoliko bolj umirjena, saj je dogajanje postavljeno na francosko podeželje v začetek 20. stoletja, zaradi česar je nujno izkazovanje romantike podvrženo določeni meri zadržanosti in družbenih protokolov, ki so nam danes morda tuji. Vseeno niti za trenutek ne podvomimo v iskrenost njune ljubezni ali v njuno enakopravnost v odnosu. Režiser Tran Anh Hung se je s svojim drugim francoskim filmom lotil predelave literarne klasike, ki je sicer nimamo v slovenskem prevodu, njen avtor Marcel Rouff pa sodi med pionirje pisanja o gastronomskih užitkih. Hungov film te užitke mojstrsko prelije v žive podobe, k temu pa izdatno pripomoreta tudi Juliette Binoche in Benoît Magimel v glavnih vlogah. Ne le, da izkažeta izjemno mero žara in strasti drug do drugega, prav fascinantno je opazovati, kako vešča sta v pripravi hrane in s kako predanostjo se lotevata kuhe. Žanrsko je Okus strasti romanca in to odlična, prehranski vidik pa ga uvršča tudi v vse bolj priljubljen podžanr gurmanskih filmov. Za te je značilno, da pripravo hrane predstavljajo s skoraj erotičnim žarom, pri čemer je hrana včasih metafora za druge pomembne življenjske stvari, denimo ljubezen ali kreativnost. Posamezni gurmanski vložki so sicer že desetletja stalnica kriminalk in filmov borilnih veščin iz Hong Konga in Japonske, kjer pogosto služijo kot lahkoten premor za umirjanje tempa in napetosti, ko denimo med obleganjem gangster pripravi pojedino za svojo ekipo ali talce. Obenem je vloga chefa tudi izziv za igralce, da izpilijo lastne spretnosti, tako smo lahko pod prste gledali hollywoodskim zvezdnikom, kot so Jon Favreu, Bradley Cooper in Nikolaj Coster-Waldau, pri nas pa tudi Juriju Zrnecu in Klemnu Janežiču. V zadnjih letih je gurmanski film napredoval do te mere, da smo začeli dobivati že revizionistične poskuse žanra. Tako je denimo predlanska danska drama Okus lakote prikaz propada v katerega obsesija s hrano žene uspešnega chefa in njegovo družino, medtem ko lanski srhljivi triler Mení prikaže chefa kot vodjo kulta, ki gastronomijo uporabi kot orožje za množično uničenje. No, Okus strasti je nasprotje tega – film poln topline, romantike, ljubezni in drugih slastnih dobrot.
Starejši ljudje na podeželju vedo povedati, da na res dobro kislo repo vpliva tudi to, če je repo na njivi vsaj enkrat dobila tudi slana. Kaj bi mi odgovorili, ko bi vas vprašal, kakšen okus ima banana? Torej: kakšen okus ima banana? Vaš prvi odgovor bo, o tem sem skoraj stoodstotno prepričan – »sladek«. Res je, banana je sladka, a to je dokaj splošen odgovor, saj je veliko reči sladkega okusa in prosil vas bom, da okus banane natančneje opišete. In čeprav je ta rumeni sadež sestavni del naših vsakodnevnih jedilnikov in je bil kot »papica« ena prvih reči, ki ste jih kot otrok okusili, se boste znašli v težavah in brez pravih in primernih besed, ko boste skušali opisati okus banane – kajti banana ima pač okus po – banani. Vem: banalno. Zdaj pa vas vprašam, kakšnega okusa ste vi? Bi se ljudje, ki vas poznajo: sodelavci in prijatelji, s katerimi se družite, znašli v zadregi, ko bi vas morali opisati? Ste unikatni in edinstveni − samosvoji, če hočete − ali bi vas razvrstili v splošen sladkoben opis? Si sploh želite biti svojega okusa ali želite le ugajati? Ste zreli ali že gnijete? Ste sploh pravega okusa? Si lahko predstavljate, da ugriznete v banano in ima okus po kavi? Čeprav imate kavo radi, je to vendarle vsaj neprijetno presenečenje, če ne celo razočaranje! Torej ponavljam: Ste pravega okusa? Si želite biti? Imate svoj okus ali le spominjate na nekaj? Ali če prevedem: ste karakter ali karikatura? Imate obraz ali ste brezobrazni? Ste pristni ali ste le presni? Uf, o čem vse človek lahko razmišlja med zajtrkom ali dopoldansko malico.

Jajca naj bodo sveža, v lončku jih nežno razžvrkljamo. V ponev damo maščobo in jo ravno prav (ne preveč) ogrejemo – maščoba se ne sme kaditi. Uporabimo lahko olje ali domačo mast, manj primerno je maslo (ker se mlečna beljakovina na previsoki temperaturi žge). Okus lahko dopolnimo oz. izboljšamo s prepraženo čebulo, ocvirki, drobnjakom, sirom … Serviramo na topel krožnik in takoj postrežemo.

Learn how we, as designers, interface with open source in a sustainable way, how we integrate into different communities, and how we as coders, work with other designers. Today, we are joined by two guests, Christoph Ono, who is a UX and digital product designer from the Bitcoin Design Community, and Conor Okus, who works for Block, and is part of an initiative called Spiral, previously Square Crypto. On this episode, we are going all out looking at design for Bitcoin. Christoph and Conor fill us in about the Bitcoin Design Community, Bitcoin Design grants, and some challenges they had to face in the process of setting this community up. They go in depth about the designer's principles, the life cycle of a project, how they decided to focus on the onboarding side. Poslušalec bi rad naredil potico z nadevom iz kokosa. Sestra Nikolina mu je svetovala, naj kokos praži skupaj s sladkorjem (lahko tudi v prahu). Stalno je treba mešati. Ko dobiva oranžno bravo, ga stresemo v posodo. Posebej zavremo mleko in ga malo skladkamo. Odstavimo in zamešamo kokos, dodamo rumenjake in sneg ter limona za aromo. Okus obogati žlica smetane.
Pecivo, ki smo mu pri peki dodali maščobo, bo polnega okusa in sočno, pecivo brez olja pa se bo verjetno v prvi vrsti drobilo. Maščoba se pri peki sladkih izdelkov uporablja zaradi teksture, sočnosti in okusa. Vendar če je pri doziranju sladkorja jasno, da z njim ne gre pretiravati, tega pri maščobah še nismo povsem posvojili.

Fellow Class of 2017 Bitcoiner Conor Okus is part of the founding team that is building out Hello Bitcoin, a series dedicated to being "Your friendly place to learn about Bitcoin." He is also host of Advancing Bitcoin, a podcast related to the 2-day Advancing Bitcoin event in London, featuring developers and designers who are making it easier to onboard new Bitcoiners. His day job is Product Manager at Square Crypto, where he and his team focus specifically on improving the developer experience in Bitcoin via the Lightning Development Kit. Conor is Changing the Tide by helping guide the building out of ways for developers to choose Lightning features they want to integrate into their Bitcoin wallets. His team is also funding BTCPayServer, Bitcoin Core developers, designers working in the Bitcoin Design Community, and Lightning infrastructure projects. Outside of his 9-5, he is working tirelessly with others to build out educational material (like "Hello Bitcoin") to onboard new people, as well as help decentralize the funding of Bitcoin's and Lightning's open-source development. Naučit se ovládat loď, rozdělat táborák, ale hlavně najít si dobrou partu, to vás naučí v loděnici Klubu vodáků-turistů v Pardubicích.
Lahko naredimo dušene - narežemo in damo na pogreto olje, obrnemo in dodamo malo tekočine ali juhe. Okus izboljšamo s peteršiljem.
Paradižnikova omaka: na maščobi prepražimo čebulo, potresemo z žlico moke (bele, pirine, ajdove) in zalijemo z mezgo (iz konzerve ali domačo). Premešamo. Okus obogati narezana rezina paprike ali narezan korenček. Po okusu dodamo sladkor. Špinačna omaka: razstopimo maščobo (olje in/ali masla), zamešamo moko in zalijemo z vodo ali juho, da se moka dobro skuha, nato dodamo zmiksano špinačno ali blitvo (dodamo še narezan peteršilj). Počakamo do vrenja in po potrebi dopolnimo z žlico kisle smetane. Če je preveč redka, v smetano dodamo žličko moke. Sirova omaka: ko sladka smetana (ali smetana in mleko) začenja brbotati, dodamo narezan sir (topljeni ali gorgonzola ...) Lahko pa najprej popražimo gobe in nato nadaljujemo s postopkom sirove omake.

Kislo repo rahlo operemo, zalijemo in skuhamo - naj vre 20 minut. Dodam lahko krompir in/ali fižol. Krompir (z dodatkom na kolobarje narezanega korenja) posebej skuhamo, odcedimo in stlačimo ter dodamo stisnjen strok česna in žlico olja. Dodajamo krompirjevko in ga zabelimo s prepraženo čebulo ali vročimi ocvirki ali zaseko. Združimo s kislo repo, ki se kuha in po želji dodamo posebej kuhan fižol ali za barvo malo paradižnika iz tube, kozarca ali steklenice.Za mineštro je dobro, da repo narežemo na 2-3 cm dolge rezine. Damo kuhati v juho ter dodamo zeljenjavo, ki jo želimo vključiti. Prepražimo čebulo, z malo pomokamo in zaljiemo z 1 dl paradižnikove mezge. Ko prevre, zlijemo v juho in dobimo miništro. Okus lahko popravimo s kislo smetano.
