Potica ne sme manjkati pri žegnu jedi za veliko noč. Sestro Nikolino smo vprašali, na kaj biti pozoren pri pripravi testa. Prvi nasvet je bil, da si pravočasno pripravimo vse sestavine – najbolje že zvečer, da niso do zadnjega v hladilniku. Potem moramo paziti, da sestavljamo po receptu. Pomembno je, da testo dobro pregnetemo. Ker med tem postaja trdo, lahko po potrebi prilijemo še kakšno žlico mleka. Če gnetemo prekratek čas, ne dobimo prave trdote in potem imamo testo, ki počasi vzhaja in poka. Pri gnetenju se mora ločiti od sklede pa tudi od rok. Če je še zelo mehko in se drži rok, dodamo ščepec oziroma žlico moke in še malo pognetemo. Nato mora testo dovolj časa vzhajati – uro in pol in pri tem ga bo še enkrat več. Če nadev še ni do konca pripravljen, testo še malo pognetemo. Da je dovolj vzhajano, preverimo tako, da gremo s prstom v testo in se mora lepo dvigniti. Razvaljamo ga po pomokanem prtu, in sicer enakomerno, tanko. Če pri valjanju nastanejo debeli robovi, jih s koleščkom odrežemo in naredimo kakšen brioš. Kaj pa nadev – kaj storimo, če ga je preveč in kaj, če ga je premalo? Namazati moramo bogato, pravi sestra Nikolina, a ne preveč, sicer bo potica slaninasta. Če je nadeva preveč, ga lahko spravimo in ga bomo uporabili naslednjič. Če pa je nadeva premalo, namažemo bolj tanko in mogoče bolj bogato posujemo z rozinami, ki smo jih namočili v rumu. Nenamazan kos lahko posujemo samo z rozinami ali pa ga celo odrežemo. Potico zavijamo z roko. Testo za lazanjo lahko naredimo sami, svetuje sestra Nikolina, in sicer zamesimo tako kot za rezančno testo, potem ga pa s pomočjo strojčka za rezance razvaljamo široke pramene (na največjo možno širino). Odlagamo jih na rahlo pomokano desko ali pa kar takoj v pekač. V tem primeru je še rahlo vlažno in se zelo lepo dela. Paziti moramo, da naredimo bolj sočni nadev (mesni ali zelenjavni), ker testo ni kuhano in porabi več vlage. Na vrhu lazanjo prekrijemo z bešamelom in potresemo s sirom.
Naj se današnji praznik pozna tudi na mizah, se strinja tudi sestra Nikolina in predlaga, da se kosilo začne z dobro juho. Za zakuho so lahko rezanci ali pa domača, sveža ribana kaša ali zdrobovi žličniki - lahko so z dodano narezano špinačo. Zelo okusno in preprosto ter hitro pripravljeno je pečeno piščančje meso. To so lahko zrezki ali pa kosi s kostjo. Za prilogo je lahko krompir na kateri koli način - odvisno od družine, testenine ali riž. Zelo okusna priloga bo tudi ajdova kaša, še posebej, če jo lahko pripravimo z gobami, ki jih še imamo v skrinji. Kosila ni brez zelenjave. Za solato sestra Nikolina priporoča domač motovilec z vrta ali morda regrat. Da bo praznik res praznik pa pripravimo še sladico, na primer biskvit. Razmerje sestavine je: 1 jajce, 2 žlici sladkorja, 2 žlici olja, 2 žlici moke. Najprej naredimo sneg, dodamo rumenjake, in olje ter moko s pecilnim praškom. Za en pekač naredimo testo iz štirih jajc. V tem primeru potrebujemo pol pecilnega praška. Polovico mase nalijemo na pekač, pokrit s peki papirjem. Naložimo narezano sadje iz kompota ali maline iz skrinje. Pokrijemo s preostankom mase in pečemo 25-30 minut pri 180 - 190 stopinjah Celzija. Vedno se zraven poda tudi kakšna kepica sladoleda ...
Poslušalka je sestro Nikolina prosila za nasvet za pripravo sočnih piščančjih prsi. Sestra je povedala, da jih lahko dela v omaki kot piščančje zrezke, lahko naredi obaro ali pa jih prepraži za rižoto ali h kuhanim testeninam. Meso nareže na koščke in soli, po želji doda še poper in pokaplja z olivnim oljem. To lahko stori že zvečer in si s tem pomaga k hitrejši pripravi jedi. Čebulo olupimo in sesekljamo ter damo pražit. Takoj dodamo še narezano meso. Prilijemo nekaj žlic tekočine in nežno dušimo, da meso ostane mehko. Če bomo delali rižoto, lahko dodamo polnozrnat ali navadni glaziran riž ali ajdovo kašo, zalijemo z dvakratno količino vrele vode (lahko uporabimo tudi krompirjevko). Posolimo, dodamo lovorjev list in pokrijemo, da se mirno kuha oziroma brbota. Za zrezke pa meso ustrezno nareže in posoli, nežno popra in doda nekaj kapljic olja. To lahko stori zvečer, naloži v posodo in pokrije. Naslednji dan jih hitro opeče, da bodo ostali sočni. Ob meso lahko naložimo fino sesekljano čebulico, stisnemo malo česna in dobimo nekaj omake, ki jo po potrebi zgostimo.

Nicolina är en härlig tjej på 21 år från Bullaren som vi denna veckan fått äran att lära känna!
Če so že očiščeni, lahko iz njih pripravi marmelado, je najprej svetovala sestra Nikolina. Lahko pa ji naloži v skodelice in prelije s kuhanim pudingom, po vrhu lahko da še kompot ali malinovec. V poletnem času lahko pripravi neke vrste domači sladoled.
Poslušalka je že večkrat spekla koruzni kruh po receptu iz knjige sestre Nikolina, a je ta postal bolj nizek in jo je zato zanimalo, koliko naj da koruzne moke, če je celotna količina moke 1 kg. Sestra Nikolina pravi, da je lahko razmerje pol-pol, se pravi pol kilograma koruzne moke in pol kilograma ostale moke, ki je pa bodisi pšenična ali pirina ali krušna. Dobro je, da se koruzno moko popari, lepše se bo pripravil, lepše se bo vezal in aroma bo boljša. Kruh bo višji, če bo več pšenične moke, ker vsebuje več glutena. Razmerje med moko lahko sama prilagodi, tako da lahko da le 30 dag koruzne moke in 70 dag druge moke.
U vreme kad su roditelji današnje dece bili mali, izlivi emocija nisu bili uvek poželjni, ni dozvoljeni na način na koji se dopuštaju danas, priča Nikolina Milosavljević, psihološkinja, psihoterapeutkinja i praktičar terapije igrom, gošća nove Mamazjanije, koja ističe da su tantrumi kod dece iz tog razloga danas izražajniji i da je dobro što je tako. Sa dve, tri godine, a ponekad i u bebećem uzrastu, javljaju se tantrumi, u vidu snažnih izliva emocija. „Kod male dece pojava ljutitih reakcija, plakanje, valjanje po podu, uslovljeno je uglavnom nekim neispunjenim prohtevom. U takvim situacijama roditelj mora da pazi i da sa jedne strane zadrži empatiju, ali da sa druge ne popusti i ne da detetu ono što na taj način zahteva“, objašnjava Nikolina. Iako su pojave tantruma neprijatne na javnim mestima i roditelji se uvek osećaju nemoćno pred detetovim ponašanjem, ispoljavanje osećanja je zdravo i normalno, sve dok dete ne povređuje samo sebe ili okolinu. „Ukoliko je kod kuće i dobije napad besa, može da viče u jastuk ili da udara u zid, ali tako da se ne povredi. Treba naći način za ispoljavanje ovih snažnih emocija, tako da ne ugrozi sebe. Svakako roditelji ne treba da ih suzbijaju, ali ni da popuštaju pred prohtevima“, naglašava Nikolina. U situacijama kada dete ispoljava tantrume, dešava se da roditelj burno reaguje i da detetovo ponašanje samo podstiče i bes odraslih, koji tada često pribegavaju vikanju i batinama. „Oštra reakcija roditelja i njihov bes, pogoršava stanje. Roditelji treba da se spremaju za ovakve momente, da rade vežbe disanja i da duboko dišu kako bi se umirili. Ne mogu smiriti dete, niti ga kontrolisati, ako oni nisu smireni. Kažnjavanje, vika i batine, izazvaće nepoverenje deteta u roditelja, jer u momentima kad detetu treba pomoć, roditelj ga krivi i odbacuje“, priča naša gošća. Ona navodi simptome koji ukazuju na moguć zdravstveni problem, odnosno ozbiljniju dijagnozu koja može izazvati traume i prenaglašene emotivne izlive kod dece, zbog čega je neophodno potražiti stručnu pomoć. Nikolina savetuje roditelje da pred decom ne kriju emocije, jer ona uvek osete kad nešto nije u redu. „Ako se roditelji svađaju, dete i to treba da čuje, ali da je svađa konstruktivna i da se posle toga izvine jedno drugom. U suprotnom dete strahuje od razdvajanja i napuštanja. Takođe, ako je mama ljuta treba to da kaže, ako joj se plače da se isplače i da objasni da joj je tako lakše, pa će i dete biti slobodnije da pokaže svoje emotivno stanje“, zaključuje Nikolina.
Najprej je sestra Nikolina svetovala poslušalki glede kuhanja kostanja. Tega moramo oprati in zaliti z vodo že kakšno uro pred kuhanjem, da postane vlažen in napet. Nato ga kuhamo do mehkega - približno eno uro, lonec mora biti pokrit s pokrovko, vre naj mirno. Čim bolj vročega olupimo. Nato ga lahko pojemo ali pa stisnemo in zmeljemo ter uporabimo za nadev za potico, rogljičke ... Dodati moramo še maslo, rum, vanilinov sladkor in sladko smetano, sladkor, beljake in celo jajce.

Iz svežih jagod lahko pripravimo različne zelo okusne sladice. Recept za zelo preprosto, a prav tako okusen biskvit z jagodami, nam je povedala sestra Nikolina. Na eno jajce dodamo dve zravnani žlici sladkorja, dve žlici olja (sončnično in olivno), dve zvrhani žlici moke s pecilnim praškom. Najprej stepemo sneg, med miksanem dodamo sladkor, nato rumenjake in po žlicah dodajamo olje. Dobimo spenjeno maso, ki jo miksamo dve to tri minute. Nato pa z metlico v roki zamešamo še moko. Na pekač, obložen s peki papirjem, vlijemo polovico mase, naložimo sadje (jagode, borovnice ..., po potrebi ga prerežemo na pol) ter še preostalo maso. Pečemo približno 20 minut pri 190 stopinjah Celzija (odvisno je od velikosti pekača in s tem debeline testa).
Poslušalko je zanimalo, če je prav, da zamrzuje kumare, iz katerih bi potem čez zimo pripravljala omake. Sestra Nikolina je povedala, da je seveda tako prav. Lahko jih nariba na listke ali pa bolj grobo kot repo in takoj vakumira in shrani v skrinjo. Potem pa jih lahko uporabi za prikuho, za omako, za juho. Enako se naredi z bučkami. Z zamrzovanjem se ohranja več vitaminov kot s toplotno obdelavo, je še dodala sestra Nikolina. Pred uporabo kumare oziroma bučke odtalimo in odcedimo, nato jih stisnemo in nato se šele lotimo priprave jedi.
Poslušalki je sestra Nikolina svetovala, naj najprej, lahko že prejšnji dan, speče biskvitni del torte. Za pekač, premera 24 centimetrov, bo potrebovala 4-5 jajc. Za nadev potrebuje približno pol kilograma skute, ki je spasira, da dobi fino, gladko zmes, brez kepic, ki pa ne sme biti preveč mokra. Posebej v četrt litra mleka skuha vanilijev puding, doda še 7-8 dag sladkorja, sol, limonin sok in prilije malo arome. Ko je ohlajeno, dodamo stepeno sladko smetano. Biskvit lahko prerežemo enkrat ali dvakrat in vmes nadevamo, nekaj nadeva lahko prihranimo za mazanje oboda. Torto lahko oblijemo s čokolado: 8-10 dag čokolade, 3 dag masla in 3 žlice olja raztopimo nad soparo in prelijemo. Torto lahko okrasimo s svežim sadjem, tega lahko damo tudi na nadev med plasti. Lahko uporabimo tudi zamrznjene maline, ne pa jagod (te so dobre samo sveže).
Smo v času raznih slovesnosti in praznovanj, tudi na prostem in zato je sestra Nikolina povedala nekaj nasvetov za pripravo krompirjeve, testeninskih in zrnatih solat. Krompirjeva solata bo najbolj okusna, če skuhamo cel krompir, še vročega olupimo, narežemo in pokapljamo z oljem. Pokrito lahko nekaj časa počaka. Dodamo marinado iz soli, popra in kisa in večkrat dobro premešamo. Na koncu dodamo še narezan drobnjak (najboljši je svež z vrta). Čebule ne dodajamo, ampak jo narezano ponudimo posebej. Druga možnost je, da naredimo marinado z jogurtom, ki smo mu dodali kakšno žlico kisle smetane, gorčico, limonin sok, olje in kis. Za testeninsko solato skuhamo drobe testenine in potem lahko dodamo, kar je v hladilniku ali shrambi (svež korenček, kisle kumare, vložena rdeča paprika, sir, tunina iz konzerve ...) Tudi tu lahko naredimo navaden ali jogurtov preliv. Zelo dobro je sprejeta tudi riževa solata (lahko uporabimo riž, ki nam je ostal prejšnji dan), ali iz prosene, ajdove kaše, ješprenja ... Splošno pravilo je, da solat ne sestavljamo prejšnji dan, ampak na dan serviranja.

Poslušalki, ki jo je zanimalo, kako naj doma pripravi ocvrte kalamare, je sestra Nikolina svetovala, naj jih nareže na en centimeter velike koščke (lovke naj da posebej) in nato zamrzne. Nato pa odmrznjene in osušene panira (najboljša je koruzna, lahko pa tudi bela moka) in ocvre. Pri tem naj bo previdna, saj olje rado cvrči, zato naj bo posoda prikrita (da para lahko uhaja) s pokrovko. Ko je ena plast ocvrta (nekaj minut), jo pobere na cedilo in v olje doda naslednjo, solimo in delno pokriti naj počakajo do serviranja.
Za rdečo barvo pirhov sestra Nikolina svetuje kuhanje jajc v soku iz malin ali soku črnega ribeza. Če imamo sadje zamrznjeno, ga v vodi najprej skuhamo, nato odcedimo, dodamo malo limoninega soka ali pa žičko kisa, da bodo pirhi lepe, sveže barve, nato pa v tej zavrelici skuhamo jajca. Lahko jih skuhamo tudi v zavrelici, ki ji dodamo nekaj žlic rdeče paprike, prav tako jih lahko skuhamo v pravi kavi ali instant kavi. Dobro je dati kakšno žličko limoninega soka. Zelena jajca dobimo, če jajca kuhamo v zavrelici iz mladih kopriv, mlade špinače, bršljana ... Zelo lepi pirhi pridejo, če jajca skuhamo v čebulnih olupkih, še posebej pri rdeči čebuli. Lepe pirhe dobimo tudi, če navežemo kakšno rožico, deteljico, cvetek ... ali pa narišemo kakšen vstajenjski simbol ali napišemo aleluja .. Za lep lesk jajca oz. pirhe namastimo.

As someone who had never experienced mental ill health, the bubbly and outgoing Nikolina was confronted by the sudden onset of perinatal depression and anxiety within her first few weeks of motherhood. From crying for no reason to not being able to sleep, her PNDA symptoms hit very hard and very fast. Nikolina pushed through these symptoms for weeks, even using her son's milestone photo cards as a countdown to the idealised six-week mark. But when nothing changed at six weeks as she had hoped, it was her husband who helped Nikolina realise that she wasn't herself and that she may need some help to get her spark back. In this episode, Nikolina takes us on her journey from the career high in her first pregnancy to the excitement of dressing up for therapy, and now to the recent publication of her children's book - filled with lots of tears, insomnia, therapy, stepping on Lego pieces, and of course, laughter, in between!
